Part Time "Tax Experts"
Each year during the income tax filing season there appears all over the country the part time "Tax Expert." Frequently these individuals follow lines of endeavor during the rest of the year which have no remote connection with tax recording or accounting. They escape the normal overhead of the professional accountant who maintains an office for the convenience of his clients, spends many hours each month studying the application of tax rules to accounting practice, and who has a reliable set of reference books. If the Bureau reviews the return, the "Expert" is gone and the taxpayer is left alone to face his problems with the Bureau.
For your protection against the possibility of unqualified persons preparing your income tax returns, look for the State of California Board of Accountancy Permit, or check by mail or phone with the State of California Board of Accountancy, 145 South Spring Street, Los Angeles 12, California, telephone MAdison 6-1515.

When you read this, the dismal rain may have gone away to come again another day. But as I write, it is coming down by the bucketful. I am trying to keep my mind on how happy the citrus growers are with all this moisture and how badly we have needed it but find it increasingly difficult to be cheerful when the wash will not dry, the youngsters are cooped up indoors with the sniffles and life has evolved into a constant round of nose drops, meals and mud!
There. I have said it and I feel much better already!
The mailman, always a welcome sight to a home-bound home-maker, is doubly welcome on a rainy day. If he has slighted you lately, how about dashing off some newsy notes to friends you have owed letters to for ages? It is about time for this writer to take pen in hand and answer some of the questions that have been coming this way.
READERS' QUERIES
Question: What is the best way for my husband and me to return the hospitality some special friends have shown us?
We are on a pretty limited budget while they seem to have unlimited means. They have never been to our home and we don't want to show up badly by contrast.
Answer: With Emily Post as our guide, we suggest you invite your friends for dinner, taking special tume," you might like to consider a full skirt with separate blouse and a chic little waist-length jacket in contrast fabric to match the blouse.
Question: I would like to have some tasty cheese on hand to serve unexpected guests, and for snacks at television time but am unfamiliar with all but Cheddar. What do you suggest?
Answer: We suggest you try one or two each week until you hear upon the ones you are especially fond of. The domestic Blue cheese, the American version of France's Roquefort, is a favorite dessert cheese served in wedges with toasted crackers and goo too, when crumbled into tossed green salads. Port Salut is a rich smooth full-bodied cheese of so consistency. Gouda is the small round one coated with red parchin, a firm mild variety that oryone likes. Provolone is an Italian cheese with a smoky flavor, excellent for sandwiches and for grating into casserole dish and the like. Glarus is a strong flavored dessert cheese on the order of Limburger. Best serve at room temperature so that it soft and runny. Scrape off our side rind and serve with cracker or slices of apple. Camembert and Rexoli are also popular additions to the dessert cheese tray.
Question: Please give me some ideas for an inexpensive maid dish suitable for a pet luck sundae.

We are on a pretty limited budget while they seem to have unlimited means. They have never been to our home and we don't want to show up badly by contrast.
Answer: With Emily Post as our guide, we suggest you invite your friends for dinner, taking special pains to find out beforehand the foods and beverages they especially like. You may want to invite another couple that you think would be especially agreeable to them. Plan the evening to the last detail so that you will be free from unnecessary strain or worry and concentrate on making your guests feel at home. Do not pretend to be what you are not. By making guests feel welcome, your own special brand of hospitality will make the evening a success.
Question: Am thinking of making my Easter outfit this year and am wondering if you could suggest something dressy that will be especially smart this spring.
Answer: The leading dress designers are stressing "complete street costumes" which might be either a suit, a coat that doubles for a dress, or a dress designed to be a complete outfit without the addition of a coat. Faille will be a good choice of material. Either black or navy will be in fashion and you have your choice of full or narrow skirt. As another thought for the "complete cos-

QUICK LUNCH
Canned spaghetti in tomato sauce makes a good prepared-in-a minute lunch; serve with crisp slices of bacon and a salad of escarole, chicory, and romaine.
SKINNING A HAM
When you're removing a rind from a ham use a sharp knife and be careful not to break or tear the fat. When you score the fat don't cut too deeply.
TEEN AGE TASTE TEMPTER
For a teen-age party serve hamburgers on buns and cole slaw; add salted peanuts to the slaw.
DISH-WASHER
A front-opening dish--washer is a wise choice for a kitchen that hasn't much counter space because the top of it may be utilized.
SALAD AS FIRST COURSE
Serve a salad for a first course sometime. Celery stuffed with a mixture of cream and Roquefort cheese, cut into one- or two-inch lengths, and arranged on shredded lettuce is a good choice; drizzle the lettuce with a well-seasoned French dressing before adding the celery wedges.
