USE ½ pound pork sausage meat,
1 cup dry bread crumbs, salt, pepper,
1 tablespoon lemon juice and 1 tablespoon minced parsley. Mix thoroughly and spread stuffing on flank steak and roll lengthwise. Skewer or sew to hold in place. Brown on all sides in 2 tablespoons lard. Add ½ cup water, cover and cook in a slow oven (300 degrees F.) for 1½ hours.
