oven for one hour tightly covered. Uncover and bake fifteen minutes longer or until lightly browned. Serves four generously.
Fresh corn on the cob is delicious baked right in the husks for 20 minutes in the same moderate oven. Husks and silk come off easily after baking. Fresh cooked or canned green beans are a tasty addition to an oven meal of mixed with catsup and a dash of horseradish. Heat in the oven on top of the range.
Broiler meals are quick and easy for streamlined cooking in summer. A mixed grill that includes one chop, a strip of bacon, and a frankfurter, or any combination of meats to be broiled is always welcome. Cold boiled potatoes are fine accompaniments when cut in half lengthwise, generously swished with salad oil and browned under the broiler name. To complete the meal, grill bananas or canned peach salves or thick slices of tomato and heat a vegetable in the broiler pan to catch the juices.
Partly prepared foods of various kinds lend themselves well to quick meals. Take a package of frozen broccoli, for instance, and a can of condensed cream of chicken soup. Cook the vegetable as directed and force through a sleeve. Mix the soup with one half cup of the broccoli cooking water and one-half cup of rich milk. Combine with seasonings and serve in heated soup bowls, sprinkled with cheese.
SUNSHINE SALAD
1 package lemon gelatine
1¼ cups pineapple juice and water
1 cup crushed canned pineapple, drained
2 cups grated raw carrots Pinch salt
Dissolve gelatine in hot liquid and chill until thick. Fold in pineapple and carrots and chill until firm.
This shimmering salad helps make a pretty supper plate for a hot night. On a chilled dinner plate arrange slices of cold meat beside the salad. Add a scoop of potato salad or a few crisp potato chips, sliced tomatoes or a wedge of melon and garnish with pickles and olives.
Cornbread or muffins for a mix are nice with this.
Baby foods that are already cooked and strained can be utilized in every day cooking to add to your leisure. When you let your refrigerator do most of the "cooking," you will keep cool than the proverbial cucumber.
APRICOT-APPLE TARTS
1 envelope unflavored gelatine
¾ cup orange juice
2 tablespoons sugar
1 can of junlon food apricots and apples
6 baked tart shells.
Add the gelatine to the orange juice and let stand five minutes. Then melt over hot water. Add the sugar. Stir in the contents of the baby food can. Chill until the consistency of the white of an egg. Spoon into the tart shells. Chill two hours or until firm. Serve with whipped cream and a dot of fruit jelly.
PINEAPPLE MOUSSE
1 tablespoon sugar
½ teaspoon salt
¼ cup pineapple juice
1 teaspoon vanilla
1 can strained pineapple pudding
1 cup whipping cream
Combine all ingredients except cream and beat until smooth. Add whipped cream and freeze three to four hours in the freezing tray of your refrigerator. Serves five or six.
