HOME DEPT. TO MEET The home laundering of household articles will be demonstrated at the March meeting of the Anaheim Home Department which will be at the Evangelical United Brethren Church, 800 S. SPICY PURPLE PLUM 'N' RICE PUDDING ½ cup uncooked white rice 1 teaspoon salt 1½ cups milk 1 cup juice from purple plums ½ cup water ½ cup beet or cane sugar 1 teaspoon pumpkin pie spice 2 teaspoons vanilla 3 eggs, separated ½ cup milk 1, 1 lb. 14 oz. oz. can purple plums, halved and drained 6 tablespoons beet or cane sugar ½ teaspoon vanilla GET THE FAMILY TOGETHER on a HOME BUYING PROGRAM INTEREST ON SAVINGS PAID OR COMPOUNDED 4 TIMES PER YEAR at 5½% PER ANNUM if you lack funds ...SEE US! Cover and place in pre-heated oven 350 degrees F. Bake 45 minutes. Remove from oven and stir. Cover and bake 15 more minutes, or until rice has absorbed liquid. Remove from oven and stir in ½ cup sugar, pumpkin pie spice and 2 teaspoons of vanilla. Beat egg yolks thoroughly. Beat in the milk. Stir this egg yolk mixture into pudding. Mix thoroughly. Stir in purple plums. Return baking dish placed in pan of hot water to oven. Turn heat immediately to 400 degrees F. Bake 15 minutes. Remove baking dish from oven and top with a meringue. To make meringue, beat egg whites until frothy. Gradually beat in 6 tablespoons of sugar a little at a time to completely dissolve sugar. When egg whites hold a peak, add vanilla and blend. Spread over pudding. Return to oven for 12 to 15 minutes or until meringue is desired degree of brownness. Serve warm or cold. This recipe makes 8 to 10 generous servings. Be certain all rice is covered with liquid. Cover and continue cooking until rice is tender. Add 2 tablespoons of water to cornstarch. Mix to form paste.
