HOUSEHOLD HINTS.
WINE CAKES: Been to a light cream one cup of butter and two cups of powdered sugar; add the beaten yolks of four eggs and half a glass of almond milk; stir until very light. Add half a handful of cream, with a small teaspoonful of soda starch stirred in it, notting and almost flaxseed heat well together, then stir in quicky the beaten whites of the egg and three capsules of prepared flour. Bake shall an hour in a quick oven.
LETA PUDDING: One large coconut grated and the milk; eight large lime potatoes, boiled and mashed smoothly; three pints of milk; one nutmeg; one gill of rum or brandy; a hump of batter the size of an egg; one pound and a quarter of sugar; six eggs. Take the whites of the eggs and half the sugar, whip them up well and put on the top of the pudding after it is done, returning it then to the oven to brown. Bake about two hours.
FARINA GRIDDED CAKES: Four tablespoons of tallow; swell it with one part of boiling water and let it stand over night. In this morning add energy milk to make a thin batter; beat gradually with the farina.
STRANGE EXPERIENCE OF A RECOVERED LUNATIC.
I was once insane, and I often muse over my experience. There are, of course, many kinds of insanity: Some mental disorders take place so gradually that even the closest companions of the victim are at a loss to remember when the trouble began. It must have been this way in my case: One evening, after an oppressively warm day—a day when I experienced more fatigue from the heat than ever before or since, I sat on my peach-fanning myself. "This arm that is now motion," I mused, "must one of these days be lost." I wonder how long the time will be? Then I mused upon the evidence I had of immortality. I could do things than other people could not accomplish. I had gone through battle after battle, and though bullets sang and strummed me thick as bad, yet I remained uninjured. I had passed through epilepsy yellow fever. My idea gained strength as I moused; and I was convinced that I should live for ever. No, this cannot be; for death follows all men alike. Yes, I want to like other men, and I believe that it is my duty to make the most of life; to make money, and enjoy myself, and to educate my children. I wanted to be rich, and I began to study over an imaginary list of enterprises. At last I hit upon radishes. People must have radishes. They should be in every store. They could be dried and sold in winter. I would plant yucca with radish seed, and people all over the country would refer to me as the "radish king." I would form a radish syndicate and buy up all the radishes and travel around and admire them. I hastened to the house to tell my wife that she was soon to be a radish queen. At the breakfast table I said, "Julia, how would you like to be a radish queen?"
"A what?" she exclaimed.
I explained my plan of acquiring great wealth, and during the recital she acted curiously that I was alarmed. I feared that she was losing her mind. Finally she seemed to understand. She agreed with me, but told me not to say anything more about it. After breakfast I saw her talking earnestly with her father, and I knew that she was

FARINA GRIDDLE CAKES — Four tablespoons of farina, a doll with one part of beating water and let it stand over night. In the morning add energy milk to make a thin batter; beat gradually with the farinam add to the batter two or three well heated eggs, salt and one tablespoonful of melted butter. When the ingredients are well blended together stir in prepared flour to make a batter of the right consistency. Bake at once on a hot griddle.
ROAST PIECON — Rake the skin from the breast bones of the pageos; make a small quantity of finely flavored dressing and stuff it between the skin and flesh; tasten some thin slices of bread over the breasts of the birds, put them in a drapping pen with a little water, season with pepper, salt and minced parsley; dredge with flour; when done, remove the lace. Set them around the edge of a heated platter; fill the center with green peas, and serve.
HOCKLEBERRY PUDDING — One quart of ripe fresh huckleberry or blueberries; half a teaspoonful of mace or nutmeg; three eggs well beaten, separately; two capfuls of sugar tour large teaspoonfuls of butter, one cupful of sweet milk; one pint of flour, two teaspoonfuls of baking powder. Roll the berries well in the flour, and add them last of all. Roll half an hour and serve with sauce. There is no more delicate and delicious pudding than this.
POTATO SALAD — Bead some good Irish potatoes and celery root. When cooked cut the potatoes and celery into thin slices and add to the a teaspoonful of chopped parsley, a teaspoonful of finely minced onion, pepper and salt, all halts a cupful of olive oil, half a cupful of warm stock and a wineglass of vinegar. Mix together carefully, set it on the icebox, and when cold serve on lettuce leaves. Make the salad while the potatoes are hot. A good salad cannot be made with cold boiled potatoes.
OMELLETTE SOUFFLE LA MINCIT — Take seven fresh eggs, separate the winters from the yeaks, put the latter in a deep dish with three tablespoonfuls of powdered sugar; work it to a still batter, add a little rose water; beat the whites to a team and mix all together. Take a good sized dry pan, put in it two tablespoonfuls of butter; as soon as melted pour in the eggs; shake the pan as for an ordinary omelette. As soon as it colors a little on the outside, roll out in a dish, sift pulverized sugar over and send to the table. Omellette should be served the instant they are cooked.
MACARONIA UITALIANNE — Cut a chicken into joints and stew or fry it. In either case make a creamy gravy. Bead a large handful of macaroni in salted boiling water until it begins to swell, then pour off the water. After pouring off the water, cover the macaroni with milk. Season nicely with pepper and salt and throw in a large onion, peeled. Let it boil until tender, then drain it well. Arrange the chicken in the center of a hot platter, and make a border around it of macaroni; pour the cream gravy over all, and serve at once.

If she has allowed herself to get into a groove with her menus, and it is said that all housewives do more or less fall into a groove of articles of diet, she has now a chance to emancipate herself from the rut. Fruit and berries now abound in production and variety, and can be used fresh without additional ingredients or as bases of numberless recipes. Instead of buying meat in the warm season, every housekeeper will purchase a generous supply of fruit, if possible.
ASPARAGUS PICKLED — Cut in pieces and wash the green heads of the largest asparagus, let them be two or three hours in cold water. Scall them carefully in salt and water, then let them lie on a wet cloth to cool. Make a pickle according to the quantity of the asparagus of white wine vinegar and salt and boil it. To a gallon of pickle put two nutmegs, one quarter ounce of mace and the same of whole white pepper corns and pour the pickle hot over the asparagus; cover the jar closely and let it stand a week; then bail the pickle and pour over them again; after a third boiling, when entirely cold, seal up closely and put away in a cool, dry place.
An Important Piece of Advice.
Few readers can be aware until they have had occasion to test the fact how much pain and expense is often saved by an early attention to any slight bodily affliction. In this connection it would be well to explain by way of illustration that any irritation of the skin or symptoms of Piles should command immediate attention and an immediate application of Swaine's quotient otherwise it might develop into something more than supernatural.
