B6 - Anaheim Gazette Anaheim, Calif., Thurs., Aug. 29, 1907 GOLDENROD GREEN BEANS 1 can (15-½ oz.) cut green beans 2 hard cooked eggs 2 teaspoons butter or margarine 2 teaspoons flour ½ cup sweet milk Pepper ¼ teaspoon salt ½ cup mayonnaise Chop egg whites. Press yolks through sieve or mash fine. Heat green beans in their own liquid. Melt butter or margarine, blend in flour, salt and pepper. Slowly add milk. Stir constantly over medium heat until sauce is thickened. Add egg white. Remove from heat and stir in mayonnaise. Drain the green beans; cover with sauce and sprinkle with egg yolks. Serves four. CREOLE FRENCH BEANS 1 can (15-½) oz.) sliced French style green beans 2 Tablespoons butter or margarine 2 Tablespoons minced onion or chives ½ cup chili sauce Melt butter on medium heat; glaze the onion or chives in butter. Add chili sauce and heat. Heat sliced French Green Beans in own liquid and drain. Serve with Creole sauce. Serves four. BROILED SALMON STEAKS (This recipe gives direction for one salmon steak.) 1 salmon steak ½ cup chili sauce Melt butter on medium heat; glaze the onion or chives in butter. Add chili sauce and heat. Heat sliced French Green Beans in own liquid and drain. Serve with Creole sauce. Serves four. BROILED SALMON STEAKS (This recipe gives direction for one salmon steak.) 1 salmon steak 1½ teaspoon (approximately) butter or margarine Salt and pepper to taste Clean steak, removing scales. Place steak on a greased broiler rack 3 to 5 inches from heat source; brush with butter or margarine and sprinkle with salt and pepper. Broil, without turning, 5 minutes, or until fish flakes easily when pierced with a fork. For very thick steaks, turn and broil 3 to 8 minutes on each side. Well broiled fish is golden-brown, juicy, and tender. BRAZILIAN SHRIMP BOIL Makes Four Servings 1 pound large raw shrimps ¼ cup lemon juice ¼ cup melted butter or margarine 1 teaspoon seasoned salt Wash shrimps in cold running water; remove legs but do not shell; place in bowl and marinate in lemon juice, melted butter or margarine, and seasoned salt for 30 minutes. Place shrimps on grill about 6 inches above bed of coals; brush with butter-lemon mixture; broil about 3 minutes on each side, or until they turn a rich pink. Shell and dip in more butter-lemon mixture, or eat with cat-sup or tomato-pickle relish. FEETIGUE. National Association of Chiropractors says tired feet lead to plant accidents and lowered morale. A tape measure in your purse helps, too. Then you'll always be sure that you're buying the right size. Place cellophane tape over the opening of a cracked egg and it'll last as long as the unbroken ones. Straining fat or oil used in frying? Pour over a facial tissue placed inside an ordinary strainer. Or pour into an unused coffee percolator. The percolator will not only strain the fat; it'll serve as a storage place for it. Two tablespoons of alum added to the rinse water for clothes, slipcovers or sheets will make them fireproof. This is especially good for the man who smokes in bed or for children's clothing. Want a shinier linoleum floor? Mix half a cup of Perma Starch into your pail of soapy water. Your linoleum will gleam! If you're troubled with ants indoors, place a cucumber skin where they've appeared. They'll soon vanish. To drive away red ants, place a bag of sulphur in the drawer or cupboard infested with them.
