Recipes Demonstrated at Gazette All-Electric Cooking School Given Recipes used by Miss Nancy Baker during her demonstrations at the Anaheim Gazette all-electric cooking school yesterday and today are as follows: BANANA FRITTERS 1 cup Fisher Blend Flour ¼ cup sugar 1¼ teaspoon salt 1 teaspoon K. C. baking powder 1 egg, well beaten 1/3 cup Sego milk 2 teaspoons melted Crisco Crisco for deep fat frying. Sift flour, measure and sift with salt, baking powder, and sugar. Combine egg and milk and add gradually to dry ingredients, stirring until smooth. Add melted Crisco. Heat Crisco to 375 degrees (or until a 1-inch cube of bread will brown in 40 seconds). Cut bananas crosswise into quarters, halves or 1-inch pieces, roll in flour, then dip into fritter batter, coating completely and fry until a golden brown. Drain on unglazed paper. Serve very hot. PORK CHOPS AND RICE 6 Wilson's "Certified" pork chops 1 large onion, sliced 1 cup rice, uncooked 1 tablespoon Worcestershire sauce. Salt and Ben Hur pepper Crisco Water Brown pork chops in small amount of Crico. Season with salt and pepper. Cover each chop with slice of onion, add rice, Worcestershire sauce, and enough water to powdered sugar, about 2 cups. Cook first 5 ingredients together until thick, about 6 minutes. Add powdered sugar until of right consistency to spread. SPANISH STEAK 2 pounds Wilson "Certified" bottom round, ground 1 egg ½ cup Excelsior milk 1 tablespoon Worcestershire sauce 1 tablespoon Ben Hur prepared mustard 1 tablespoon minced onion 2 teaspoons salt 1 No. 2 can tomatoes, drained 1 cup grated cheese 6 strips Wilson "Certified" bacon. Mix first 8 ingredients together well and pack into a loaf pan. Cover with drained tomatoes, sprinkle with cheese and lay row of bacon on top. Bake at 400 degrees about 45 minutes. OVEN MEAL Spanish Steak Baked Potatoes Buttered Beets Pear Pie Time 1 hour, temperature 400 degrees. EGG BALLS 4 hard cooked eggs 2 tablespoons Weber bread crumbs with salt and baking powder. Stir Crisco and sugar together. Add soda to persimmon pulp and add to Crisco and sugar. Add sifted dry ingredients, alternately with milk, small amounts at a time, blending well after each addition. Stir in vanilla. Pour into greased pan, cover with wax paper and steam above meat in cooker pot two hours. Serve with whipped cream. CHOCOLATE SUNDAE PIE 1 tablespoon Ben Hur plain gelatine ¼ cup cold water 3 egg yolks, slightly beaten ½ cup sugar ¼ teaspoon salt ¼ teaspoon Ben Hur nutmeg 1 cup Excelsior milk ½ teaspoon Ben Hur vanilla 3 egg whites, beaten stiff Excelsior pastry cream, whipped 1 baked pastry shell Grated chocolate Soften gelatine in cold water. Combine egg yolks, sugar, nutmeg and salt, slowly add milk. Cook over hot water until mixture coats spoon. Add gelatine, stir until dissolved. Cool until thick, add vanilla and fold in egg whites. Pour into pie shell, chill. Cover with whipped cream and sprinkle with chocolate. PASTRY 2 cups Fisher Blend flour 2/3 cup Crisco 1 1/3 teaspoon salt ¼ cup cold water. Sift flour and measure. Blend Crisco, water and salt with a fork until Crisco is creamy and absorbs part of water. Add flour all at once and stir until pastry 6 Wilson's "Certified" pork chops 1 large onion, sliced 1 cup rice, uncooked 1 tablespoon Worcestershire sauce. Salt and Ben Hur pepper Crisco Water Brown pork chops in small amount of Crico. Season with salt and pepper. Cover each chop with slice of onion, add rice, Worcestershire sauce, and enough water to cover. Cover and let come to steam with unit on "high." Turn switch to "off" and cook 45 minutes on stored heat. Do not lift cover until cooking time is up. PEAR PIE 6 fresh pears (canned may be used) Juice of 1 lemon 1 teaspoon grated lemon rind ¼ cup sugar 1/3 cup Excelsior butter ½ cup Fisher Blend flour ½ teaspoon cinnamon ½ teaspoon ginger ¼ teaspoon mace ¼ cup sugar Line: a 9-inch pie dish with pastry. Flute edges. Chill while preparing filling. Arrange pears cut in eighths in pie shell. Add lemon juice and rind and ¼ cup sugar. Prepare topping by combining remaining ingredients. Carefully sprinkle the mixture over the pears. Bake at 400 degrees 45 minutes. Cool and serve with whipped cream. PASTRY 3 cups Fisher Blend flour 1½ teaspoons salt 1 cup Crisco Ice water. Sift flour, measure and sift with salt. Cut Crisco in coarsely. Add just enough water to barely hold together. PASTRY 2 cups Fisher Blend flour 2/3 cup Crisco 1½ teaspoon salt Ice water. Sift flour, measure and sift with salt. Cut crisco in coarsely. Add just enough water to barely hold together. Roll on slightly floured board. MOCK CHERRY PIE 1 cup cranberries ½ cup seeded raisins ¾ cup sugar 1 tablespoon Fisher Blend flour 1 teaspoon Ben Hur almond OVEN MEAL Spanish Steak Baked Potatoes Buttered Beets Pear Pie Time 1 hour, temperature 400 degrees. Add all other ingredients and mix well. Form into medium-size balls and roll in crumbs. Fry in Crisco heated to 375 degrees, until a golden brown. MERINGUE SPICE CAKE ¾ cup Crisco 2 cups brown sugar 2 eggs 2 2/3 cups Fisher Fine Spun cake flour ¾ teaspoon salt ¼ teaspoon soda 1 teaspoon K C Baking Powder 1 teaspoon Ben Hur cinnamon 1 teaspoon Ben Hur cloves ¼ cup Excelsior buttermilk 1 teaspoon vanilla Sift flour, measure and sift with salt, baking powder and soda. Cream Crisco, sugar and egg yolk until light and fluffy. Add dry ingredients alternately with milk and vanilla. Pour into well greased pan 9 x 13, and cover with meringue. Bake at 350 deg. 45 minutes. MERINGUE 1 cup brown sugar 2 eggs whites salt ½ cup nut meats Beat egg whites until stiff. Add sugar gradually and continue beating until smooth. Spread meringue over cake batter, sprinkle with nuts and bake as directed. PARTY SALAD 1 package Ben Hur lemon gelatin dessert 1 cup Excelsior-pastry cream, whipped ½ cup blanched almonds 8 tablespoons vinegar 1 small bottle stuffed olives, sliced Ice water. Sift flour, measure and sift with salt. Cut crisco in coarsely. Add just enough water to barely hold together. Roll on slightly floured board. MOCK CHERRY PIE 1 cup cranberries ½ cup seeded raisins ¾ cup sugar 1 tablespoon Fisher Blend flour 1 teaspoon Ben Hur almond extract 1 teaspoon Excelsior butter. Line pie dish with pastry. Fill with cranberries cut in half and mixed with chopped raisins. Sprinkle with mixture of sugar and flour, add almond extract and dot with butter. Cover with top crust, seal well and bake at 400 degrees 45 minutes. DEVIL'S FOOD 2½ cups Fisher Fine Spun cake flour 1 teaspoon K-C baking powder ½ teaspoon salt ½ cup Crisco 2 cups sugar 1 teaspoon soda 2½ ounces chocolate, melted 2 eggs ½ cup Excelsior buttermilk 1 teaspoon Ben Hur vanilla 1 cup boiling water Sift flour, measure and sift with salt, baking-powder and soda. Stir Crisco, sugar and egg yolks. Add chocolate. Add sifted dry ingredients alternately with milk, small amount at a time, beating until smooth after each addition. Fold in beaten egg whites, add vanilla and boiling water. Bake in 2 9-inch layer pans 25 - 30 minutes at 350 degrees F. Chef's Special Frosting 2 ounces chocolate 2 tablepoons Excelsior butter 1/3 cup Excelsior milk 1 egg 1 cup granulated sugar PARTY SALAD 1 package Ben Hur lemon gelatin dessert 1 cup Excelsior pastry cream, whipped ½ cup blanched almonds 8 tablespoons vinegar 1 small bottle stuffed olives, sliced 1 cup grated cheese ½ cup pimiento, chopped 4 sweet pickles, chopped Dissolve gelatin in 2 cups hot water, chill until thick, whip. Add vinegar, whipped cream, cheese and fold in other ingredients. Pour into molds and chill. Serve on crisp lettuce with mayonnaise. BEEF CUBES IN SOUR CREAM 2 pounds Wilson's "Certified" shank or neck Flour for dredging Crisco for browning 2 medium onions, sliced ½ cup thick Excelsior sour cream ½ cup water 2 tablespoons grated cheese salt and pepper. Cut beef into 1 inch cubes. Dredge with flour and brown in cooker kettle on surface unit in hot Crisco. Add onions, water, sour cream, cheese, salt and pepper. Place in cooker well, let come to steam with unit on high—Turn to low and let cook until tender. PERSIMMON PUDDING 1 cup persimmon pulp 2 teaspoons soda 1 cup sugar. 1 tablespoon Crisco ½ cup Excelsior milk 2 cups Fisher Blend flour 2 teaspoons K-C baking powder 1 teaspoon salt 1 teaspoon Ben Hur vanilla Sift flour, measure and sift ANAHEIM GAZETTE Shore Protection Board is Planned New Bill to be Introduced at Special Session of Legislature Creation of a state "Shore Protection board" is provided for in a bill formulated by Orange county coast line leaders to be introduced before the state legislature at an anticipated special session early next year. Dan Patch of Sunset Beach, is head of a special Orange County Coast association committee, which has been working on the erosion problem and has held several conferences on the wording of the proposed state law creating the board. According to the document now completed the shore protection board will have seven members, three appointed by the governor and four others representing the state lands commission, the state planning board, the state division of water resources and the faculty of engineering at the University of California. The members would serve without pay, but would receive traveling and other expenses. Their work would be as an advisory agency to the state department of public works, and as a co-ordinating agency working with the federal erosion board and city and county agencies in handling emergency erosion problems and in planning long-term erosion control projects. Members would serve for four Laguna Beach Angered Over Magazine Article Terming an article published in the Saturday Evening Post under date of December 2 to be "erroneous in fact and highly derogatory to the character of the citizenry of Laguna Beach," the board of trustees of the Laguna Beach unified school district this week drafted a strongly-worded resolution of condemnation for the article in question and forwarded it to the publishers of the periodical. The article in the magazine quarted to school board members as opponents of school thrift plans. It also asserted that communisits, many of them movie stars, made Laguna Beach their home and commuted daily to their Hollywood jobs. Suspect at Liberty Under Bond of $150 J. T. Rowe of Huntington Beach is at liberty under bond of $150 pending his appearance in Anaheim justice court on December 15 to answer to a charge of petty theft. Five Men Rescue Couple from Boat Sam Burns of Garden Grove and Miss Edith Lake of Los Angeles were rescued from the former disabled boat Sunday afternoon through the heroic efforts of five men. The rescue occurred on Huntington Beach. Disabled as the result of having been struck by a heavy swell, Burns' boat was in distress when the five men, Bud Higgins, John Lubo, Berton Foster, of Newport Beach, Raleigh Musolf of Huntington Beach and George Bissitt of Belmont Shore, learned of its plight. They swam out to the boat and towed it into the open sea holding it there until the arrival of a patrol boat from Newport Beach. Wildcat Well Will be Started Dec. 20 Landowners of Garden Grove have been approached recently by agents of oil concerns seeking leases in anticipation of the proposed drilling of a wildcat well southeast of that community, near the Santa Ana river. Experiment Station Tour Draws Throng One hundred and fifty citrus growers from all parts of Orange county were guests of the Citrus Experiment Station last Friday when open house was held for the Orange County delegation. Judge Harry Westover was named judge advocate of the Tournament association. New directors of the organization are Last Rites Held for Dr. Slabaugh Funeral services for Dr. Frank W. Slabaugh, 66, Orange county purchasing agent from 1918 to 1937, were conducted Tuesday at Santa Ana, with burial being made in Fairhaven cemetery. Dr. Slabaugh died Saturady after a brief illness, although he had been in poor health for a year. He was a resident of Orange county for 24 years and was a dentist. Survivors include the widow, Mrs. Ellen B. Slabaugh; two daughters, Mrs. Virginia Hdlsington and Mrs. Helen Ragan, both of Los Angeles, and a brother, W. E. Slabaugh of Akron, Ohio. Reginald White, Raymond Kent Harvey, Steve Smith, Weston Jay, and Hubbard Howe. Mrs. Sarah Winchester believed that death would never take her as long as her home remained unfinished, so she kept adding rooms to it.
