French style green beans 1 package lemon flavored gelatin 1 tablespoon unflavored gelatin ½ cup onion, minced ½ cup celery, chopped ½ cup walnuts, chopped Drain liquid from the bean. Measure and heat. Dissolve lemongrass gelatin in hot liquid. Add enough cold water to bring the total to the liquid to 2 cups (about 1 cup water will be needed). Dissolve unflavored gelatin in 4 tablespoons cold water and add to lemon gelatin. Cool until slightly thickened. Stir in remaining ingredients. Pour into individual molds and chill until firm. Melt six or seven salads. SPRINGTIME PRUNE PIECES Pastry 1 cup sifted flour ½ teaspoon salt ¼ cup lard 2 to 3 tablespoons water Sift flour with salt. With pastry blender or two knives, cut in half the lard until mixture sembles coarse corn meal; cut remaining lard until mixture the size of small peas. Sprinkle water over mixture a teaspoon at time, and blend with a fork until all ingredients are moistened. On a lightly floured board, roll the dough into ½ inch thickness. Place in an 8-inch pie pan and flute edges. Prick bottom sides. Bake at 450° F. 12 to minutes. Makes 1½ cups. Combine prune pulp, lemon rind and juice, and ½ cup sugar. Beat egg whites with salt until stiff; gradually beat in ½ cup sugar. Fold egg white mixture into fruit mixture. Fill the baked pie shell. Bake at 350° F. 20 minutes. Cool and refrigerate two hours before serving. 6 servings. Lamb-Mint Sandwiches Good news is here for every homemaker who is in need of lunch box ideas. To use the leftover-lamb from Easter, try this suggestion. Place a thin slice of chilled leftover lamb on a slice of bread spread, lightly with mint jelly. Spread lamb with salt and top with a second slice of bread. FRUIT SAUCE FOR LAMB Mix 1 tablespoon cornstarch with 1 cup water. If you have some lamb gravy, substitute it for ⅓ cup of the water. Stir in ½ cup currant jelly, ½ cup orange juice, and ½ cup minced fresh mint leaves. (A 'teaspoon dried mint may be used instead.) Cook until thickened, stirring to prevent lumping; add about 8 slices cold cooked lamb and continue cooking until they are heated through. Serve the sauce with the slices. 4 servings. Lamb With French Toast Leftover lamb need not go waste. Prepare French toast usual manner. Mince cooked lamb sprinkle with flour and brown well in small amount of lard drippings. Pour off drippings. Add leftover gravy, heat thoroughly and serve over french toast.
