Brief communications on current topics are respectfully collected from all parts of the county. HOW THE WIND STIRS UP THE SEA. One of the first things to observe in a storm is the way the wind acts. It does not blow regularly, but in gusts. At one moment it bends over the branches of the trees; in the next it has loosened its hold and let them fly back. We see it swelling into a full puff, a minute later the sails hang flapping as if they had been struck down. We can account for these phenomena and explain the intermittence of the wind puffs by assuming that the molecules of air, displacing each other, excite a vibratory movement, which gives rise to little undulations following one after another at intervals of a few seconds. The resultant of a series of the undulations is a puff of wind which comes on suddenly and is followed by a short hill. A series of puffs constitute a squall, and an aggregation of squalls. HOUSEHOLD HINTS. TAFIOCA CREAM.—Soak a teacupful of tapioca over night in milk. The next day stir into it the yolks of three eggs well beaten and a cupful of sugar. Place a quart of milk on the fire; let it come to the boiling point, and then stir in the tapioca, and let the whole cook until it has thickened; then take it off the fire and stir in the whites of the eggs beaten to a froth. Flavor to taste. A small part of the beaten whites of the eggs can be saved to decorate the top. Stir into the latter a little sugar, put it into a paper funnel, press it out over the top of the pudding according to fancy, and place it in the oven a few minutes to color. STEWED LOBSTER.—Take a small sized lobster and cut it up into very small bits, but do not chop it. Season it with pepper and salt, and a very little cayenne pepper. Mix into it half a teacup of sweet butter, and put it into a stew pan, with two wine glasses of white wine, or if preferred one glass of cider vinegar. Cover the pan tightly and stew it fifteen minutes and serve very hot. Or when the lobster has been seasoned it can be put back into the body shell and covered over the top with sifted bread crumbs, and browned in the oven by putting the shell into a tin plate. Serve it in the shell. PICKLED GRAPES.—Take ripe grapes, remove imperfect and broken ones. Line an earthen jar with grape leaves, then fill with grapes. To two quarts of vinegar allow one pint of white sugar, half an ounce of ground cinnamon and a quarter of an ounce of cloves. Let the vinegar and spices boil for five minutes, then add the sugar. Let it come to a boil and when cold pour over the grapes. If poured on while hot it shrivels them; even if it does not break the skin and spoil the appearance of the pickles. JUMBLES.—Rub a quarter of a pound of butter into half a pound of flour, add the same quantity of moist sugar, half an ounce of ginger, and the grated rind and juice of a lemon. Mix with treacle to a paste, thin enough to spread on tins. Bake in a moderate oven, and when done enough, cut into strings whilst still on the tin, and then roll. Human Hide. The above subject having created considerable discussion in the English newspapers, the Lancet (London) now takes it up and concludes that it would be as well to leave the determination of the question to those whom it principally concerns. We fancy they have no wish to change the custom. As a matter of fact, although it may not appear to be the case, the writer continues, the seat which a woman enjoys on a side-saddle is fully as secure, and not as irksome, as that which a man has to maintain, unless he simply balances himself and does not grip the sides of his horse either with the knee. Jumbles — Rub a quarter of a pound of butter into half a pound of flour, add the same quantity of moist sugar, half an ounce of ginger, and the grated rind and juice of a lemon. Mix with treacle to a paste, then enough to spread on tins. Bake in a moderate oven, and when done enough, cut into strips whilst still on the tin, and then roll each piece round the fingers. The "jumbles" should always be kept in a tin, or they will quickly lose their crispness. Muffins and Eggs — A little less than a quart of sweet milk or water thickened with a little more than a quart of graham poured into a hot muffin pan, baked in a hot oven, make what we consider good eggs. An partial to food that may be well prepared without soda, as I fear it will cause the teeth to decay. Do you all know that eggs are nice baked in a buttered tin or spider? Of course you all know how nice popovers are. Delicious Cream Cakes — Made without butter or lard. I take one heaping teaspoonful of the Hoeford Baking Powder Phosphate and sift it into one pint of flour and make a soft dough with some of the thin creamy sour milk out of the bottom of the cream jar. Roll very thin, have a hot fire ready and they will bake in five minutes. Will be sweet, crisp, dainty and delicious, and any dyspeptic can eat his fill with no bad feeling afterward. Apple Snow — Boil six apples, press them through a sieve, adding leaf sugar and a little lemon juice. Whisk the whites of six eggs, powdering them during the time with two tablespoonfuls of castor sugar. Beat the apple to a froth, then add the whites of the eggs and whisk them well together until quite stiff and like snow. Pile them high in round spoonfuls on a glass dish, rising to a point in the center. Too Much Sugar. A mother often complains that her child is troubled greatly with a sour stomach, but this case is no longer mysterious when the mother, to quiet the little one, so that she can continue her account of the case, sets down before her a little dish of sugar, from which the child may help itself. Most mothers would give candy or a cookie instead, though some feed their children humps of sugar from the bowl, believing that the children need sugar, and might better have it in that form than in any other. In any case of this kind there is a very frequent call for water. Do you know how vinegar is made? You can get plenty of it by simply mixing sugar or molasses with water and keeping it warm. It is curious to note the different ways in which the legs of men who pass much time in the saddle are affected. Riding with a straight leg and a long stirrup almost invariably produces what are popularly called knock-knees. Nearly all the soldiers of the British army suffer from this deformity, as any one who will take the trouble to notice the men of the Life Guards and Blues walking may satisfy himself. On the other hand, riding with a short stirrup produces bowed legs. Jockeys, grooms and most hunting men who ride very frequently are more or less bow-legged. The long-stirrup rider grips the horse with his knee, while the short-stirrup rider grips him with the inner part of the leg below the knee. This difference of action explains the difference of result. No deformity necessarily follows the use of the side saddle if the precaution be taken with growing girls to change sides on alternate days, riding on the left side one day and on the right the next. The purpose of this change is to counteract the tendency to lean over to the side opposite that on which the leg is swung. Professor to class in surgery: "The right leg of the patient, as you see, is shorter than the left, in consequence of which he limps. Now, what would you do in a case of this kind?" Chicago, Oct. 20 — Elizabeth Pierce, 77 years of age, arrived at Cleveland, O., last night from Erie, Pa. She walked all the way from Holton, Me., to Erie, Pa., fully 1,000 miles, being, she says, too poor to pay her fare on the cars. She was passed to Delaware, O., her destination, the birthplace and home of her son who was too poor to aid her even had he known she was coming. Her husband recently died in Maine and she says she wanted to finish her life in Delaware. In her basket she carried a large Bible and made a practice of reading by the roadside for help. It took her eight weeks to make the journey. "He that prays harm for his neighbor, begs a curse upon himself." Men told me the proprietors did most of the work on these hides with their own hands. There are plenty of men who could tell all about this, but they don't care."
