Banana Nut Bread
2 cups sifted all-purpose flour
2 teaspoons baking soda
½ teaspoon salt
½ cup lard
½ cup sugar
2 eggs
1 cup mashed bananas (3 medium bananas)
½ teaspoon lemon extract
½ cup chopped nuts
Sift flour with baking powder, and salt. Cream lard and sugar; add well-beaten eggs and mix thoroughly. Add dry ingredients to creamed mixture alternately with bananas; Add lemon extract and nuts and mix well. Pour into a greased loaf pan (8½ by 4½ by 2½ inches) and bake in a 350° F. oven 1 hour. Cool 10 minutes and turn out on a rack.
