March 29, 1956 Ground Beef Steak Supreme 1 pound ground beef ¼ cup fine bread crumbs 1 egg, beaten 1 teaspoon salt ½ teaspoon pepper 3 tablespoons minced onion ¼ cup chopped celery 1 can mushroom soup ½ cup water Combine ground beef, crumbs, egg, salt, pepper, onion, and celery. Shape into an oblong patty about one inch thick. Brown in a skillet in hot fat. Carefully turn (use two spatulas) and brown other side. Dilute mushroom soup with water, blending until smooth. Pour over meat and cook on top of range over low heat 25 minutes. 4 servings. When doubling the recipe, shape the meat mixture into two 'steaks,' brown them separately in the skillet and then transfer to a long baking dish. CHICKEN CHESTNUT SOUP Combine 1 10½-ounce can condensed cream of chicken soup, 1 12½-ounce can chicken consomme and 1 5-ounce can water chestnuts, drained and finely chopped. Heat; add 2 tablespoons dry sherry. Makes 4 cups of delicious soup. LIVER PATE Heat ¼ cup butter in a skillet.' Slowly cook 1 eight ounce package frozen chicken livers in it until done. Place onion, celery, water, rice, salt, pepper, chili powder, tomatoes and bay leaves in greased 2-quart oven dish. Place in pre-heated 400 degree F. oven. Cover with lid. Bake for 45 minutes. Stir well. Cover and bake 15 more minutes. Uncover and arrange sausage links over top of rice mixture. Return to oven and bake 15 more minutes. Additional water may be added if a thinner mixture is desired. This recipe makes 5 to 6 servings. CHERRY COFFEE CAKE 1 can (1 lb.) red tart pitted cherries 2 cups biscuit mix ¼ cup sugar 1 cup milk 1 egg 2 tablespoons melted shortening or salad oil 1 tablespoon cinnamon ½ cup sugar 2 tablespoons soft butter ½ cup of liquid drained from cherries Drain cherries reserving ¼ cup of the liquid Combine biscuit mix, sugar, milk, egg and shortening. Stir only until mixed. Batter will be lumpy. Spread batter in a greased round baking dish 8 x 1½ inches. Spread cherries over the top of the batter. Blend cinnamon, sugar and butter until crumbly. Sprinkle over the cherries. Pour cherry juice over the top. Bake at 425 degrees F. for 3 to 35 minutes.
