Drastic Action to Be Taken Against Fellow Who Falls to Give Aid After Accident
War to the litter end will be declared by county authorities throughout southern California on the motorists who smashed into a follow-driver and then runs away.
Officials of the Automobile Club of Southern California have risen up in arms against the criminal type of auto driver who is becoming too numerous on highways in this section. And the club has instigated action against him wherever possible.
Now the time has come, points out the motoring organization, when drastic action must be taken in order to crub the further exploits of the man who runs down an innocent pedestrian or smashes into another car and then "beats it away" from the scene of the accident as fast as gasoline will take him.
A case in point is cited where a motorist having the right of way at a street intersection was run into by another autoist. In the car which was run down were three women, one of them holding a baby in her arms. The motorist who ran into this car was able to get away for a block, but the other car containing the woman and baby was not so badly damaged but what the driver could start in pursuit.
He succeeded in catching the culprit, and now the case is to be prosecuted in Los Angeles to the fullest extent of the law.
Section 21, of the state motor vehicle act, makes it a felony for failure to stop after an accident and give an accounting. The punishment for running away is imprisonment in the state penitentiary for a period not to exceed five years, or one year in the drippings from the pan served with the dinner. The amount suggested above was sufficient to stuff a turkey weighing a little over six pounds before being drawn.
The turkey may be started in an oven temperature of 450 degrees F. If a double roasting pan is used. If it is young and tender it will be done in one and a half hours, during the latter part of which the temperature may be slightly reduced. A large, heavy, or old bird will require considerably longer baking. Keep the bottom of the roasting pan well covered with water during the roasting so that the turkey will not dry out. The use of a "blanket" of biscuit dough spread over the entire turkey will insure a juicy, tender bird. With a "blanket" the top of the roaster is omitted. To make dough enough for a small 6-pound turkey 2 cups of flour were used, with 1 teaspoon of salt; 4 teaspoons of baking powder, and enough water to molten for rolling out thin. Shortening was not used because during the basting the dough absorbed sufficient fat. This "blanket" will be crisp and quite hard when the turkey is done and the skin underneath will be well browned. The "blanket" is good to eat with gravy.
The giblets may be baked in the pan beside the turkey, or put through the meat chopper and simmered in a quart of water while the turkey is baking. To thicken the gravy, 2 to 4 tablespoons of flour are blended with an equal amount of butter or turkey fat, and gradually stirred into the hot liquid. Salt and pepper are added according to taste.

Simple Method of Preparing the Thanksgiving Dinner
A Thanksgiving dinner should have an air of festivity, but at the same time it should not be too heavy or involve too much work in its preparation. If a turkey is to be the principal feature, the family will be impatient to see the big platter brought in; it is likely therefore that courses such as fruit or oyster cocktails, or soup, preceding the hearty part of the dinner, will not be fully appreciated. In some households it may seem advisable to include a light soup, like tomato or consomme, to "make the turkey go farther," but the family is perhaps justified in feeling that as Thanksgiving comes but once a year the rules of economy may well be laid aside. A good stuffing adds to the attractiveness of the feast without causing extra cooking or dishes to wash.

FEEDNG NOODLES TO GEESE
A method said to produce a much better fattened goose than almost any other, involving, however, considerable work, is that of stuffing the goose with noodles for three or four weeks. The feeder sits on a box in a corner of the pen, holds the goose between his legs, and stuffs it with noodles, usually three times daily, and increasing gradually to 6 or 7 noodles five times daily at 4-hour intervals.
The noodles are made of scalded corn meal, ground oats, ground barley, and ground wheat or wheat flour, using about equal parts of each. Add salt as for bread, thoroughly mix the feed, and put it through a sausage stuffer, cutting the product into pieces 2 1/2 to 3 inches long. Boil them for 10 to 15 minutes, or until they float, in a wash boiler containing a wire rack which stands 1 1/2 inches above the bottom of the boiler. Dip the noodles in cold water and roll in flour to keep them from sticking together. Pour hot water over the noodles just before they are fed to make them slippery and keep them warm.
The noodles are put into the mouth one at a time, and worked down with the hand on the outside of the neck. If any feed can be felt, no noodles are given at the next feeding time; otherwise the bird will go off its feed. Keep plenty of water before the goose. Young ganders are used for this special fattening and any older ganders or geese to be marketed. "Noodled" geese average 25 to 26 pounds, and individual weights of nearly 40 pounds have been obtained.

California plans to spend $15,000,000 on highway work next year, according to a statement issued Thursday following a conference in Sacramento between state highway commissioners and division engineers. Other conferences are scheduled to be held during the next few months at which a construction program will be worked out.

Stuffing the turkey—
6 cups finely brkken stale bread.
2 teaspoons salt.
2-3 teaspoon pepper.
1-4 teaspoon thyme.
1-2 teaspoon ground sage.
3 teaspoons baking powder.
1-4 pound butter.
1-2 onion, minced.
4 stalks celery, cut up small.
1-2 cup boiling water.
Draw and singe a tender young turkey. Remove the oil sac and all pinfeathers. Cleanse thoroughly and wipe dry. Rub the surface over with butter and a little salt, also a light sprinkling of pepper. Stuff with the above dressing, which has been tested by the United States department of agriculture.
Scissors may be used to cut up the stale bread. Cook the celery and onion in the butter five minutes. Mix with the bread, baking powder, seasonings, and hot water, and fill the cavity of the turkey. If a moist rather than a fluffy dressing is preferred use more water. In allotting the federal appropriation, several important changes in policy are noted. Each state must select a connected road system not exceeding 7 per cent of its total road mileage, for improvement with federal aid. This system will be divided into two classes, one of which will be known as interstate highways, and the other as intercounty highways. The interstate highways must not exceed three-sevenths of the system selected; on them not more than 60 per cent of the state's allotment can be spent without the joint approval of the secretary of agriculture and the state highway department. The intercounty highway, which consists of the remainder of the system selected, will receive the remainder of the state's allotment.
Advocates of permanent roads in California are interested in a provision of the federal statute which enables the national government after 90 days' notice to repair and maintain any state highway built under federal aid, and to refuse further funds until the maintenance cost is repaid to the government.

Wholesale Raiding of Mountain Sides Must Cease
There is to be no mutilation of California holly trees in Orange county this winter.
A new law aiming to protect the tree is in effect and will be enforced.
Wholesale raiding of mountainsides and canyons where the trees are found must cease.
At the last legislature, a bill introduced by State Senator Walter Eden, of Santa Ana, was enacted into a law, which makes it a misdemeanor to mutilate or destroy California holly trees, and making it a misdemeanor to sell California holly unless written consent to take the berries has been secured from the owner. It is unlawful to sell berries taken from any public lands.
This law has attracted a good deal of favorable comment up and down the state from lovers of the great out-of-doors.
“This bill was drawn up,” said Senator Eden, “to meet a real need in California. The beauty and popularity of the berry caused it to be commercialized. Concerns in the city sent trucks back into the hills and brought it into the cities by the truck load. The craze for holly reached thousands upon thousands of people, many of whom were ruthless in their methods. They would cut down and break down trees, regardless of next year’s production of berries. In many portions of the state the trees were being annihilated.
“Many of the trees are on privately owned land; and the trees are thus privately owned. The law could not be made constitutional without protecting the right of the owner to dispose of his property. For that reason it was necessary to allow the destruction of the tree by an owner or through his consent. For instance, might association have been filed. The directors were named as Ray Lambert, C.E. Utt, James Irvine, Jr., George Jeffrey and W.A. Cook. The directors constitute the membership of the association. The business of the association will be to furnish service to its members in connection with the cars and management of citrus orchards and the marketing of crops. The principal place of business is at Irvine. There is no capital stock.
President Harding’s unemployment conference declared that the problem of the jobless was largely one for each community to handle, and mayors and other local officials were urged to take up the matter at once and extend what relief they could to the men out of work in their own localities. Apparently the advice had its effect, for it is officially reported that in 27 northeastern states there is a record-breaking flood of building contracts. In one month 8000 contracts have been let, with a total valuation of almost $20,000,000. The public works committee of the unemployment conference is still maintaining offices in Washington and will publish reports from time to time on the building situation.

POULTRY SHOW PROMISES TO BE BIG AFFAIR
Fifteen Hundred Entries Expected at Santa Ana Exhibition
Poultry fanciers and poultry utility men of Orange county are engaged in planning the largest and most interesting poultry show ever held in the county, the big event to be held in the Santa Ana Walnut Growers' packing house from December 13 to 17.
Over 1500 entries are expected, reservations being planned for displays from San Diego, Riverside and Los Angeles counties. The Santa Ana poultry show will be the only one to be held between Oakland and San Diego at that time of the year.
Poultry show officials met Wednesday night at the Orange county farm bureau office to discuss details of the exposition. It is is planned to have the receipts from concessions offset expenditures made in connection with housing, advertising and printing of premium lists. Entrance fees are expected to provide adequate coopage during the exhibition. No cash prizes will be awarded, but ribbons will be distributed.
Free admission will prevail on all days of the show, if being planned to create greater interest in poultry raising, especially among the novices. The small poultryman will be given the same opportunity at the show as will be extended to the fancier who indulges in pure-bred stock.

With the formation of the Irvine citrus association within the past few days plans under contemplation for the past year have been consummated and another accession has been made to Orange county's thriving citrus industry.
The new association has taken over the abandoned lemon house of the San Joaquin Fruit company, on the Irvine ranch, and pickers are at work on the lemons destined for the first pack.
"The orchards have grown to such an extent that the Tustin houses are already overloaded and we have had to take over the San Joaquin house to get our fruit out," said James Irvine, Jr. "We expect to handle about 60 or 70 carloads of lemons the first year and we will probably expand our business so as to take care of part of next year's orange crop."
