SPICY BEEF STEW 2 pounds beef stew meat 3 tablespoons lard 2 medium onions, sliced 2 cups hot water 1 bay leaf 1½ teaspoons caraway seeds 3 teaspoons salt ¼ teaspoon black pepper ¼ cup vinegar 1 medium head red cabbage ½ cup broken gingernaps Brown beef in hot lard in a large, heavy skillet. Add onions and brown. Add water, bay leaf, caraway seeds, salt and pepper. Cover pan and cook over low heat 2 hours. Add vinegar to stew. Cut cabbage into large wedges and place on top of stew; cover pan and cook 10 to 15 minutes longer or until meat is cooked and cabbage crispy-tender. Soak gingersnap in ½ cup warm water. Remove meat and cabbage from pan; discard bay leaf. Add gingersnap mixture to remaining liquid and heat to boiling, stirring to make smooth gravy. (Add more gingersnap for a thicker gravy.) Return meat to gravity and stir. Serve over rice or noodles and surround with cabbage wedges. 6 servings. BARBECUED CHICKEN It will take about an hour to cook a 2½ pound chicken, cut in two halves, over the grill. Use charcoal briquettes, using one layer of the charcoal on the bottom of the grill. Start fire about 20 minutes before you have the chicken ready to barbecue. This allows excessive smoke and fumes to escape before you start to cook the chicken. For barbecuing, choose a broil. CRABMEAT SALAD 1 6½ oz. can crabmeat 1 cup diced celery ½ cup diced green pepper 2 tbsp. sliced stuffed olives 1 tsp. marjoram 1 tbsp. lemon juice Salt and pepper to taste ½ cup mayonnaise 3 fresh tomatoes, quartered Flake crabmeat, remove hard membrane. Add celery, green pepper, olives, mayonnaise, and seasonings. Toss lightly. Arrange on lettuce leaves. Garnish with quartered fresh tomatoes and radishes. Serves 4. BUS. It will take about an hour to cook the 1¼ pound halves this way. But be sure the bird is well done. To test its readiness, grasp a drumstick and twist slightly. If the thigh joints turn easily, the chicken is ready to serve. PEPPER JELLY 1 cup reserved pepper juice ½ cup apple vinegar 3½ cups beet sugar Red coloring ½ bottle fruit pectin Combine the pepper juice, vinegar and sugar in a large saucepan and mix well. Place over high heat and, while mixture is coming to a boil, add red coloring to give desired shade. As soon as mixture boils, stir in pectin. Then bring to a full rolling boil and boil hard 1 minute, stirring constantly. Remove from heat, skim, pour quickly into glasses. Paraffin at once. Makes about 5 medium glasses.
