RITCHEN HINTS. The Only Right Way to Do Things HOW TO PEEL POTATOES. Preparing Crumbs for Chops, Oysters and Cutlets. From the Examiner The right way to do things is always the best, and it is generally also the easiest and quickest, and for these reasons should be no puns, even though it may quite change our accustomed way and take some little pain to unlearn it. But the improvement in the appearance of all cooking, when the ingredients are properly prepared, might well repay us even if the right way were not the easiest. There is no comparison between a vegetable soup in which the vegetables are properly cut if I am leaving fancy cutting sauce, and one where carrots and turnips are haphazard pieces of all sizes and thickness. A busy woman may think she cannot stop to be particular, but I want to show that she will save time by being so. To Cut Vegetables for Soup or to Stew Scrape the carrots as thin as you can, peel turmeric thick as to remove the woody thins, cut them in slices about the same thickness. Make piles of the slices, about 1 inch thick at each pile. If you wish to make a slice after they are cut, use a knife with equal distention. Then be quicker than cutting into any shaped piece. To Peel Potatoes, they should be pressed as thin as possible, as the meaty part lays at under the skin before the peel at one inch below it in your left hand. A small sharp knife in the right turn the potato into your peel it and break the peel as it turns. Take out every eye and spout. Include poil off at once that the potato in the saucerpan and put on the at least with the lower half off to drain. If they have more than three minutes to wait before being served lay a corn dish over them. To Chop Cups, Oysters, Cutlets, etc., it is a very easy process and will not be painful if little care is taken to follow properly. If you can bread crumbs be sure they are crispy and salted, and that you have burdens of them, or an otherwise easy task will be difficult and most likely a failure. To Blanch Almonds—This is a very simple process. Either put the almonds into a potato, pour cold water on them and let it boil, or also put them in a bowl and pour quits boiling water on them. You can do the skins will be loose and slip off easily when squeezed between a course cloth. As you do them into cold water, which keeps them from oiling or becoming discolored.
