B3 - Anaheim Gazette Anaheim, Calif., Thurs. March 22, 1956 PERKY SALAD Dissolve 1 package lime-flavored gelatin in 1 cup hot water, stirring. Add ½ cup cold water; 2 tablespoons lemon juice; ½ cup mayonnaise, and ½ teaspoon salt. Beat until blended. Pour into ice-cube tray, quick chill in freezing unit until firm around the edges. Take out, beat with hand beater until fluffy. Now mix together one 3-oz. package cream cheese and 1 can (2 cups) fruit cocktail, drained; fold into gelatin, then fold in 1 digested banana and ¼ cup chopped walnuts. Chill until firm (about an hour). Unmold, and serve with bread and butter sandwiches. Makes 8 or more servings. HILGENFELD MORTUARY Faithful Courteous Service 120 E. Add 2 tablespoons sugar, 1½ teaspoons salt and 3 tablespoons shortening. Cool to lukewarm. Add 2 cups sifted enriched flour. Mix well. Add softened yeast and 1 egg. Beat well. Add enough more flour (about 2 cups) to make a soft dough. Turn out on lightly floured board and knead until smooth and satiny. Put in greased bowl. Cover and let rise in warm place until doubled (about 1 hour). Punch down and let rest 10 minutes. Roll out ¼ inch thick. Cut with 3-inch cookie cutter. Cover and let rise on board until doubled (about 45 minutes). When light, bake slowly on ungreased, heavy griddle. Have griddle hot at first, then reduce heat so muffins will brown slowly and evenly. Bake 7 to 8 minutes on each side. Makes about 12 3-inch muffins. ORANGE TOAST DE LUXE Combine 2 eggs, beaten, ¼ cup milk, 1 tablespoon sugar, 1 tablespoon grated orange rind and a dash salt. Mix well. Dip bread slices in egg mixture, lightly coating both sides. Brown both sides in hot butter or margarine in skillet. Serve hot with honey, sirup or applesauce. Makes 6 slices toast. CINNAMON-WALNUT TOAST Cream 6 tablespoons margarine or butter. Add ¼ cup confectioners' sugar and 2 teaspoons cinnamon. Spread on bread. Add 1 lb. fresh crap meat (or 2 cans); ½ cup white bread crumbs; 1 teaspoon salt; 1 tablespoon dry mustard; a dash of garlic salt; and ½ cup California Sauterne or other white table wine. Mix all together and press firmly with fingers to make bite-size balls. Now get out the bacon. Cut each slice into 3 pieces, bring up the 4 corners and pin with toothpick. Broil about 10 minutes, turning once. You’ll have about 3½ dozen balls. Serve hot.
