Add ¼ cup each of syrup from pineapple and tangerines. Chill and just before serving, add gingerale. Reserve remaining juices for punch. This combination lends itself particularly well to Hot Spiced Cherry Punch. WESTERN CHERRY COBBLER 2 cups canned dark sweet cherries 1 cup cherry syrup ¾ cup sugar 3 tablespoons all-purpose flour 1 cup cake flour 2 teaspoons baking powder ½ teaspoon salt 2 tablespoons sugar 3 tablespoons shortening 1 egg yolk 6 teaspoons milk 1 egg white 2 tablespoons sugar Combine cherries, syrup, sugar and all-purpose flour in a saucepan and place over low heat while making dough. Stir occasionally as it thickens. Sift together cake flour, baking powder, salt and sugar. Cut in shortening. Combine egg yolk and milk and add to first mixture. Place dough in bottom of an 8-inch baking dish. Add heated cherries and juice. Bake at 425 degrees for 30 minutes. Beat egg white and gradually beat in 2 tablespoons sugar. Move cobbler from oven; placering on top; garnish with well-drained cherries. Return oven to lightly brown meringue (about 5 minutes). Serve warm. VERSATILE CHERRY SAUCE 1 cup canned sweet cherries 1 cup cherry syrup 2 tablespoons cornstarch ½ cup honey ½ teaspoon red food coloring 2 tablespoons butter ¼ teaspoon almond extract Pit cherries and set aside. Mix cornstarch with a little cold syrup and combine with other ingredients in a saucepan. Bring to boiling and cook and stir for 2 minutes. Add cherries and flavoring as serve either hot or cold. CHERRY COFFEE CAKE 1 No. 303 can sweet cherries 2 cups biscuit mix ½ cup brown sugar ½ cup broken walnuts ½ teaspoon nutmeg or mace ½ cup milk ¼ cup brown sugar ½ teaspoon nutmeg or mace ¼ cup biscuit mix 2 tablespoons butter Drain cherries well and pit. Prepare dough by combining cups biscuit mix, half cup brown sugar, nuts and half teaspoon oil spice. Stir in milk. Pat out the dough in greased 9-inch cake pan cover with cherries. Sprinkle oats on toping made by combining juice, Bake at 425 degrees for 30 minutes. Beat egg white and graduate beat in 2 tablespoons sugar. FRENCH CREAM SANDWICHERS French Cream Sandwiches will be a real breakfast surprise for the family. For the filling, combine a 3-ounce package cream cheese and an 8-ounce can of crushed pineapple. Mix until creamy. Use this filling to make 4 sandwiches. Cut each sandwich in half. Combine 1 egg, beaten, ¼ cup milk and a dash of salt. Dip each side of sandwiches into egg mixture and brown quickly on both sides in butter or margarine in skillet. Serve hot. APPLE RAISIN FRITTERS Sift together 1½ cups sifted enriched flour, 2 teaspoons baking powder, ½ teaspoon salt, 1 table-spoon sugar and ½ teaspoon cinnamon. Combine 1 egg, beaten, ¼ cup milk and 1 tablespoon melted shortening. Add 1½ cups chopped apples and ½ cup seedless raisins to liquid mixture. Add to flour mixture, stirring until flour is moistened. Drop by spoonfuls into deep hot fat (375 F.) and fry until brown, turning frequently. Drain on absorbent paper. Serve with sirup and pork sausages. Makes about 16 small fritters.
