Ralph's FRESH BAKERY Butter Loaf Bread B2 - Anaheim Gazette Anaheim, Calif., Thurs., Mar 24, 1957 SPANISH TUNA CROWNS 6 eggs 1 teaspoon salt ½ teaspoon pepper' 1 teaspoon dry mustard 4 tablespoons salad dressing 1 can (6½ oz.) tuna fish 2 cans (14 oz.) Spanish rice ½ cup milk ½ lb. cheese 1½ teaspoons Worcestershire Sauce 1 teaspoon prepared mustard ½ teaspoon salt Hard cook the eggs. Mash yolks or put them through sieve. Add salt, pepper, dry mustard, salad dressing and tuna fish; beat until fluffy. Fill egg white halves with mixture. Spread Spanish rice in shallow two-quart baking dish. Arrange stuffed egg halves on top of rice. Bake at 400°F. for 30 minutes. To prepare sauce, place milk in sauce pan; slice cheese into milk. Heat, stirring occasionally until well-blended. Add salt, Worcestershire Sauce and mustard. Just before serving pour cheese sauce over rice and eggs. Serves six. COTTAGE CHEESE SANDWICHES 16 slices white bread 1½ cups' creamed cottage cheese, sieved ½ cup minced green pepper 1 tablespoon minced onion 1 cup grated raw carrot 2 tablespoons French dressing Salt, pepper to taste With a two-inch cookie cutter, cut rounds from bread slices. Blend remaining ingredients for filling. SALMON-TOMATO BISQUE (Four Servings) 2 tablespoons butter 1 small onion, grated 1½ tablespoons flour 1 cup coffee cream 3 cups milk 1 8-ounce can tomato sauce 1 8-ounce can red salmon, drained and flaked Salt and pepper to taste 2 tablespoons finely chopped parsley Cook onion in butter; stir in flour. Add cream and milk and cook until slightly thickened, stirring constantly. Stir in tomato sauce, salmon and seasonings. Heat thoroughly. Serve in soup bowls, garnished with sprigs of parsley and a few flakes of salmon.
