SABAGNA 1 cup finely chopped onions 1 clove garlic, minced 1¼ cup olive oil or melted drippings 1½ pounds ground beef 1½ teaspoons salt ½ teaspoon black pepper 1 No. 2½ can Italian-style tomatoes 1 6-ounce can tomato paste ½ cup water 1 8-ounce package lasagna noodles, coorked according to package directions. ½ pound Ricotta cheese or large curd cottage cheese ½ pound Mozzarella cheese, sliced ½ cup grated Romano or Parmesan cheese Cook onions and garlic in fat until soft and yellow; push to side of pan, add meat, and continue cooking until meat is thoroughly browned. Add salt, pepper, tomatoes, tomato paste, and water. Simmer until thickened, about 2 hours. Arrange one-third of the cooked noodles in a greased baking pan, 13 by 9½ by 2 inches. Top with one third each, Mozzarrella, Riccota, and meat sauce. Repeat procedure twice. Sprinkle Romano or Parmesan over top layer. Bake at 350°F. 30 minutes. Cut in squares to serve. 8 servings. APPLE SKILLET CAKE 3 tablespoons butter ⅔ cup firmly packed brown sugar 3 cups (about 3 medium) pared, thinly sliced apples ¼ cup raisins 1⅓ cups sifted flour 2 teaspoons double-acting baking powder ½ teaspoon salt ¼ cup sugar ½ cup firmly packed brown sugar ¼ cup shortening 2 unbeaten egg yolks 1 teaspoon vanilla ½ cup undiluted evaporated milk 2 egg whites Melt butter in heavy skillet measuring 10 inches across top. Remove from heat, add % cup brown sugar. Arrange apples in skillet; add raisins. Sift flour, baking powder and salt. Set aside. Add sugar and % cup brown sugar gradually to shortening, creaming well. Blend in egg yolks and vanilla; beat well. Add dry ingredients alternately with milk; blend thoroughly after each addition. Beat egg whites until stiff but not dry; fold into batter. Pour over apples. Bake in moderate oven (350°F.) 35 to 40 minutes. Turn out of skillet immediately. Serve warm, plain or with whipped cream. ORANGE CHIFFON Cake 2⅓ cups sifted cake flour 1⅓ cups sugar 3 teaspoons baking powder 1 teaspoon salt ¼ cup salad oil 5 egg yolks % cup orange juice (fresh canned or reconstituted frozen) 3 tablespoons grated rind 1 cup egg whites (about ¼ teaspoon cream of tartar) 1 teaspoon yellow food colorant. Sift flour, sugar, powder and salt into a bowl well in the center and a egg yolks, orange juice and orange rind. Beat with a spoon til mixture is smooth and coarse. Whip egg whites and creme tartar until very stiff peaks (Whites should be stiffened for meringue). Pour egg mixture gradually over whites, gently folding to with a spatula. Pour into an ungreased tube pan. Bake 55 minutes crease oven temperature to F. and continue to bake 10 minutes. Cake is done springs back when lightly ad with the finger. Removes from oven and invert pan funnel or large bottle. Cookpletely. Cut around side and ter tube with thin spatula loosen cake from pan. Rake of pan sharply to remove crumbs. Grease 9x9x2-inch pan. Into mixing bowl sift together flour, corn meal, baking powder and salt. With fork stir in dried beef. Beat egg, add milk and melted margarine. Add all at one time to corn meal mixture. Stir only until flour is moistened. Mixture may be lumpy. Turn quickly into greased pan and spread evenly. Bake 30 to 35 minutes. Cut into portions 4½ inches long and about 2¼ inches wide. While corn bread bakes, make cheese sauce and cook asparagus. Allow 4 to 5 stalks per serving. When asparagus is first tender, arrange on top of corn bread cuts and spoon Cheese Sauce over vegetable. Cheese Sauce ¼ cup margarine (½ bar) ¼ cup flour 2 cups milk ½ teaspoon salt Dash of pepper ½ cup cut-up sharp cheese In top of double boiler melt margarine. Stir in flour until smooth. Add milk gradually, stirring until smooth and thickened. Add seasonings and cheese. Stir until cheese is melted and sauce is smooth. (Makes about 2 cups.) For each 1 cup, blend 1 tablespoon flour with 1 tablespoon cold water to make a smooth paste; stir into hot liquid; cook, stirring constantly, until gravity thickens and boils 1 minute.
