HOW TO CREATE APPETIZING DISHES ECONOMIC AND SATISFACTORY MANNER IN WHICH SCRAPS CAN BE USED. Government Experimenters Give Some New Recipes for Making Hash—Mock Rabbit is the Latest Innovation of Expert Cooks. What's in a name? Much, sometimes. For instance, hash. Hash has become one of the seven original jokes. But hash, if well made and well seasoned, is a culinary delicacy. No matter how good it is, however, it grows tiresome if served too much. So the canny meat-saving cook serves her hash in new forms, labeled with new names, and the finicky in her family eat it with a relish. Sometimes the meat has been cooked, but oftentimes it is tough portions of steak or other cuts which have been cut off before cooking. Chopping makes it tender and also allows it to be cooked quickly and economically. The following recipes are recommended by the home economics kitchen of the United States Department of Agriculture: Mock Rabbit. spoons of lard, 1 teaspoon of baking powder, salt, and milk enough to mix) should be rolled thin, cut into strips, and folded about the meat rolls, care being taken to keep the shape regular. The rolls should be baked in a quick oven until they are of a delicate brown color, and served hot. CHEMICAL ANALYSIS OF MANURE FOR ORCHARDS Dr. S. S. Twombly Gives Lecture at El Modena on Subject. Average tests on $25,000 worth of manures bought by a single ranch this year have given some very interesting data, which Dr. S. S. Twombly of Fullerton presented to the El Modena Center Monday evening. The best way to determine the value of manures is through chemical analysis. Laboratory analysis showed an average as follows: Forty-four per cent water, 880 pounds per ton; fifteen per cent organic matter, 30 pounds (including shavings and straw); forty per cent waste; 800 pounds actual dirt and lifeless material; six-tenths of one per cent nitrogen, 12 pounds per ton. Valuing nitrogen at twenty-five cents per pound would bring the average nitrogen content of average manures to $3.00 per ton. Dairy manures, generally heavy and green—Fifty-six per cent water, 1120 pounds per ton; twenty-four per cent organic matter, 480 pounds per ton; eighteen per cent waste, 360 pounds per ton; seven-tenths of one per cent nitrogen, 14 pounds per ton. "Inasmuch as the general farm practice in the citrus grove is to irrigate and cultivate heavily both factors in..." Pepper and salt. Chop the meat. Chop the onion and cook it—but do not brown it—in the fat fried out of a small portion of pork. Add the bread and cook a few minutes. When cool, mix all the ingredients and form into a long round roll. The surface can easily be made smooth if the hand is wet with cold water. Lay the remaining pork, cut in thin slices, on top, and bake 40 minutes in hot oven. The sausage may be omitted, if desired, and other seasoning used. Smothered Beef Roll. 1 pound round beef. 1 pound lean fresh pork. 1 small onion. 1 green pepper. 1 cup soft stale bread crumbs. 1 teaspoon salt. 1 egg. 2 cups stewed tomatoes. 2 slices bacon. 2 tablespoons butter. 4 tablespoons flour. Remove the seeds from the pepper and put it through the meat grinder with the meats and the onion. Add crumbs, egg and salt. Make into a roll, place in a shallow baking dish, pour the strained tomatoes around it, put the bacon on top, and bake 40 minutes, basting with the tomatoes. Thicken the gravy with the flour cooked in the butter. A little seasoning, such as a bit of bay leaf, a clove and a small piece of onion, improves the tomato sauce. His talk was one of the best and most instructive given the center on the subject. At the election of officers for 1920 W. P. Read was choice for president and W. T. Chapman, director to the county organization. A big local talent program for the next meeting on Monday, March 8, will attract a full house. ARBOR DAY OBSERVANCE State Superintendent of Public Instruction, Will C. Wood, has just issued a bulletin of suggestions for the use of the schools of California in observing Conservation, Bird and Arbor Day. Since March 7th, the day set aside as Conservation, Bird and Arbor Day, this being the birthday of Luther Burbank, falls on Sunday, the schools will observe the Monday following. The bulletin contains a message to the pupils of the California schools from Luther Burbank, a discussion of the work of the California plant wizard and excellent articles on the redwoods, the effects of deforestation and beautification of the school grounds. Cannelon of Beef. This dish is prepared by making chopped beef into a roll and baking it wrapped in a buttered paper, a method designed to keep in the steam and so insure a moist, tender dish. The paper must be removed before serving. The roll should be basted occasionally with butter and water or drippings and water. In preparing the roll an egg may be added for each pound and a half of meat, and chopped parsley, onion juice, lemon peel, or finely chopped green peppers make good seasoning. A thickened gravy may be made from the drippings, the liquid used being either water or tomato juice. Strips of pork laid on the roll may be substituted for the buttered paper and basting. Meat Rolls. Small quantities of cold ham, chicken, or other meat may be utilized for meat rolls. The meat should be chopped fine, well seasoned, mixed with enough savory fat or butter to make it "shape," and formed into rolls about the size of a finger. When the jury verdict Attorney ANAHEIM GAZETTE MILLS LOSES SUIT AGAINST BEEF COMPANY Court Awards Him Amount Offered by Company in Corn Deal. Testimony relative to alleged dilatiorness by the Anaheim Beef and Provision Company in hauling off a quantity of ensilage corn, cut on a field belonging to A. A. Mills, of Anaheim, was given by him at the trial of an action through which he sought a judgment of $375.05, and through which he was awarded a judgment of $245 by Superior Judge Williams before whom the case was tried. This was the sum offered him by the company. Involved in the action were two patches of corn, which Mills alleged the company allowed to lie in his field for 24 hours before hauling off, in the instance of the first batch, and 5½ hours, in the case of the second batch. Mills alleged the corn shrank appreciably in weight because of its not having been hauled off promptly, and the judgment he sought was for the amount he claimed would have been due him had the corn been hauled off at once. Witnesses put on by Attorneys L. K. Vermille and H. Prince, of Los Angeles, counsel for the Beef and Provision Company, contradicted Mills' testimony regarding the length of time the concern had allowed the corn to lie in the field after cutting. These witnesses were John Ruether, R. Zamarrippa, Frank Hacker and Edward Ruether. Mills and his wife, Pamella H. Mills, were the only witnesses put on the stand by Attorneys. probation for his client, and a hearing on this application will be held on February 20 at 2 o'clock. Prince, of Los Angeles, counsel for the Beef and Provision Company, contradicted Mills' testimony regarding the length of time the concern had allowed the corn to lie in the field after cutting. These witnesses were John Ruether, R. Zamarrippa, Frank Hacker and Edward Ruether. Mills and his wife, Pamelia H. Mills, were the only witnesses put on the stand by Attorneys Tipton and Callor of Anaheim, counsel for the plaintiff. Witnesses for the provision company testified that Mills allowed irrigating water to run on a part of his corn field, presumably to increase the weight of the corn, prior to cutting. They also said that Mills picked a quantity of roasting ears from the field, before the corn was cut. As to having allowed water to run onto the field, Mills testified that an irrigation ditch ran across one corner of the property and that the water from this accidentally overflowed its bounds. A feature of Mills' complaint was his allegation that prior to cutting the second batch of corn the company, pursuant to a notification from him, drove its teams and wagons on to his field, just prior to beginning cutting operations, but, later, while Mills left the field, drove the teams off again, without any of the corn. MEXICAN GUN MAN GUILTY OF ASSAULT Panteleon Bermudez Gets an Easy Sentence for Shooting Blaza. Deliberating but little more than twenty minutes, the first mixed jury to hear the evidence in a criminal action in the superior court of Orange county returned a verdict of simple assault in the case of Panteleon Bermudez, who was charged with attacking Marcello Blaze near Anaheim with a deadly weapon with intent to kill. The jury which listened to the evidence submitted in the court of Superior Judge West retired at 4:40 o'clock Wednesday afternoon. It was ready to report at 5 o'clock, but was not let out of the jury room until about 5:15, Judge West having had a splendid kidney tonic for people of advanced age." Price 60c, at all dealers. "The road will be finished and the facilities to be put in by the forest service will be instituted in plenty of time for use by the public the coming summer," said Forest Ranger J. B. Stephenson of El Toro. Details of the improvements to be made by the forest service in order to accommodate the people who will use the camp grounds will be decided upon the last of March. At that time L. A. Barrett, assistant district forester, in charge of the lands, and William Freidhoff, mineral examiner and land surveyor for the forest service, will arrive from San Francisco and will go into the Trabuco with Forest Ranger Stephenson. At that time the exact area to be set apart for camp purposes will be determined. Barrett's visit will be short, but Freidhoff will remain to make the survey and to stake off the lots that the government will lease for building of cabins. The Trabuco is one of the most beautiful canyons in Southern California. The construction of a good road into the Trabuco and the establishment of a public camp grounds without doubt will quickly make the canyon one of the best known of the canyons of the South. BOLSHEVIST HORRORS Irish Girls Tell Story of Methods of the New and Terrible Russian Autocracy. Two Irish girls—the Misses May and Eileen Healy, daughters of Mr. Thomas Healy, former Nationalist M. P. for Wexford, and nieces of Mr. Timothy Healy, K. C.-have just reached London, having escaped from their shoulders through the streets." The defendant, as was expected, gave testimony relative to an alleged attempt by Blaza to rob him while the two men were in a house near the Anaheim sugar factory on the night of December 14. This alleged occurrence was claimed to have preceded the shooting of Baiza. It was brought out that a revolver, carried by Bermudez, was empty at the time that he left the house where the two men were, and entered an outhouse at the rear of the premises. Bermudez loaded the revolver while in the outhouse, the testimony showed. As Blaza came out of the main house, witnesses said, Bermudez stepped from the outhouse and shot Blaza without warning. Bermudez was defended by Attorney Antonio Orfila, of Los Angeles, and the prosecution was in the hands of Deputy Dist. Atty. W. F. Menton. When the jury had rendered its verdict, Attorney Orfila asked for Irish Girls Tell Story of Methods of the New and Terrible Russian Autocracy. These ladies have been in Russia for eight years as governesses, and have been in Kleff during each period of bolshevist rule. When they left, the bolshevists were only 25 miles off, and the guns of the Reds were again heard in the city. They tell a terrible story of bolshevist outrage, of which they were personal witnesses. They have been more than once turned out of their homes into the streets at a moment's notice, robbed of their possessions, and, although never subjected to personal violence, repeatedly threatened with death. In describing the scene when Denikine's army relieved Kleff last September, after eight months of bolshevism, Miss Eileen Healy said: "I shall never forget the day the Volunteer army arrived. The people had been counting the hours for this relief. The terror-striken population rushed from their homes, and when the Russian flag was hoisted over the Duma the city went mad with joy; the people sobbed and yelled with relief. The crowd surged around General Bredoff, wrapped his charger in a Russian flag, and carr'd him on their shoulders through the streets." The Reds had been compelled to clear out so quickly that they had no time to hide the evidences of their crimes. "The next day," said Miss May Healy, "I was enabled to visit the various prisons of the Tchresvetchaika or Extraordinary Commission—each of which was a veritable torture-house—scattered through the city. Though we had our suspicions we had no idea of the horrors that had been perpetrated within their walls. I knew many, who entered them when the Reds had departed to look for missing relatives, who came out mad, and one lady friend of mine dropped dead on reaching the street. "One of these places, 'Sadavoca 5,' was an attractive villa with a small garden. In a side building, a sort of garage, I saw the walls covered with blood and brains. In the middle was cut a channel or drain full of congealed blood, and just outside in the garden 127 nude and mutilated corpses, including those of fsome women, were flung into a hole. "They had been murdered the day previously, and the man who had removed the bodies from the shed told a horrible story. It seems that the victims first had to strip and then form up in line with arms folded.' The first line had to lie on their faces and were then shot. Even when I left Kieff the authorities had not completed their excavations, but already between 4,000 and 5,000 bodies had been identified. Quite apart from these atrocities life in Kieff during the Red occupation was a time of terror—one long nightmare. None of us knew when we would be arrested, and there was always shooting and firing in the streets. When we went to bed we never knew whether we should live to the next day, and after a while I think perhaps some of us did not care. Ten bolshevists occupied the room next to mine. There was a beautiful drawing room. There, night after night, they carried on drunken orgies of an unspeakable character with women they had brought in from the town, and I lay on my bed with the door barricaded until, from sheer exhaustion, I went to sleep."
