Simple Rules For Use of Baking Powder Insure Success in Cake Baking Knowing that baking powder leavens cake it is natural to assume that adding an extra half teaspoon to the amount specified in a recipe will give a cake greater lightness. However, that is not true, and the best plan to follow is to use the amount recommended on your baking powder can. Because of the increased efficiency of K C and some other baking powders in use today, representing about 80% of the baking powder consumed, they should be used properly to insure successful bakings. The following rules will be helpful in bringing about desired results: First, always use the amount specified on your baking powder can. This proportion has been worked out as best for that particular type. With K C, one level teaspoonful to a cup of sifted flour is sufficient for most recipes. Second, measure carefully—remember that an excess amount of any baking powder does not produce best results. A level teaspoonful means that you must level off with a knife. K C Baking Powder, the brand used in the cooking school, is one of the most economical and efficient products entering the kitchen. Properly used it will produce for you, the finest of baked goods. Recipes Used Today 1. Broiled Veal Chops—with Vegetables and Fruits. 2. Graham Scones. 3. Southern Crab Salad. 4. Royal Vintage Pie. 5. Spring Sponge Cake—Quick You will be convinced of this by giving it a fair trial and observing results obtained. You can get additional helpful information and a number of practical, tested recipes by sending for the K C Cook's Book. A copy will be mailed, postage paid, if you send your request together with the slip taken from a can of K C Baking Powder, to Jacques Manufacturing Company, Chicago, Illinois. Southern Salad 1 can of Iris Crab 5 tomatoes, peeled, cubed chilled 4 tablespoons of Pompe Olive Oil 1 tablespoon of Iris preparation mustard 2 tablespoons lemon juice vinegar 2 green onions with minced 2 cups of finely cubed celery ½ teaspoon of salt Few grain of Iris Pepper Iris Mayonnaise Capers Chilled lettuce leaves Watercress Method: Mix olive oil, mustard and vinegar. Add remaining sonings, and toss crab, onion, celery well into mixture. Arrange three tomato sections on crisp tuce leaf, to form three leaf clover. Take tablespoon of shrimp mixture and pour over center clover. Place a small puff of mousse in center and on top this sprinkle capers. Garry with watercress and serve vinaigrette. Royal Vintage Pie 2½ cups seeded Iris raisins 1 cup Welch's Grape Juice 1¾ cups water ½ cup granulated sugar ½ teaspoon salt 4 tablespoons quick cook tapioca 2 tablespoons butter 2 tablespoons vinegar Method: Rinse raisins. Cobine all ingredients and boil for 12 to 15 minutes. Pour into pastry minutes. (½ cup of seeded raisins and grated rind of orange may be added to flame mixture if desired). Recipes Used Today 1. Broiled Dinner (Veal chops with fruit and vegetables). 6 veal chops 6 medium sized tomatoes 1 can Iris Peas, or green lima beans 1 can Iris Apricot Halves Melted Butter Salt and pepper Method: Set control at 500 degrees F. Turn oven switch to broil. Preheat 10 minutes. Place veal chops on slightly greased broiler rack. Season with salt and pepper, then dot with butter lightly. Arrange the tomatoes on it in rows, cut in halves and dipped in melted butter, (cut side up). Next arrange the peas and the apricots (cut side down). Season with salt and pepper and dot with butter. Place the rack with the veal chops above the food in the broiler pan. Slide under the broiler unit after the 10 minutes pre-heating time is up; then broil 20 minutes. Then the chops at the end of 10 minutes, then broil 20 minutes longer. (Biscuits may be placed on lower rack of oven and baked at the same time other food is broiling. I often make carrot, parsley biscuits for these, by adding ½ cup of grated carrot and 2 tablespoons of finely chopped parsley to standard biscuit dough. Spicy Beef With Vegetables 2 pounds chuck or rump of beef ¼ cup Pompeian Olive Oil ½ cup lemon juice ½ cup chopped onion 1 teaspoon salt ¼ teaspoon pepper 1 bay leaf 1 tablespoon A1 Sauce Shortening Carrots Onions Potatoes Method: Rub meat with mixture of oil, lemon juice, onion, and seasoning. Brown in heated shortening. Place in economy cooker—and add 2 cups of water. Turn switch to high until steam comes from vent, then turn to low and cook until meat is tender. About 45 minutes before meat is completed, add vegetables and cook remaining time. Remove meat and vegetables from cooker. Take 4 tablespoons of liquid from kettle, and add 3 tablespoons of flour to it, blending carefully. Slowly stir into juice in kettle and add sufficient boiling water to give desired consistency. Add A-1 Sauce and cook a minute or two longer. Serve piping hot over meat and vegetables, surrounded by vegetables. Egg noodles may be cooked—and served with spicy beef. Graham Scones 1½ cups of graham flour 1½ cups of sifted cake flour 3 tablespoons of K.C.Baking Powder 2 tablespoons of Holly sugar 1 teaspoon of salt ¼ cup of butter Royal Vintage Pie 2½ cups seeded Iris raisins 1 cup Welch's Grape Juice 1¾ cups water ½ cup granulated sugar ½ teaspoon salt 4 tablespoons quick cooking tapioca 2 tablespoons butter 2 tablespoons vinegar Method: Rinse raisins. Coine all ingredients and boil fry 12 to 15 minutes. Pour into pastry lined deep pie pan (10 inch), cover with top crust. Brush top milk, and bake in hot oven, degrees, for 25 minutes. (Do be baked with casserole din (375 degrees) for 1½ hours). Repeat in both flavor and color; mu like fresh grape pie. Perfection Pastry 2 cups sifted all-purpose flour 1 teaspoon salt ¾ cup butter 6 to 8 tablespoons cold water Method: Sift together flour and salt and cup in shortening coarsely. Add just enough ice water hold together. Divide dough two parts, roll out lower crust a line pie plate. Brush bottom w melted butter to prevent soak Fill with mixture, with remaining butter. Cover with top crust and bake in a hot oven, 450 degrees, for 10 minutes, then red heat to moderate, 350 degrees, and bake 25 or 30 minutes. Turn out immediately on slightly floured board and knead 30 seconds. Roll ½ inch thick and cut in triangles. Place on ungreased baking sheet. He was asked how much he got for this and that and who did his washing. Some of those present fell asleep and there are some who say the investigation would prove to be a boomerang.
