In response to many requests Mrs Mauerhan has just opened a class in cake decoration as part of AUHS adult education program The class meets every Tuesday from 7 until 10 p.m. in the home economics room. Homemakers with or without previous experience in cake decoration are invited to enroll as the class has met only once and is not yet filled to capacity. OLD FAMILY Although Mrs Mauerhan now lives in Garden Grove she is closely related to the Anaheim Mauerhans and is descended from the pioneer Kellogg family She started on her hobby of making fancy family cakes for her four children and became very proficient by the time 13 grandchildren came along. Family and friends were so enthusiastic about her work that they persuaded her to sell her cakes. Her specialty advertised itself and business became brisk with wedding cakes a speciality. As the years passed Mrs Mauerhan improved her proficiency not only through practice but studying with experts in the field both in this country and in Europe. This educational background has enabled her to develop a 40-page outline of special directions and pictures covering specialty cakes for every holiday of the year as well as those suitable for anniversaries and the like. She uses this as sort of a textbook for her students, one that they may keep for future reference. HOME EQUIPMENT Mrs. Mauerhan uses no special equipment for her decorated cakes other than fancy molds in which some of the cakes are baked and a wide range of metal tips for the pastry tube that forms the flowers lattice work leaves and lace made of ornamental iceing Her kitchen at home is equipped with a good store and an electric mixer. These are the tools with which she embarked upon her business venture. Especially popular in her cake takes the form of an open book, the beveled heart of Valentine's day and engagement parties, and the old fashioned girl whose features are of porcelain but whose ornate skirt is a decorated cake. These cakes are all decorated with lovely colors made from a special paste food color that does not thin the icing. A basic color kit contains five colors but advanced students use as many as 12. The most inexpensive iceing is used in classroom work but Mrs Mauerhan gives the recipe for her famous butter cream and marshallow whip as well. "Artistic ability or special talents are not necessary for fancy cake decoration." says Mrs Mauerhan. "All our designs are based on perfected outlines. The advanced students can, of course, elaborate on these and develop her own ideas to make the finished cake truly her own creation." During the course of instruction these decorating techniques are applied to salads and desserts, open face sandwiches, decorated sugar cubes and mints as well as cakes. HEAVY SCHEDULE Besides her catering and homemaking jobs Mrs. Mauerhan is currently conducting eight classes in the county—at the Orange Coast college, in Fullerton and Garden Grove as well as in Anaheim. This astonishing feat becomes an item for Ripley when one considers that Mrs. Mauerhan lost a leg last Aug. 27 and was unable business as usual by Oct. 6. Most of her teaching is done from a wheel chair. Golden Age Club Installs Officers With 82 members attending, the Golden Age club installed officers in 1953, at the recreation room of YWCA.
