Morsels of Gastronomy. The "upper crust" must ever sustain every kind of pie. It may be truly said of Turkish sweet-meats that a little goes a long way. A cheese sandwich is many a man's excuse for half a dozen glasses of beer. Bamboo tips are a delicacy in China, but no schoolboy will credit the fact. Unsophisticated folk suggest feathers in buckwheat oakes to make them light. Hotel "wine jelly" has rarely enough strength to hold the weight of an infant fly. Hot bread continues to make many people believe that they have heart disease. Liver should never be broiled until those who are to eat it are at the breakfast table. With the average Irish cook a "pinch" of salt or a "dash" of pepper means as much as a big hand can hold. Brussels sprouts as a winter vegetable, the greengrocer says, increase in favor among us at a Belgium rate. It has been remarked that he or she who can extract a whole potato from an Irish stew is to be congratulated. Many housekeepers wish there was some arrangement for boiling cauliflower, likewise cabbage, out of doors. The name of daintiness at dinners is serving the sherbet in ice glasses, on the handle of which is a bowl of ribbon. In the "swagger set" they have an idea that ice cream and citron make a good enough combination to go together. Boston is said to be the only place nowadays where they put fish in fish balls. And it still leads in baked beans. Smelts are the desirable breakfast fish just now, and properly fried are a pleasant reminder of the State of Maine. After an epicure has partaken of a salad of oyster crabs he is popularly supposed to be at peace with all mankind. Among the frauds of Parisian cookery are bogus trullies made of pressed clay and calves' fat butter colored with lead. Chinese dragon balls—miniature dragons made of pastry stuffed with forcemeat—are served at some of the fashionable dinners. A "picnic lunch" among business men downtown is "chops and tomato sauce." With this dish goes a huge baked potato. "Good wine needs no bush." Everybody knows that, but roast pork should always be accompanied by apple sauce. Will Give New Hope to the Farmer. Ontario Observer. Anaheim's proposed co-operative beet sugar factory and refinery will, it seems, become a verity, enough stock having already been taken to warrant the organization of the necessary corporation. This will be the first co-operative beet sugar factory ever inaugurated in the United States; and, if it proves a success, will give new hope to the farmer in that it will enable him to share in the benefits which capital now alone derives. This will be the first co-operative best sugar factory ever inaugurated in the United States; and, if it proves a success, will give new hope to the farmer in that it will enable him to share in the benefits which capital now alone derives from the bounty act. Than in the operation of a best sugar factory, the co-operative principle could not be subjected to a severer test. The industry is a new one, and so complex are the manifold manipulations necessary to extract sugar from the beet, that only men of skill and experience are capable of succeeding. The necessary skill, however, can be obtained, and, as there are several long-headed business men back of the enterprise, they will probably make few mistakes. Hopes the Factory Will Be Built. Los Angeles Star. The Anaheim Gazette is wide-awake on the importance of a co-operative sugar factory being built at or near their pretty little town. The editors of THE GAZETTE appreciate the importance of such an enterprise. We sincerely hope the factory will be built. The Country Editor Forty Years Ago. The labors of the editor-in-chief of the little village newspaper forty-five years ago were mostly directed to maintain its little subscription list. Every subscriber was personally known to the editor-in-chief. He name in personal contact with them during court weeks, circuses, militia parades, etc., when they wander into the town and occasionally drop in to pay their subscriptions or make close barter to pay for the same in country produce, including wood, potatoes, turnips, cabbages, etc. The rural readers of that day were a frugal set, and the question of spending a dollar and a half for a newspaper was often a matter of gravest consideration, and frequently required the employment of all the eloquence the editor-in-chief could command to prevent subscribers from stopping their paper when they came to pay their bills. The good old rule prevailed, and was flaunted under the editorial head of the paper, that under the decision of the Postoffice Department "no newspaper could be discontinued until all arrearages are paid." As an illustration of the important labors of the editor-in-chief of that day, I might mention one typical case of a reluctant subscriber, who after trying the paper for six months, brought in a small load of half-rotten wood in payment of the seventy-five cents due for his subscription, and ordered his paper stopped. After much persuasion I succeeded in getting a suspension of judgment on the subject until he should come into town again. When he returned some days thereafter he said that he had consulted the women folk about the matter and they had concluded that they would continue another six months during the winter seasons, "as the papers were convenient for tying up apple batter crocks."—Col. A man may use a wart on the back of his neck for a collar button, ride in the back car until the conductor gets around to save the interest on his money, stop his watch at night to save wear and tear, leave his i's and t's without a dot and cross to save ink, puncture his mother's grave to save corn—but a man of this sort is a gentleman and a scholar compared with the fellow that takes a newspaper and when he is asked to pay for it puts it back in the post office and has it marked "refused." When a man wants his paper stopped he ought to pay up and inform the editor that his paper is no longer wanted. Bill Nye. Professor Coquillett, John Scott, Horticultural Officer of Los Angeles county, Emmett Watson, a large orange grower of Duarte and H. B. Muscott, Horticultural Officer for San Bernardino, have been examining the orange trees of Riverside. After a close inspection of all the trees to which the gas treatment had been applied, no scale of any description was found.
