B2 - Anaheim Gazette Anaheim, Calif., Thurs., June 29, 1957 Poultrymen Plan Egg Use Campaign The Orange County Poultry Producers Association, recently formed, feel that the most important and immediate issue confronting the poultrymen is the 56 per cent increase of eggs in storage. According to a recent survey, there are 14,000,000 people to be served in southern California. The organization has contacted a TV station and has developed a plan to promote the use of eggs. The success or failure of this plan depends entirely on each producer and his willingness to help. The next meeting will be today, Thursday, June 13, at 8 p.m. at the Cypress Elementary School on Lincoln, Mr. McCann a representative of KTTV will be present to answer questions and help plan an effective program. Marine 2nd Lt. Alfred L. Clayes, son of Mr. and Mrs. Alfred L. Clayes, of 9502 S. Euclid Ave. Anaheim, is learning to fly the "F9F" Pantherjet while in advanced flight training at Chase Field, Beeville, Tex. BAKED BASS FILLETS: TART CREAM SAUCE Fillets from a pair of 1½ to 2 lb. bass will never taste better than baked and served with tart cream sauce. Dip fillets in lemon juice, then in melted butter, and place in baking pan. Season with salt and pepper and sprinkle a pinch of rosemary on each fillet. Place in hot oven (425 degrees) and bake 8 minutes. Cover with tart cream sauce and return to oven for 10 minutes, or until fish flakes readily when tested with fork. For tart cream sauce, finely chop 1 small onion and saute for 5 minutes in 2 teaspoons butter. Dissolve 1 tablespoon flour in a little cold water and stir into 1 cup sour cream along with 1 tablespoon horseradish (drained of vinegar) and ½ teaspoon sugar. Add onions and pour over fillets for final baking. SPARKLING RASPBERRY SODA 1/3 cup mashed, sweetened raspberries ¼ cup light cream 1 scoop vanilla ice cream Canada Dry Ginger Ale Mix raspberries and cream in tall glass. Pour into 8x8x2 inch pan and chill until firm. Combine pineapple juice and sugar and heat until sugar is dissolved. Remove from heat and dissolve lemon flavored gelatin in hot liquid; add remaining ½ cup cold water. Chill until syrup just begins to gel. Mix crumbs with melted butter. Press crumb mixture smoothly over bottom of 9-inch spring-form pan. Cut pear halves into ½ inch cubes. Whip 2 cups cream and pour into the syrupy lemon flavored gelatin. Cut the firm lime gelatin into ½ inch cubes. Do it this way: dip sharp knife into hot water and score gelatin, dipping knife after each cut. Run hot knife around edge of tray. Lift out gelatin with wide spatula, hot water dipped. Cover and cook un- and cabbage. Makes about 8 ercook. Cabbage should keep its green color. Add small amount of water if mixture cooks dry. Cook 1 cup uncooked white rice in 2 cups water.
