Bureau of Economics Suggests
Alternating Cold With
Hot Foods.

Washington, D. C. — Hot weather meal planning includes not only a wise selection of foods, but also a time schedule that arranges the cooking so that it is not necessary to spend so much time in an overheated kitchen. A succession of cold meals are likely to lose their appeal, so the Bureau of Home Economics suggests alternating them with hot meals that will provide cold servings.
Lamb is a Favorite
The delicate flavor of lamb makes it a favorite hot weather meat and its present low cost brings it within reach of all pocketbooks. Breast of lamb can be bought for about 12 cents a pound throughout the country and shoulder averages about 20 cents a pound. Either cut can be stuffed and served cold but the shoulder makes a much more satisfactory cold dish.
New peas or some other fresh green vegetable make an easy-to-cook and refreshing vegetable for a hot day.
Rice is a pleasant variation from potatoes, but make a gravy from the lamb drippings for many Occidentals do not relish rice unless it is served with a sauce or plenty of butter. In low cost meals it is obvious that gravy is more economical than butter. It also carries with it some of the nutriment of the meat. Cook enough rice to serve next day with scalloped tomatoes, cold meat, green lettuce salad, and diced pineapple.

Cut it in small pieces and serve it with other fruits in a fruit cup or sliced and eaten alone, with or without sugar, depending on individual taste and the ripeness of the fruit. It makes a good dessert to follow the stuffed shoulder of lamb.
If a family is composed of two adults and one child, a three-year old, there will be plenty left over for another meal. The three-year-old, by the way, may have everything in this dinner, including pineapple, but in smaller amounts, the bureau's child-feeding expert says.
Supper Without Cooking
The supper of egg salad and muffins will not require any cooking. Make enough muffins at breakfast so there will be some left for toasting. And while we are on the subject of eggs the bureau warns against overcooking them, which toughens the whites. The bureau prefers the name, "hard cooked eggs" to "hard boiled," since it advises simmering, not boiling, for both soft and hard cooked eggs.
Spellers Train for State Fair Contest
The state's best spellers—school children and adults—are in Summer training for the State Fair spelling contest, in which $1,050 in cash will be distributed to the winners, as well as medals.
There will be three divisions of the contest—adults, grammar schools and high schools. The adult contest is open to all. In this division the first prize is $200 and a gold medal, second prize $100 and a silver medal and third prize $50 and a bronze medal. In the grammar and high schools divisions the prizes will be first, $100 and a gold medal; second, $75 and a silver medal; third, $50 and a bronze medal, fourth, $25 and a ribbon award and ten $10 prizes with ribbons for runners-up. Persons who have won first place in any of the previous contests will not be eligible to enter the contest in the division in which they won.
Preliminary contests have been held throughout the state in grammar and high schools to determine county representatives to participate in the finals at the State Fair. In counties where such contests have not been held or completed, school authorities may appoint representatives by communicating with Mrs. Jane Amundsen, superintendent of the water. Fried Spinach Balls
Three cups cooked, chopped spinach; 2 tablespoons butter, 2 tablespoons grated onion, 2 tablespoons grated cheese, 1 egg, 1-8 teaspoon allspice, 1 cup fine dry bread.
Combine ingredients and let stand ten minutes to swell the bread crumbs. Shape in balls and roll in bread crumbs. Then dip the balls in egg which has been slightly beaten with one half cup cold water and roll again in crumbs. Fry in deep fat. Serve at once or reheat in oven when desired.

Wash spinach very carefully. Cook in boiling salted water until tender, about 30 minutes. Lift the spinach out.

Stopped on the street by inquisitive autoists bent on seeing for themselves the principles of floating power, free-wheeling and other features, the new Plymouth demonstrator, painted in bright colors to call attention to its unique lines and speed, has caused more of a sensation in automobile row than any previous automobile in the recollection of Charles H. Mann in his 25 years of automobile experience.
Crowds at Show Rooms
Charles Mann, Plymouth and Dodge dealer for Anaheim, received his Plymouth demonstrator a week ago. Immediate crowds began pouring into his showrooms at 210 South Los Angeles street to view the new machine, which embodies the floating power principal which makes the car "smooth as an eight."
Hundreds of people who have ridden in the demonstrator enthusiastically proclaimed it if not the smoothest, as smooth in performance as any auto in which they ever have ridden, whether of four, six or eight cylinders. Greatest attention was paid by the inquiring to the principle of floating power.

The institute will start at the San Fernando Valley Grower's packing house at Reseda with an inspection of the plant, which was built last year. The morning program will include a discussion of die-back in walnut trees, the value and need for adequate advertising in the sale of walnuts, market conditions as existing at that time, and a discussion of the state standardization law as it applies to walnuts.
In the afternoon a field tour will be held under the direction of the Agricultural Extension Service, featuring soil variability, soil management, and moisture control. Several orchards will be visited.

AN ORDINANCE OF THE CITY OF ANAHEIM REGULATING THE SALE BY AUCTION OF GOODS, WARES OR MERCHANDISE WITHIN THE CITY LIMITS OF ANAHEIM.
The City Council of the City of Anaheim do ordain as follows:
SECTION 1: It shall be unlawful for any person, firm, corporation or association to sell, dispose of or offer for sale in the City of Anaheim, at public auction, or to cause or permit to be sold, disposed of or offered for sale in the City of Anaheim, California, at public auction, any platinum, gold, silver or plated ware, precious stones, semi-precious stones, watches or other jewelry, or furniture, rugs or other house furnishings, whether the same shall be their own property or whether they shall sell the same as agents or employees of others, except judicial sales or those made by executors or administrators of the estate of decedents; and excepting also sales made at public auction of the stock on hand of any person or persons, or corporation that shall for the period of one year next preceding such sale have been continuously in business in the City of Anaheim, California, as a retail or wholesale merchant; provided that in the latter case, before such merchant

Spread the paste over the fat covering of the ham, after removing the rind, and stick whole long-stemmed cloves into the surface. Bake for 10 minutes in a hot oven (500 degrees F.).

Field Day Planned For Walnut Growers
A field day for walnut growers of Southern California is being planned for September 12, according to an announcement made by Harold E. Walberg, Farm Advisor. This institute is regularly held by the Inter-County Walnut Growers' Department of the Farm Bureau, an organization composed of walnut growers in Orange, Ventura, Santa Barbara, Los Angeles, San Bernardino and Riverside counties.
