TROUT CALIFORNIAN Melt 1 stick butter in skillet, add 2 tablespoons minced green onion, 1 tablespoon minced onion tops, 1 four-oz. can mushrooms (aliced) plus liquid, 2/3 cup Sauerkraut wine, ½ cup fish broth, ¼ teaspoon salt and 1/8 teaspoon pepper. Bring to a boil, add trout, cover and simmer 10 minutes. Remove fish to warm platter in oven and reduce pan liquids by cooking briskly 5 minutes. Add ½ cup cream and, when heated thoroughly, pour over trout. Garnish with sprigs of parsley. To make fish broth, cut up a small fish such as a bluegill, perch or bullhead and cook in 2 cups water 10 minutes. If you can't get fish broth for the recipe, use water and spoon Worcestershire sauce.
