The Cape Bulbs
The freesia, ixia and sparaxis, known as Cape bulbs, are probably three of the most riotously colored flowers that ever graced a spring garden. As border subjects or in cut bouquets, their blossoms offer solid colors of lavender, mauve, orange or combinations of orange and amber with a brown center, or orange with black and gold markings.
Because this threesome has somewhat tender flowers, they should be planted in early fall to provide a good growth before cold weather acts in. The freesia should not be planted outdoors in areas of the state where the ground freezes, in which areas, it should be container-grown. Freesias appreciate sun and a light, well-drained soil. Set the bulbs two inches deep with points up and divide when the clumps become crowded. Since they're rather untidy plants, following early spring blooming, plant them where the post-blooming period won't be too noticeable.
The African corn lily, which is known botanically as the ixia, bears gorgeous cup-shaped blooms in late April through early June. It flowers in unusual combina-tions such as the orange amber center mentioned white with a carnine bloom; crimson with maroon or a mixed strain with from white to deep pink; the African corn lily in and light in well-drained inches into the ground.
Like miniature gladiolus funnel-shaped flowers, sparaxis tricolor or wand are carried in spikes. Cclude red with a dark center yellow, mixtures of purple yellow. Strains have been oped which offer larger in bright orange, yellow marked with black and gwand flower requires full it will grow in poor soil to the water. RAISIN ROUNDS
4 cups sifted flour
1 teaspoon salt
1 teaspoon soda
1 tablespoon grated orange rind
3 cups (18-oz. pkg.) ground seedless raisins
¼ cup sugar
½ cup firmly packed brown sugar
1 cup shortening
1 unbeaten egg
½ cup sour cream (thick or commercial)
1 teaspoon vanilla
Sift together flour, soda and salt; mix in orange rind and raisins. Set aside.
Add sugar and brown sugar gradually to shortening, creaming well. Blend in egg; beat well.
Add half the dry ingredients and mix thoroughly. Blend in sour cream and vanilla, then the remaining dry ingredients, mixing well. (Dough may be chilled 30 minutes for easier handling.)
Shape rounded teaspoonfuls of dough into balls; place on ungreased baking sheets.
Flatten to ⅓ to ⅔-inch thickness with fork.
Bake in moderate oven (375°F.) 10 to 13 minutes until golden brown. Makes about six dozen cookies.
STUFFED BACON ROLL
Combine 2 cups bread crumbs,
1 small finely chopped onion, and
1 tablespoon finely minced parsley. Season with salt and pepper and moisten with hot water. Place 1 teaspoonful on one end of each bacon slice. Roll bacon slice around dressing and fasten with a toothpick. Broll at a moderate temperature turning frequently to brown all sides.
SAUSAGE AND HOMINY BREAKFAST
1 pound pork sausage links
2 tablespoons water
1 No. 303 can hominy
1 teaspoon salt
½ teaspoon pepper
3 eggs
6 tablespoons milk
Place sausage links in frying pan. Add water, cover and simmer 5 to 8 minutes. Remove cover and cook until sausage is brown. Remove from frying pan. Pour off all but ¼ cup drippings. Add drained hominy and seasonings and heat thoroughly. Beat eggs, add milk and stir until blended. Add to hominy. Cook slowly until eggs are set. Turn onto a serving platter and arrange sausages over the top. Yield: 6 servings.
HAM AND CORN FRITTERS
½ cup ground cooked ham
1 cup canned or fresh cooked corn
1 tablespoon minced onion
½ cup enriched flour
1½ teaspoons baking powder Lard for frying
Mix ham, corn and onion. Sift flour and baking powder together and add to corn mixture. Blend well. Drop by teaspoons into deep hot lard at 360°F. and fry until golden brown. Drain well on absorbent paper. Serve with well-seasoned cream or tomato sauce. Corned beef may be used in place of the ham, if desired. Yield: 4 to 5 servings.
