HOUSEHOLD HINTS.
TAPIoca Meringue.—Two cups of tapioca; soak in the milk or water over night; in the morning put it on to boil, adding a little milk at a time until it becomes of the consistency of cream; add yelks of five eggs; sweeten to taste; flavor delicately; when cold cover with a meringue made of the whites of eggs.
Chicken Soup.—Roast or bake a chicken until turning brown; put it in a soup-kettle with three pints of water, and set it on a slow fire, skim off the scum; add a middling-sized onion a little celery, and simmer.
BEECHER ON GRAIN CORNERS.
New York, Dec. 16.—Rev. Henry Ward Beecher appeared before the Senate Committee on Grain Corners to-day. He said that if any man could buy all the wheat in the country, and so starve the people, he would be a criminal of the deepest dye. He thought the species of gambling carried on by merchants was far less injurious upon the public morals than are the effects produced by church fairs and religious lotteries. He had been a minister of the gospel for forty-five years, "and I hold," he said, "that a man with a long head possesses advantages over his neighbors in speculations, but on that account these speculations should not be counted immoral. I regard the age in which we live as an age of combinations. I think it is part of my profession to deal in futures. There are two ways of dealing in futures—one in realities, the other in risks and chance. A man may sell what does not exist. One, two or twenty men may have looked ahead and been sufficiently sagacious to prophesy what would come to pass in the future and were right in their conjectures, and thereby reap a profit. I cannot see that such actions are illegitimate. There is little danger of famine in this country. If you ask me the gospel side of the subject, you are all wrong from top to bottom of society. Supply and demand are minor principles which regulate prices; the law of prices is the law of brain value; the finest silk dress

Excelsior Fruit Cake.—One cup of sugar, one of butter, one of flour, ten eggs, beat the yelks, sugar, and butter together; beat the whites separately. One-half pound citron, one pound English currants, one pound raisins, one ounce mace, one ounce cinnamon, one ounce cloves. Bake in a slow oven two hours.
Quince Cheese.—Pare the quinces and cut into quarters, removing the core; put them in a stewpan, with a little cider or water, and an equal weight of sugar; boil until they are mashed up and look clear; pour them into a jelly-bag. The juice will make an excellent jelly; what remains in the bag, pressed into jars, a thick and first-rate cheese for dessert.
Potato Puffs.—Take cold roast meat—beef, mutton, or ham and veal together—clean of gristle, cut small and season with pepper and salt, also cut pickles if liked; boil and mash some potatoes, make them into a paste with an egg, and roll out dredging with flour; cut round with a saucer; put some of the seasoned meat upon one half and fold the other like a puff, pinch neatly and fry a light brown.
Buttermilk Graham Cakes.—Take three cups of rich buttermilk; add to it one teaspoonful of soda, dissolved in hot water, mix with it one large handful of bolted flour and enough Graham flour to make it as stiff as griddle-cakes, put in a pinch of salt and one egg thoroughly beaten. Put a "gem" pan on the stove and heat it very hot; butter the apertures and turn in the batter; then bake in hot oven for twenty minutes. These are more delicious than cakes raised with yeast.

To a railroad company my place in Peekskill might not be worth ten dollars, to me it is worth ten thousand dollars. Money making in Wall street is an illusion. I have read more about Vanderbilt and Gould than they would ever read about me. I once bought a number of Panama shares and paid $100 a share for them. I was glad to get them, but when I sold them out at $100 a share, I was glad to get rid of them. That is all I know of stock speculation." In the course of his testimony, speaking of public morals and bribery, the witness said: "There was George Washington. He could not be bribed, but he swore like a trooper."
Vermont is about to take a new departure in taxation by assessing upon corporations within her borders the entire amount required to pay the expenses of the State Government. Railroads are to be taxed at the rate of 2 per cent. on earnings of $2,000 per mile of road, or on earnings of less than that sum; 3 per cent. on $3,000; 4 per cent. on $4,000, and 5 per cent. on $5,000 and over. Insurance companies will be taxed 2 per cent. per annum on the gross amount of premiums and assessments collected within the State, and one-half of 1 per cent. on all surplus over the legal reserve. Savings banks and trust companies will be required to pay 1½ per cent. on the average amount of deposits and accumulations. Express, telegraph and telephone companies will be assessed 3

BREAKFAST CAKES.—The requisites are two pounds of flour, four eggs, a pound and a half of butter, some ginger, caraway seeds, citron, half a pint of cream, some milk and a little yeast. Mix the butter with the flour, beat up the eggs, add the cream, put ginger, caraway seed, and citron to taste, then three teaspoonfuls of yeast and milk enough to make it of a right thickness. Beat all thoroughly together with a spoon, set it before the fire to rise, and when it has risen, drop it in cakes upon tins and bake them.
The Preservation of Lemon Juice.
A correspondent in Mem. de Med. et de Pharm. Milit. says, after various experiments and the test of eight months' exposure to the sun and heat of summer, he has come to the following conclusion: "Heating the juice or adding alcohol to the same would appear to be superfluous, as it is only necessary to filter it and keep it in sealed bottles; however, since filtration proceeds so very slowly, the best way is perhaps to add 10 per cent. of alcohol to the fresh juice, and bottle.
The Pharmaceutical Journal observes that it may be preserved without the addition of alcohol by heating it to 150 degrees F., and then excluding it from the air by carefully closing the full bottles at this temperature. The operation should be carried out in winter."
There was a liberal use of cider in Lyndonville, N. Y., lately that even prohibitionists will approve. A factory was ablaze, no water was at hand, and one thousand gallons of apple juice was taken from neighboring tanks and used to quench the flames. It has been known for some time in New Jersey that apple juice was a sure extinguisher; but the use to which the primary form of that gentle beverage was put in Lyndonville is novel.
A Neat Little Trick.
"Darling," she said, encircling his neck with a pair of plump arms, "Spring is here and I want a new bonnet unutterably bad." "New bonnet," replied the brute; "blank the new bonnet—no Spring toggery this year. I'm expecting a heavy bill, on account of the billiousness of those two children. Chapman, No. 3 Commercial street, in the City of Los Angeles, County of Los Angeles, all the right, title interest and estate of the said Conrad Kuhel at the time of his death, and all the right, title and interest that the said estate has, by operation of law or otherwise, acquired other than or in addition to that of the said Conrad Kuhel at the time of his death, in and to all those certain lots, pieces or parcels of land, situate, lying, and being in the said County of Los Angeles, State of California, and bounded and described as follows, to wit:
Lot (5) five in Block H; and Lots two (2), three (3), four (4), seven (2), eight (5), nine (10), in Block D; and also the whole of Blocks C and F; as the same appear and are designated on a plat, map or diagram of vineyard lot D.3, in the town of Anaheim, attached to a deed from Old Bergson et al to John Fischer; a Administrator of the estate of Conrad Kuchel, deceased, filed for record in the Recorder's office of Los Angeles County, May 5th, 1875; and also the rest half (1) of building lot No. 50, as the same appears on the map of the lands of Anaheim.
Terms and conditions of sale: Cash in gold coin of the United States, ten per cent. of the purchase money to be paid on the day of sale balance on confirmation of sale by said Superior Court. Deed at expense of purchaser. Bids or offers may be made at any time after the first publication of this notice and before the making of the sale. All bids or offers must be in writing and left at the office of Robert H. Chapman, Attorney at Law, or delivered to the undersigned in the City of Los Angeles.

NOTICE IS HEREBY GIVEN TO THE SHAREHOLDERS in the Anaheim Water Company, and to all parties interested that at a meeting of the Board of Directors held on Saturday, November 24th, 1882, an assessment No. 21 of three dollars $83.0) a share on the capital stock of said Company was leaved, payable immediately to the Secretary at his office in Los Angeles Street, Anaheim.
And it is further ordered that any stock upon which assessment remains unpaid on the 27th day of December, 1882, shall be deemed delinquent and will be duly advertised for sale at public auction, and unless payment shall have been made before, will be sold on The 13th day of January, 1883,
to pay the delinquent assessments together with costs of advertising and expenses of sale.
