Stir in cheese. Cut or rub in shortening. Sprinkle with water, mixing lightly until dough begins to stick together. Turn out on floured pastry cloth and press dough together. Cover or wrap in waxed paper and let stand while preparing filling. Gently mix cranberry sauce and apples. Turn into greased 8-inch pie pan (1⅓ inches deep). Dot with butter or margarine. Roll pastry to circle about ⅔ inch thick. Arrange over filling. Trim and flute edge. Cut design in pastry with sharp knife to allow steam to escape. Bake in hot oven (425°) until pastry is lightly browned (about 15 or 20 minutes). GRAPE ICE 1 envelope unflavored gelatin ¼ cup orange juice 3 cups water 1 cup sugar 1 can (6-oz.) frozen concordated grape juice 2 tablespoons lemon juice 2 egg whites, stiffly beaten Soften gelatine in orange juice 5 minutes. Combine water and sugar in saucepan; bring to boiling simmer 5 minutes. Stir in softened gelatine, grape juice, and lemon juice; cool to lukewarm. Pour into 2-quart refrigerator tray freeze about 1¾ hours or until almost firm. Beat very quickly until smooth but not melted; pour in beaten egg whites. Freeze stirring occasionally, 2 to 5 hours. Press yolk through sieve. Heat beans in their own liquid. Melt butter, blend in flour, salt and pepper. Slowly add milk. Stir constantly and cook until thick. Add egg white. Remove from heat; stir in mayonnaise. Drain beans, cover with sauce and sprinkle with egg yolk. Makes two servings. BAKED LIVER WITH APPLES 1 pound beef liver, sliced ¼ inch thick 2 large apples, pared and chopped 1 medium onion, chopped 1½ teaspoons salt ¼ teaspoon pepper 6 slices bacon, cut in pieces ¼ cup water Place liver in greased shallow casserole. Cover with apples, onion, salt and pepper. Top with bacon pieces and add water. Bake, covered, at 325°F. 1½ hours, removing cover last 20 minutes of baking. 6 servings.
