THE BEST TIMBER TREES
How the Government Studies Them for Benefit of Forest Owners and the Public.
Timber owners and manufacturers will be interested in the results of the detailed studies of commercial timber trees which the forest service of the U.S. department of agriculture is making. These studies are not confined exclusively to the well-known trees of recognized value, but, owing to the rapid decrease in the supply of our valuable woods, include those cheaper woods whose properties are imperfectly known. Such studies of the tupelo gum and western hemlock have done much to overcome the common prejudice against these species and have added materially to their commercial importance.
Commercial tree studies begin except for a peculiarity in growth. A given point on the never moves upward with the growth of the tree. Only the tip grows a nail driven into the trunk, given height will hold the height always.
The taper measurements serve as a guide for fixing the per height of stump in felling, to avoid waste but still get the stump-swelling peculiar to species.
Frequently, felled trees are ured, noting the diameter brigh, the length or distance wil branches, the "clear" and a merchantable lengths, and the height of the tree. Where th done in conjunction with the analysis, a table of age and h is readily made from the table of and breasthigh diameter already plained.
In order to apply the tables scribed, the stand on average of different types of land is mined by means of sample plot usually of an acre each, on which diameter of every tree is care measured and tallied. The yield on average acres is then ured out from the diameter gr tables and tabulated by decade.

The selection of a suitable place is the first step. In this the aim is to obtain average conditions as far as possible. When the range of the species to be studied is small, one locality may be sufficient, but generally it is necessary to take at least two localities, the data from which, if similar, can be thrown together or, if markedly unlike, kept separate for different regions within the range of the species. For example, the yellow poplar, or tulip-tree, has a very wide range, but a study of its growth and form would show very different results in the North and in the South.
In getting at the rate of growth of a species, the annual rings on the stumps are counted and the distance between each tenth ring is accurately measured. In other words, beginning at the outside of the stump, the rings are counted inward along the average radius, which is obtained by actual measurement and indicated by a pencil line. The layers of ten rings are marked off along this line and then the distance to each mark from the center of the pith is measured and tallied. Additional data as to the relative width of sapwood and heartwood, the width of the bark, the height of the stump, and so forth,

Besides the more purely technical matters of the life history of tree; the best methods of management and reproduction; the distribution of the species; the soundness of the damage by fire, wind, insects and fungi; and the general form development of the species; a series of the methods of lumbering is dertaken, especially as regards wnd damage to young growth.
Finally, a market study is made throughout the range of the species. Figures are obtained by measurement at some mill of the actual and grade in board feet of the from trees previously marked in woods. From these measurements the actual value of trees of all mension is found. The present of the timber are looked up, and practicability of extending its or substituting it for other species considered. In connection with timber tests of the wood are made at one of the government timber testing laboratories.
To sum up, every detail and aspect of the problem receives careful attention in the commercial studies, since it is their special object to set forth all facts that assist forest owners in managing improving their timberlands.

Admission Day Excursions to be held by The Santa Fe
On Saturday, Sunday and Monday September 7th, 8th and 9th, the Santa Fe will sell excursion tickets at fare good for return till Tuesday 10th.
This is the cheapest excursion of
which is obtained by actual measurement and indicated by a pencil line. The layers of ten rings are marked off along this line and then the distance to each mark from the center of the pith is measured and tallied. Additional data as to the relative width of sapwood and heartwood, the width of the bark, the height of the stump, and so forth, are obtained at the same time. These figures are taken for a great many stumps, in order to secure a fair average.
The results show the growth of the average tree inside the bark at the average stump height. In order to reduce this to diameter growth outside the bark at breast-heighth, 4½ feet above the ground, the taper of the average tree must be known. This is found by measuring the diameter of a great many trees at 1, 2, 3, 4 and 5 feet above the ground and averaging the results. The bark width is already known, so that all that is necessary is to add to it the figure obtained for growth inside the bark and subtract the loss through taper between stump-height and breastheight.
As a rule, a number of seedlings are measured to find out how long they have taken to reach stump-height. By adding this period to the age of the average tree on the stump the measurement of the height of the average tree is complete. This would not be the case

AT STATE FAIR
Pavilion Dairy Attractions to Be of Educational Value
It is realized by the California state fair management that there must be attractions with merit, in order to secure an attendance from the state at large. In the dairy division of the pavilion, in addition to the customary exhibits, there will be an attempt to demonstrate simple methods by which the dairymen and buttermakers may solve problems in the production and handling of cream, which will suggest to them improvement and economy in the present wasteful policy.
The method of testing cream, recommended by Prof. E. H. Webster, chief of the dairy division, Washington, is to be demonstrated daily. Apparatus, suited for dairy testing, will be used, and instruction to dairymen will be given in expert testing.
Pasteurizing with means found in any household, in which thorough work in heating and cooling the cream may be accomplished, will be carried on daily. The scarcity of sweet cream in the summer seasons and consequent high prices, warrants extra care to produce it. The fa.m is the place for pasteurization and this is so inexpensively accomplished that every farmer and housewife ought to understand the principle involved.
In the sweet cream trade and in butter making it is essential to study the condition of acidity and ripeness. Alkaline tablets are the most convenient for doing this and they are infallible in making such tests. In churning experiments at the fair the alkaline test is to be used. This is one of the simplest and most essential details of creamy work and it ought to be generally adopted.
It is compulsory that the water content of butter should be limited to 16 per cent. There are several ways to find this, but the simplest one only can be generally adopted in the creamery. One or more of these will be in operation in connection with the churning experiments at the fair.

Condensed Milk
The manufacture of this area been increasing in the past but there has never been a native exhibit at the fair. A small novelty in the buttermaking line will be operated, in which the mystery of butter formation can be seen, from the time that the cream is thoroughly aerated, and whipped, to the final point of perfect granulation. The principle involved is much the same as in separation, as the cream is quickly churned by centrifugal force and aerated at the same time. On a large scale this machine is well adapted to the alfalfa regions, for eliminating the peculiar flavor of that feed.
Separators are to be operated and dairymen will have the chance to learn how a forty per cent cream can be economically produced. The practice of shipping light cream is wasteful, in the loss of skim milk and cost of expressage. This is one of the points in which education will do far more than compulsion.
Everything feasible will be undertaken, at this dairy show, to bring home to the dairymen the great work being done for them by dairy specialists. The simple demonstrations at the fair are designed to illustrate the ease of making necessary tests, and of doing things right by a little care. They are not to be carried on in a scientific way, but just as the average operator would have to do them, if required.
Machinery Exhibits
A complete creamery outfit and special apparatus will be entered. At the park it is probable that milking machines are to be operated and displayed in the pavilion. This alone is a drawing card to dairymen.
There are several new cube cutting machines in the market and a special effort will be made to have a working competition between some of these, which will determine their merits. It would be feasible to use the cube butter sent in competition, after scoring, to carry out this idea, the fair management paying market price for it and then making a display after it is wrapped, in the refrigerator windows, specially designed for such display.
As Secretary Filcher is noted for his success in exposition matters, there is no doubt that the attendance at the fair this year will be unusually large. He has a band of enthusiastic workers helping him throughout the state, and prestige with the press and other influences which will Watson. After that date at villion, Sacramento.

Butter and Cheese Exhibits
Last year there were a half dozen butter entries and the fifteen large cash awards mostly hung out of reach of our buttermakers. But no effort had been made to secure entries nor supervision given to the department. There are $327 divided in the butter competition with gold and silver medals. The scoring will be done by the old stand-bys, Roussel and McArthur, and a square deal will be given. The fair opens September 2 and all butter for competition should be shipped not later than August 31st. The State Agricultural society will undoubtedly get the market price for the butter on the day of scoring, so that with no entry fee, quotation for butter and magnificent prizes, there should be more than half a dozen entries, at least. The regular cube package is the proper one, tubs not being available since the fire and but little used in this market. The cube package will insure a better price for butter, as it permits it to be cut up with less waste.
In export butter nothing is eligible excepting the commercial tin can, or substitute of equal value. Gold medal and $20 for best; silver medal and $10 for second.
