WHITE Gazette Home Economist It weather or no, tempting, lying meals are as importo a family's health and haps as ever. Appetites do lag and it is a problem sometore to know just what to serve. We take our market baskets and this week, we are on the out for foods that are easy to rece, a bit on the light side nutritious and delicious as the goes. Field Fresh Fish fruits and vegetables are instay on hot summer days. Cold juiciness of watermelon, stems, grapes, plums, peaches pears is a thirst quencher supplies needed energy, vitaand minerals as well. Look nem in well managed prodepartments of local stores Alpha Beta, Safeway and Market where fruits and ables have been rushed from eld to the market under reation and where daily delivinsure freshness. Vitamins are elusive things which quickly disappear under adverse circustances. That tired, wilted look stands not a chance in our book for it takes the snap from a bean, the crunch from a carrot and the flavor from fruit. Summer is salad season, so we stock up this week on the makin's. Chef's salad calls for a variety of greens along with onions, diced tomatoes, celery, green pepper, radishes, sliced cucumbers and a clove of garlic or two. It becomes a meal in itself with the addition of hard cooked eggs, thin strips of meat, tasty morsels of fish. Crumbled blue cheese or grated Parmesan add considerable dash to the salad department. California home - makers are clever with fruit salads, alternating melon balls with slices of orange and avocado on crisp leftuce leaves with a sprinkling of berries for luscious color. Cream cheese rolled in chopped nuts makes a delightful topping. The list of available salad ingredients is long. The point is to have enough on hand to whip up the one you want when you want it. When selecting fruits for our market basket, we are generous with those that the little folks can eat out of hand for between-meal leaves and mayonnaise. In the coldest spot of the refrigerator which lies just under the cooling coils or in the freezing compartment. Appetizing meals at a moment's notice are no trick at all when you use cold cuts. They are meat in its most convenient form—ready to serve and ready to eat. Chopped ham and spiced lunch-cean meat for lunch time sandwiches. Bologna, salami, coupled with cold corned beef and slices of sharp cheese on a platter make a fine dish for supper. For that one serving of liver per week that nutritionists recommend, liver sausage substitutes with ease. We like to "cook with cold" in warm weather, letting the refrigerator relieve the stove. The following recipe for ham loaf is a summer favorite. Molded Ham Loaf 1 tablespoon unflavored gelatin ½ cup cold water 1 cup boiling water 1 teaspoon beef paste or extract 3 tablespoons sugar 3 tablespoons vinegar ½ teaspoon salt 1 cup cooked diced ham ½ cup chopped celery ½ cup chopped green pepper 2 tablespoons minced onions 2 hard boiled cooked eggs Soak gelatin in the cold water and then dissolve in boiling water in which the beef paste or a bulion cube has been dissolved. Add the seasonings of sugar, vinegar and salt. Fold in the remaining ingredients and chill until almost set. Pour into a mold and chill until set. Unmold and serve on a cold platter surrounded with spiced whole apricots, lettuce leaves and mayonnaise. Vegetable, slightly unhealthy as not to loose crisps over well too.
