FRUITCAKE 4 cups sifted cake flour 1 teaspoon mace ½ teaspoon nutmeg 2 teaspoons cinnamon ½ teaspoon baking soda 3 pounds currants 2 pounds seeded raisins 1 pound citron sliced 2 cups blanched almonds sliced 1 pound butter 2 cups light brown sugar 9 eggs 1 cup cold strong coffee Sift flour, spices and soda together 3 times. Mix with fruits and nuts. Cream butter and sugar until fluffy. Beat egg yolks until thick. Beat egg whites until stiff. Add yolks and whites to butter-sugar mixture. Add flour fruit mixture alternately with the coffee. Pour into pans lined with greased paper. Bake in an oven 275° for 3 to 4 hours. WHITE FRUIT CAKE ¼ pound butter ¼ pound sugar 6 eggs 2 cups fresh grated coconut ¼ pound flour ¼ pound citron cut thin ¼ pound blanched shelled almonds cut up ½ pound shelled pecans cut up 1 teaspoon baking powder Dredge cup up citron with flour. Cream the butter and sugar, and add eggs which have been beaten separately. Add the flour sifted with the baking powder. Mix thoroughly. Add citron and nuts. Bake in an oven 275° for 1 hour. This makes 1 loaf. PICKLED EGGS-ON-A-STICK 1 dozen eggs, hard cooked and peeled 2 cups white vinegar 3 tablespoons sugar 1½ teaspoons salt 1 teaspoon pickling spice in cheesecloth bag 1 clove garlic, peeled 12 wooden meat skewers or plastic drink "straws" Whole cloves 1 large orange or grapefruit Measure vinegar, sugar and salt in medium saucepan. Drop in spice bag and garlic clove. Simmer about 5 minutes. Pour over eggs in a jar. Cover and let stand several hours to season. When ready to serve, drain eggs and insert one or several cloves into white. Mount the eggs on sticks like lollipops. For service, insert sticks into orange or grapefruit.
