Then cook them on a hot buttered griddle until the whites are almost set, then cover eggs with any dome-shaped lid that is sufficiently large. It won't take long for the steam to coat the surface of the yolk. Then remove lid, season eggs, and serve. For an extra flavor fillip, sprinkle the eggs lightly with finely grated American cheese just before covering them. You can make a little omelet on your griddle like this! Beat egg ever so fluffy with rotary egg beater; add 1 tablespoon milk, a sprinkle of salt and pepper. When griddle is moderately hot, melt 1 teaspoon butter, pour batter over melted butter and cook gently, folding toward center, until omelet is set. Spread with jelly and roll, if desired. "Casserole Pancakes" are an easy deal for serving a crowd. Make the cakes large enough to fit your casserole dish; place dish in oven and heat. As the pancakes are done, stack them in casserole, dotting each cake with butter and dousing with syrup. When dish is full, invert on hot plate, cut into wedges and serve.
