A RESPONSE TO "B" Editor GAZETTE: The effusion of "B" from Orange would not receive a notice, for it is in answer to nothing ever said or written by me, had he not gone out of his way to say that it was "unneeded by a lifelong communication by R. W. Scott." There are five points in "B": it's very able and evocative epistle worthy of notice, however, only for variety's sake; not that it throws any light upon the water question whatever. In the first place, I am always at a great loss in answering any man who is assumed of his own productions. I claim that everyone dealing with a public question should favor his own offspring if he has no poor opinion of his own squabs as to be a channel to append his name discreto, what must be that of an exasperating public? There is one thing that "B" is seriously affected with, that is lawyers. I was not aware until reading his little piece that law you never became a disease so severe as to break in upon a fellow, except on his pocket; but really of "B" was lairing under the slightest intisposition, and his medical adviser familiarized himself with "B". On occasion of the Sullent, he would unhastily promote it to a clear case of incurable lawyer all over. The poor fellow's mean mind is so severely affected, and should also presidents or lawyers some this way. I would advise them to give him a wide berth. I fearful the yellow is a little cramy. It makes pernular rains to impress the fact that he is not a lawyer or giving the counsel of lawyers. Now, surely that was thrown in so presently to fill up for it is hardly presentable that the vicious fool in the community would throw a stone at "B"; go wanted to hit a lawyer or even the son of a lawyer. Now, as regards "B", law upon the subject of taking the water and dying it within one's own calling and want it alone is not only the process but the entire civilized world will call upon it gratuitously for the far advanced thought. But will "B" please tell us how fermenting white wines. St. Houston Star At the late convention of the State Vittual Cultural Commission, held to San Francisco, President Haraszty, in his lecture on the very important subject of fermentation, advised wine makers to ferment white wines on the hulls or skins, in the same manner as red wines. While I have no desire to take issue with that gentleman, so far as the general tenor of his speech is concerned, I feel it my duty to warn wine makers, and especially new beginners, to be cautious how they follow Mr. H.'s advice in the matter of the fermentation of white wines from white grapes. Practical wine makers, men who have been engaged in this business, in this country, for a number of years, do not need this warning; their deadly bought experience has taught them a lesson that they are not likely to learn. White wines fermented on the hulls contain precisely the same elements and have the same inherent properties which characterize charter or real wines, and so far as taste is concerned differ only in color. Dry white wine is sold屡用 as a table wine. It is drank mostly between meals, frequently on an empty stomach, and being comparatively free from tannin or other ingestant properties, is a cooling and grateful beverage, and perfectly harmless if like all other good gifts of a beneficent creator, it is used with moderation. But the greatest objection to a white wine fermented on the skins is its tendency to remain cold, and the impossibility at ever clearing it so as to be fit for market. Charlet is essentially a table wine, and should be used only while eating. Its astrological position as a tonic assists digestion and gently stimulates and invigorates the whole system. In crushing white grapes the juice (must) should be pumped into an open tank, the pulp pouring pressed, and the most extracted from the non-use also placed in the INVESTMENTS Correspondence Solicited. The point thereon made is worthy the attention of those who have been trailing the variety mentioned. In the last Vivicultural Convention held in San Francisco some opinions on vines and wines were uttered which are likely to lead into error many people who begin to plant vineyards and know little or nothing of the business. Some of the speakers put a great stress on the good qualities of those vines which are grown in their own vineyards, or in their neighborhood, passing an absolutely unfavorable verdict on other vines because in their vineyards they do not succeed, and the wine consequently is bad. One of the speakers went so far as to say that the Black Malvosis was a pest in a vineyard; it was like a beeding in a room of a hotel. Now, I would like to know how the speaker can substitute such sanderous language against the Black Malvosis? Perhaps I can account for the anatomy of some wine growers to the Black Malvosis by relating a little incident. Last year one of my friends applied to a wine dealer in San Francisco for one or two barrels of Black Malvosis. Well, the wine came in due time, and great was the wonder of my friend when he tasted it. It was not drinkable and smelled of rats, viz., like a liquid into which had fallen and died rats or SOUTHERN PACIFIC R. H. The failure of the crop is owing to drought. A Reform School. The following petition will be presented to the Board of Supervisors at their next meeting: We, the undersigned citizens of Los Angeles county, regretting yet realizing the fact that there are numbers of boys under the age of 16 years, infesting our county, who, on account of continued bad associations, are daily becoming hardened in vice and crime; and believing that the confinement of such boys in our county jail in company with criminals of mature depravity, who teach them new vices and incite them to new infractions of the law after their liberation, operates greatly against the advancement of our county and against the reputation of our community for peace and quiet, we think a necessity exists for the institution of a reform school where such boys can be confined and made to do honest labor. Therefore your petitioners pray that your honorable body take such steps as may be necessary for the establishment of a reform school for the county of Los Angeles, where in children of vicious dispositions may be confined and subjected to such discipline as shall insure their correction. Public sentiment will sustain the Supervisors in expending a liberal/amount of money in establishing an institution such as is described in the petition. An old settler in southern California says the impression that the cost of living is higher there than in the Eastern States is erroneous. "You can get a meal here, and a good one, too." he says, "for ten cents. Meat is high, and sells for 15% to 25 cents a pound, but people don't need much in this climate. Everybody lives on fruit. Our grapes that you pay fifty cents a pound for we get for two cents a pound. The best hotels in the large towns only charge $3 a day." — New York Sun. West Andover, Ashtabula county, Ohio, is said to have the largest creamery in the world. It works up the milk of 1,500 cows daily. GAZETTE. MEMBER 29, 1883. NO. 51 WHITE WINES. PHASES OF CRIME. Some of the Brutal Deeds Which Daily Occur. A foul murder was committed on Bath street last night, about 11 o'clock. Pasqual Martinez was the victim. He was in the house of Ormada Amens. The letter came in and said "What is going on here? I want you to get out!" Pasqual said, "Put me out, if you are a man," Amento says. "Yes; I will." Whereupon he seized an axe and h' Pasqual on the neck, which knocked him down, and white down hit him twice with the same implement. Amento then seized him by the leg and dragged him about twenty feet from the door, where he was still lying dead, wittering in a pool of blood, at one o'clock it is morning. When a reporter of the Times visited the body, the dead man was still lying there in the open street, on his hands and face, two hours after the murder was committed. Ormada Amento, the murderer, was arrested and taken to jail—Los Angeles or Dimes, September 24. HANFORD (Colusa Co.), September 22—Samuel C. Johnson was shot by his son-in-law, J. W. Marriott, yesterday morning Johnson died last night. It is claimed that the cause was some family trouble. The community condemns Marriott's act as unjustifiable and are deeply stirred by it. Marriott, it is alleged, made a base charge against Johnson, which none of the many friends of the latter believe to be true. Marriott is in jail at Visalia. Chico, Cal., September 24—Darn & Sprague, farming the C. L. Wilson peace near North, whale on their way to Chicago, at about 6 o'clock this morning, found their foreman, William James, at the gate to the ranch in a dying condition. No blood or abuse could be seen. Mr. Darn, asking him "Bill, what's the matter?" he simply replied, "Crumps, cramps." Darn, asking again, "How have you been here?" Answer, "Only since five." That was all James said. He was brought to Chico, but at the moment. The Mountain Fires. On Saturday last fire broke out in the Higgins canyon between Monte Vista and Santa Mina, and swept into Franklin canyon, where it seemed to gather new strength and leaped over into Coldwater canyon, where it swept everywhere before it and only stopped when it reached the crest of the mountains above the canyon ranch of Mr. E.W. Doss: No raping was the spread of the fire that it was not possible to save the property that lay in its path. One of the most serious sufferers was Mr. N. Levering, who lost 176 stands of bees, honey house, barn and hay, and moveable property to tools and implements. Fortunately he had removed his bees to another canyon before the fire. Mr. Rimer, a new comer in the district, lost fifty-five stands of bees. Exposing our house to be destroyed, he removed his household goods out doors, when a change of the wind swept the fire away from the order and into the household effects, burning all the grapes. Mr. Rimer mounted a horse on a dugged through the fire, giving too hot to touch homes, and being badly sequestered for this time. His house was also badly burned. A big was pocketed out was set loose to the locus live and rushed into the flames to let its fire and raked pig in short motion. Mr. Rimer saved about 3,000 pounds of homes, but lost his honey house and all his bones. Mrs. Tullis fleet over the mountains into the San Fernando valley to escape from the fire which never left from coming out of the swamp. The fire was terribly fierce but only the leaves and brush, but long times and heavy vegetables mold in the soil this issue of the most destructive mountain fires in America, and should a bison wash who lives in the mountains to keep clear of sparse around their buildings and roosts. A terrible incident in the beach yesterday near Santa Agua canyons in the The Grape Core. The Florida Department contains the following regarding the grape cure, of which so much has been written: The ancients and protected the value of the grape as a cure for any disease, acting strongly upon the killsmen, helping ingestion, and some serious need to restrain it. For their development this afternoon the authorities resisted Sullivan, who it is stated, had a knife in his possession covered with blood. A Corner's inquiry was held but nothing definite was developed. Decased, it is said, was Past Grand of Grifley Lodge 100 F. He has a wife and child residing here and one brother. Fagan and Sullivan will have an examination this week. Stockton, September 22—John Dietrich, a painter by trade, and a worthy man, saving a wife and child, was shot dead in the presence of his wife by a named Turcott, an earlier survivor. Turcott, with two companions, passed down the street and seeing Mrs. Dietrich stand at the door of her house, made an insult remark about her. As the three men were on their way back Mrs. Dietrich said to her husband, who in the meantime had arrived "That is the man who insulted me," pointing to Turcott. Dietrich advanced oak into what he mounts when Turcott arrives arryver and shot him dead. The terrified wife pursued the murderer, who fled, but was quickly captured by a police officer. Turcott was placed in jail just in time to escape lynching by the crowd, which rapidly assembled. The two companions of Turcott have also been captured. Somerville, S.C., September 21—Yesterday a negro in the upper part of this county outraged a white girl, Bettie Dixon, 12 years of age. A sister of the victim, in trying to protect her, was stabbed by the negro, but not fatally. Last night a party of citizens took the negro, tied him to a tree, shot him, and then beat him to a jelly and left him. St Louis, Sept. 21—Just before the close of the performance at the Alhambra Varnet Theater, in St. Charles street last night Richard Whalen, a young man of about 20 years, fired a shot from a revolver at Carrie Hart, or Howard I, one of the actresses of the place, and then blew his own brains out. Whalen, who was a salesman traveling for Broderick & Bosum of this city, was said to be "mashed" on the Howard girl, and shot at her because she would not accept a present from him; but another story is that he was close to her life and rushed into the lines to buy a raised pig in short time. Mr. Fallis died over the mountains into the North Penygala valley to escape from the fire when not off from contact out of the city. The fire was terribly fierce burning not only the leaves and brush, but largely new vegetable plants in the south soil is one of the most destructive mountain trees in the state and should allow people who live in the mountains to keep clear around their buildings and homes. A terrible incident in the early yesterday near New Salva Aguilera town in the Secura Malawi Township lies among the flames and sent them up the mountain side in a vigorous runner, but when the smoke reached the summit it was kein upper current from the north brought it keen on the upper air directly in the opposite direction to the sea breeze and filled the whole heavens with a yellow gloom. The Florida Department contains the following regarding the grape cure, of which so much has been written: The ancients and protected the value of the grape as a cure for any disease, acting strongly upon the killers' help ingestion, and some serious need to restrain it.
