Taxpayers Given Cheerful Forcast On Lower Rate
Orange county’s property tax rate, scheduled to be set by the board of supervisors by September 1, should be considerably below the 83c rate per $100 of assessed value levied for 1942-43, California Taxpayers’ association declared today, urging attendance by citizens and civic organizations at the public hearings on county and school district budgets, scheduled for early in August.
The county-wide rate went down from 88c for 1941-42 to tax reduction in 1943-44.
4. In most counties, highway expenditures should be down, because of shortages of men and materials.
“Proposals for expansion of local government spending, including demands for salary and wage increases, ideas of building up indefinite post-war reserves, and any plans for extension of government activities should be vigorously fought by taxpayers,” the Taxpayers’ association declared. “Any war bonus wage increases which mean an increase in total payroll should be defeated. The total payroll for 1943-44 should be below that for 1942-43, because of the reduction in the use of men and women for non-war work which the war effort demands. School and other local budgets should also be valuable little.”

Valuable Little Paper Is Published By Patients at County Sanatorium
"Back Talk," an interesting little paper issued, as its masthead indicates, "For the patients by the patients" of Orange County sanatorium, has been given general distribution recently. To those fortunate enough to receive copies, the message carried between the lines is fully as important as the cheerfulness that the various articles convey.
For it is a message of courage, and of the fighting spirit with which patients at the sanatorium are waging their battle against tuberculosis.
Back Talk, which is published by Orange County Tuberculosis and Health association, has quite an editorial staff headed by Kathryne Welch. Her seven associate editors are Mike Jimenez, Tom Smith, Rachel Gonzales, Marge Adams, Rose Marie Saldana, Tino Cruz and Angie Peralta, with Eddie Campos as the artist responsible for the clever line drawing of two lively guitarists, and the patriotic cover page.
The staff has an excellent advisory board composed of Mrs. Nell Hunt., Dr. Mabel Geddes, Mrs. Edna Hewitt Crawford and Miss Alma Karlsson, all prominent in TB association and sanatorium activities.
The leading article in the current issue is devoted to family cooperation with patients released from the sanatorium. The importance of this may best be realized when it is stated that Orange County sanatorium shows the highest percentage of cures and arrested cases of TB of any similar institution in the state. The article is valuable not only to patients themselves and their families, but to every reader, for information on the correct procedure in handling such cases should it be general.

Thirty carloads of oranges are required to produce one railway carload of concentrated orange juice, according to Sunkist reports. Up to the first of June, more than 2,500,000 gallons of California-Arizona concentrated citrus juices were purchased by Lend-Lease. This is equivalent to nearly 11,000 railway carloads.

Serve cubed or whole beets with a sweet-tart thickened sauce—and you have delicious Harvard Beets! Try tangy orange sauce, slightly thickened with cream and orange rind. Sauce Polanaise—combine sour cream, vinegar, sugar, butter.
Try carrots au gratin on your gas range. Use a rich white sauce, hard-cooked eggs topped with butter crumbs and cheese and baked to a golden brown. Other main dishes: Bake a tasty carrot souffle, highly seasoned with a few grains of nutmeg and cayenne. And golden carrots are the making of a good old-fashioned stew!
Try smothering chicken or rabbit with a layer of carrots or onions, sliced paper-thin—then bake until tender. For variety, it's a good idea to have several jars of pickled beets on hand for meat or salad. Chopped beets and cabbage are a "must" relish with baked beans. When you thin out your carrots, pickle the very tiny ones for meat accompaniment.
