Brief communications on current topics are respectfully solicited from all parts of the county. HOUSEHOLD HINTS. Crisp crackers in the oven to serve with soup. Good soups about this time are a purse of artichoke, cream of asparagus and turtle. The second, made of the early vegetable, is a delicious overture to the most fashionable diurner. A fine section of dessert in the shape of corn starch cake can be made by using one and a half cups each of sugar and sifted flour; one half cup each of butter, sweet milk and corn starch; two even teaspoonfuls of baking powder; whites of six eggs; flavor to taste. Corn pone is highly recommended as a breakfast dish. Take one heaping coffee cup of boiled hominy, heat it, and stir in a tablespoonful of butter, three eggs, and nearly one pint of sweet milk; as much corn meal may be added as will serve to thicken this till it is like the batter for "pohnny-cake." Bake in a quick oven, and serve hot. SCIENCE ON SORGHUM. No subject connected with our agricultural resources is to us of greater national importance at the present time than that of sorghum. This to many may secure stronger statement than truth will was and sorghum has become to some degree a sort of by-word, for though largely unassessed in the present and Northwestern States, and producing annually a return worth about $8,000,000, still it has confessedly failed to do what was expected of it. Somewhere about thirty years ago the Chinese variety of the plant (the varieties are numerous) was introduced into this country, and the excitement in relation to it was not small. Its sugar producing qualities were extolled above measure; our sugar trade was to be revolutionized, so to speak; every farmer was to have a little mill, and a little kettle, and he was not only to boil out his own sugar, but to supply his least fortunate neighbors. Some way, however, things did not seem to work right. The sugar no doubt was in the sorghum cane, for when its juice was boiled down a sweet syrup was obtained, but there the demonstration stopped. The sugar was in the syrup, but it most persistently refused to come out of the syrup; it could not be induced to crystallize; and though the syrup had a certain degree of value, yet it was not the thing wanted, and in the dispointment the popular feeling swung round to the unjust judgment of condemning sorghum, simply because it had been the victim of ignorance and mismanagement. Such utter and merciless carelessness and negligence prevailed in the treatment of the plant; that even the syrup was often nearly spoiled, and had a nauseous, disgusting "burnt pumpkin" flavor which could not fail to bring it into disgrace, and must justly so for itself, but not just so for the plant from which it was derived. Recent researches however have done much toward explaining and removing the difficulties which have been in the way of successfully crystallizing the sugar from the juice of the sorghum. Part of this has been accomplished by work in the laboratory and part by work in the field, the millet, the boiling house, etc., and they together have shown that the statement made above of the "national importance" of sorghum is not an exaggeration. It is entitled "Investigation of the Saturation and Economic Relations of the Sorghum Sugar Industry: being a Report made in Response to a Request from the Hon. George B Loring, U.S. Commissioner of Science on Sorghum." A fine section of dessert in the shape of corn starch cake can be made by using one and a half cups each of sugar and sifted flour; one half cup each of butter, sweet milk and corn starch; two even teaspoonfuls of baking powder; whites of six eggs; flavor to taste. Nice little tea cakes, to be baked in muffin rings, are made of one cup of sugar, two eggs, one cup and a half of milk, one heap ing teaspoonful of baking powder, a piece of butter the size of an egg, and flour enough to make a stiff batter. In this batter, stir a pint bowl full of fruit currants are mixed fresh berries in their season, and even canned ones, with the juice drained off. Serve while warm, and they are a delight addition to the tea table. There is nothing more palatable than steamed brown bread, and it is easily made. Take one quart of sweet milk or milk that is just turning; one teaspoon salt, four teaspoons cornmeal, three cups rye flour, wheat flour will answer if you have no rye—one half a cup of molasses, one heaping teaspoonful soda. Half the quantity will be sufficient for a small family. The whole recipe should be steamed three hours, or it can be steamed two hours and baked one. To make rice cream, boil two ounces of fine rice in water for five minutes, strain it and boil until tender in a quart of new milk. Rub the rice through a sieve to a pulp and add to it any milk not absorbed in the boiling; one-half ounce of gelatine to a point of the rice and milk. The gelatine can be soaked or dissolved either in milk or water. Stir over the fire until mixed, sweeten and flavor to taste. Stir the cream occasionally until cold, then lightly mix in the whites of two eggs beaten to a strong froth; when on the point of setting, put it in a mold. A table-spoonful of brandy is an improvement. The most sensible recipe for beef a la mode is as follows: Take three pounds of fresh beef, remoe all the fat and gristle; mix some cloves, masse, allspice, black pepper and a little cayenne with a little less than a pint of vinegar, the quantity of space to be determined by your taste a table-spoonful of each, with the exception of the cayenne, is the usual allowance a half of a teaspoonful of cayenne is sufficient. Put the meat in a porcelain kettle, and pour the vinegar and spices over it, and a pint of soup stock. It is considered by some cooks a great addition to cut thin slices of bacon and lay them over the meat. Cover the kettle, and let the beef cook slowly till perfectly tender. This may be served cold or hot, and with vegetables or without. Following is a reliable receipt for French breakfast rolls: One pint of sweet milk heated almost to the boiling point, half a cup of butter, a third of a cup of sugar, one cup of yeast. Let the milk cool so that it will not scald the yeast, and yet be more than lukewarm. Stir the yeast and sugar in it, and with the flour make a light sponge. When it has risen for the first time knead the butter into it; let it rise again, and then cut it in strips and roll in proper shapes, or cut it in round cakes and batter one half of the top and double the cake over, a la baker's rolls. If started the night before and allowed to rise the last time an hour before breakfast, the time will be sufficient to insure delicious rolls. The oven should be hot, and from fifteen to twenty minutes will serve to bake them. The report presented by a committee of the National Academy of Sciences in 1882 has just been published as a Senate document. It is entitled "Investigation of the Nutritive and Economic Relations of the Sorghum Sugar Industry; being a Report made in Response to a Request from the Hon. George R. Loring, U.S. Commissioner of Agriculture. The committee consists of Prof. Bremer of Yale, Prof. Chandler of Columbia, Prof. Johnson of Yale, Prof. Salman of Yale, Prof. Smith of Louisville, and Dr. G. E. Moore of New York. The report shows clearly that essentially the two points on which success depends are maturity of the case, and prompt correctness in working. With these sugar from a hold of sorghum can be as surely and safely expected as from a like field of sugar cane, and with perhaps truly as great a return. The immense possibilities which such a revolution opens for the future sugar crop of the United States must be discussed at another time—Scotland American. Why Cochineal and Carmine are so Costly. The Ironmonger, London, explains why the beauty occurred and carmine colors are so expensive. It says: One of the best and most powerful animal dyes used in the arts and manufactures is the body of the female cochineal insect, dried from its nasetex on a species ofactus,and when alive is about the size of a ladybird,或 perhaps a trille smaller.It is wingless,rather long,equally broad all over,and is marked behind with deep menses and wrinkles.It has six feet which can curiously enough are only use directly after birth,and secures itself to the plant by means of a trunk which is found between the fore feet,and derives its nourishment from the sap.The male cochineal is like the female only during the larva period.It changes into chrysalis,and eventually appears as red flies.The female deposits some thousandsof eggs,the she protects under her body until they are hatched,and on the appearance ofthe young ones the parent dies.While the young are in the larva state their sex cannot be determined.They lose their skins several times,and while the female fixes herself on the plant,the male,after getting overthe pupa state.is winged.Two or three months is the extent ofthe lifeof these little insects They are gathered before they lay eggs,and are then rich in coloring matter. The recent prize fight between Ryan and Sullivan, while it should receive the emphatic denunciation of every law-loving citizen, was in many respects a most remarkable encounter. Although a mere boy, Sullivan is probably the most formidable pugsthat ever known. Ryan is also a powerful man but he entered the ring suffering terribly from piles and was there re-in no condition to fight. Had he used Swayne's Ointment the result might have been reversed.
