TUNA-PECAN SALAD INGREDIENTS: 1½ C. water ½ cup uncooked white rice 1 tsp. salt 1 tablespoon grated onion ½ cup real mayonnaise ½ teaspoon black pepper 1 6½-oz. or 7 oz. can tuna fish 1 tbsp. lemon juice ½ cup coarsely chopped pecans (toast if desired) Salad greens 3 hard-cooked eggs Pimiento strips, or radish roses for garnish METHOD: Put the water, rice and salt in a 2-quart saucepan. Bring to a vigorous boll over a high heat. Turn the heat down. Cover with a lid and simmer over this low heat 14 minutes. Remove the saucepan from the heat but leave the lid on 10 minutes. Stir the onion, mayonnaise and black pepper into the rice. Sprinkle the tuna with lemon juice. Stir into the rice. Stir in the pecans.
