Measure 4 cups into very large saucepan. Add sugar, vinegar, nuts, and raisins; mix well. Place over high heat, bring to a full rolling boil, and boil hard 1 minute, stirring constantly. Remove from heat and at once stir in pectin. Stir and skim by turns for 5 minutes to cool slightly, to prevent floating fruit. Ladle quickly into glasses. Cover at once with ¼ inch hot paraffin. Makes about 11 medium glasses. CHESS RAISIN PIE Pastry: 1¼ cups sifted flour ½ teaspoon salt ½ cup shortening 2¼ tablespoons cold water Mix dry ingredients. Add shortening and cut in with pastry blender. Add water and mix to form ball. Roll out on floured board to fit pie pan. Trim off excess dough and crimp edges. Fill unbaked pastry with the following: Filling: ½ cup butter ¼ teaspoon salt 1 cup granulated beet sugar 3 eggs 1 cup walnuts (chopped) 1 cup raisins (chopped) 1 teaspoon vanilla Cream butter, salt and sugar thoroughly. Add eggs one at a time, beating well after each addition. Blend in walnuts, raisins and vanilla. Turn into pastry-lined 3-inch pie pan. Bake in 425° oven for 10 minutes. Reduce heat. LIGHT FRUIT CAKE 2½ cups sifted cake flour 1 teaspoon each of baking powder and salt 1¼ cups blanched almonds chopped 2 teaspoons grated lemon rind ¾ cup butter 1 cup sugar 6 egg whites unbeaten 2 tablespoons lemon juice ½ cup each finely cut citron, candied cherries and pineapple ple ⅓ cups grated coconut Sift together flour; baking powder 3 times; cup flour mixture with nuts.
