Two hours before needed drain and cover with boiling water; cook half an hour, drain again and cover with boiling water with a speck of soda and cook slowly until tender. Drain, add salt and pepper, two level tablespoons each of butter and flour and one cup of cream. Let boil up once, then serve. Cream Pie—Mix thoroughly two cups of flour and five tablespoonfuls of butter, then add three tablespoonfuls of sugar and one large egg, which has been thoroughly beaten together previously. Roll an eighth of an inch thick, line two pie tins, prick with a fork and bake a pale brown, then fill with this cream: Two cups milk, two tablespoonfuls of cornstarch, five tablespoonfuls of sugar, yolks of five eggs. Cook together like custard, and when cold cover with meringue made of the whites of five eggs and five tablespoonfuls powdered sugar. Here is a bit of advice, given by Gov. Folk of Missouri in an address before a convention of retail merchants, that may be profitably pondered on by all concerned: "We are proud of our splendid cities, and we want them to increase in wealth and population, and we also want our country towns to grow. We wish to see the city merchants build up, but we also desire the country merchants to prosper. I don't believe in the mail order citizen. If a place is good enough for a man to live in and make his money in, it is good enough for him to spend his money in. No merchant can succeed without advertising in one way or another. The crab sometimes catches a fish, and it catches it without hook and line. It lies in wait, perhaps in some creek, with its jaws extended in front and open. Perhaps a school of killies comes along, and it may be that a killie on the outskirts of the school may swim unsuspectingly along through the clear water between the upper and lower parts of one of the motionless open claws of the crab. In keeping with a partial promise made on his return from the Philippines, William Taft, secretary of war, probably will deliver an address in support of the republican state ticket before the close of the campaign. According to Senator Flint the visit of Secretary Taft will be between Oct. 15 and Nov. 4. Senator Flint has tele-graphed Secretary Taft, reminding him of the promise made, but does not expect a definite reply for a week, as Mr. Taft is not now in Washington.
