WAYS OF MAKING APPETIZING SAUCES
DEPARTMENT OF AGRICULTURE
MAKES PUBLIC SEVERAL NEW AND EXCELLENT RECIPES
Plain Dishes May be Made Appetizing by the Use of Proper Sauces and Dressings—Give These a Trial.
Appetizing sauces and dressings are the means used by the experienced cook to transform plain and ordinary dishes into something fit for an epicure. The piquancy of a well-made sauce adds to the flavor of fish and vegetables and increases their palatability. Here are some suggestions by specialists of the United States Department of Agriculture:
HOLLANDAÏSE SAUCE
½ cup butter.
2 eggs (yolks).
1½ tablespoons lemon juice.
1 cup boiling water.
½ teaspoon salt.
1-16 teaspoon cayenne.
Cream the butter, add the yolks one at a time and beat well; then add the lemon juice, salt and pepper. A short time before serving add boiling water. Cook over boiling water and stir until the mixture is of the consistency of custard, then serve immediately.
This is a delicious dressing to serve with cauliflower, asparagus tips, or with fish.

EGG SAUCE FOR FISH
½ cup butter.
2 tablespoons flour.
3 hard cooked eggs (cut in ½ inch slices).
1½ cups boiling water.
1-3 teaspoon salt.
Melt the butter, add flour and seasoning and gradually the boiling water. Add sliced eggs and serve.
MAYONNAISE DRESSING
½ teaspoon mustard..
¼ teaspoon salt.
2 eggs (yolks).
1 cup olive or other cooking oil.
2 tablespoons vinegar or lemon juice.
Mix yolks and add mustard, salt, and cayenne. Add the oil a few drops at a time and stir steadily. When half the oil has been used, or when the dressing becomes very thick, alternate with a few drops of vinegar. Continue this process until both are used. If the dressing curdles, start the process over again, beginning with a fresh yolk in a clean bowl, adding a little of the curdled dressing at a time and stirring constantly.
COOKED SALAD DRESSING
¼ tablespoon mustard.
¼ tablespoon salt.
2 tablespoons flour.
1 tablespoon sugar.
¾ cup sweet milk.
¼ teaspoon cayenne pepper.
2 eggs.
2 tablespoons butter.
½ cup vinegar.
Rub together the dry ingredients and add egg yolks, slightly beaten. Add the sugar, melted butter, cold milk, and hot vinegar in the order named, stirring until perfectly smooth. Cook the mixture in a double boiler until thickened. Set the pan into a bowl of cold water and beat well until cool and smooth.
GOLDEN DRESSING
¼ cup lemon juice.
¼ cup light-colored fruit juice.
6 tablespoons sugar.
2 eggs (yolks).

Beat the eggs, add the fruit juice, stir gradually into the lemon juice, and add the sugar. Cook in a double boiler and stir until the mixture coats a spoon. Cool quickly by placing pan into cold water, beating the mixture at the same time. This dressing is combined with fruits to be served as salads or desserts.
Some attractive fruit combinations are:
Canned peaches, cherries, and fresh apples, using cherry juice with the lemon in the dressing.
Canned figs, fresh oranges, and pecans, using orange juice in the dressing.
Guava, pineapple, and grapefruit, using pineapple juice in the dressing.
Canned berries or fresh grapes, apples, and pears, using scuppernong juice in the dressing.
Any of these dishes may be made especially attractive by garnishing them with nuts, whole cherries, berries, or marshmallows.

DYSENTERY PREVALENT ON THE PACIFIC COAST
All cases of dysentery or other intestinal disturbances should be brought promptly to the attention of local health officers according to a statement issued by the California State Board of Health. Outbreaks of bacillary dysentery have occurred frequently during the past few months at many places on the Pacific Coast. Several of these outbreaks have occurred in groups of children and unless such an outbreak is brought under control promptly it may be a great factor in increasing the infant mortality rate. Since California's infant mortality rate is lower than that for most states it is important that all cases of dysentery be brought under control immediately in order that the good record of California may be maintained and in order that the precious lives of little children may be saved.
Many returning soldiers are reported to be carriers of another form of dysentery. This disease is primarily a tropical disease but a great many cases occurred in Europe during the war and many carriers of the disease have been discovered in France and England. Bacteriological examinations of all suspicious cases should be made and all cases should be reported promptly to local health officers in order that this disease may not gain a foothold in California.

Cotterwise motorists, making the trip from San Francisco to San Diego, or in between points, have raised a holler to the sky about the condition of Stevenson Avenue in Los Angeles, which is an important portion of the state coast route from Oregon to the Mexican boundary, report officials of the Automobile Club of Southern California.
What is going to be done about it? Is the sum and substance of the motorists' inquiry. So loud has become the holler and so insistent the inquiry, that the San Diego chamber of commerce, the Anaheim board of trade and the Fullerton board of trade have all taken up the matter and added their own hollers to the complaints pouring in to the automobile club from over section.
It seems that Stevenson avenue is on such poor shape as to seriously menace the safety of motorists traveling over it, and creates an unpleasant notion of the coast route among motorists visiting here from the east, according to authoritative testimony, this condition existing from what is known as Indiana street east to Telegram road.
And now the automobile club is doing all it can to see what improvement can be made. Although this section of the coast route was taken over by the State Highway Commission when it took over the famous Whittier boulevard, the Commission has not sufficient funds for the building of new highways in what has become a built-up section of a city proper, according to State Highway Commissioner N. D. Darlington.
What will have to be done, it is est, Calif. and Nev. This action is based on the recommendation of the Secretary of Agriculture as the result of a detailed classification of the lands.
The eliminated lands have no value for national forest purposes. More than 15,000 acres eliminated are located on the steep canyon slope of the North Fork of the American River. Another large tract of approximately 10,000 acres lies along both sides of Yuba River, and much of the land is on the steep canyon walls of the river. About two-thirds of this tract has passed into private ownership under the mining laws. The remainder of the lands excluded are in smaller scattered tracts.

Advocating that an advance be made to the simple and logical metric system of weights and measures, manufacturers of the United States and Britannia have rallied to the support of the World Trade Club of San Francisco in their campaign to secure world-wide adoption of metric units.
The Lord Mayor of Manchester, representing one of Britannia's most important industrial centers, is President of the Manchester and District Decimal Association, whose purpose is to secure legislation in favor of the metric system.
The founder and president of the American National Association of Manufacturers, Theodore C. Search, was an advocate of the metric system.
The American National Wholesale Grocers' Association voted overwhelmingly in favor of adoption of metric units.
The American National Canners' Association urges adoption of metric units. This sentiment was passed at a convention of 5,000 delegates.

Two methods have been experimented with most successfully in recent year, and as a result of these experiments the ideas will be utilized even more extensively in the future.
