HOUSEHOLD HINTS.
Pot-Overs.—One cup of milk, one cup of flour, one egg, a little salt. This will make one dozen cakes, one tablespoonful to each patty pan. Bake in hot oven.
PICKLED GRAPES.—Fill a jar with alternate layers of sugar and bunches of nice grapes just ripe and freshly gathered; all one-third full of good cold vinegar and cover tightly.
POTATO RISSOLLES.—Mash potatoes, salt and pepper to taste. Roll the potatoes into small balls, cover them.
THANKSGIVING PROCLAMATION.
Governor George C. Perkins has issued the following proclamation:
The observance of one day in the year as a day of thanksgiving, rest and recreation, is now recognized as a national custom. It is the annual Sabbath of the American nation, on which occasion all men of all beliefs and creeds may congregate around the altars of their respective faiths, and render grateful thanks to the Giver of all good for the blessings he has bestowed upon us as a people, for the rights which civil liberty has given us, and for our unimpaired enjoyment of religious freedom.
In accordance with the proclamation of the President of the United States, and in full harmony with his sentiments therein expressed, I, George C. Perkins, Governor of California, by authority of the power in me vested, do hereby proclaim Thursday, the 30th day of November, instant, as a day of thanksgiving, and I do further recommend that all secular business be on that day suspended. Let the day be marked in the annals of our lives as one set apart for devotion, as each of us may desire according to our conscientious opinions, in extending our assistance and sympathies to the poor and lonely, in family reunions, in friendly greetings, in charitable deeds, "so that all who dwell within the land may rejoice and be glad in the season of national thanksgiving."

CHICKEN CHEESE.—Two chickens boiled tender, chopped not too fine, and seasoned with salt and pepper. Boil hard three or four eggs and slice, with which line molds and pour in the chickens, adding the liquor in which they were boiled. When perfectly cold slice for luncheon, or Sunday tea, or sandwiches.
BREAD CRUMBS FOR PASTRY.—Many puddings that are commonly baked in a crust, such as cocoanut, potato, apple, and lemon, are equally good and more wholesome, made by strewing grated breadcrumbs over a buttered pie plate or pudding dish to the usual depth of crust; pour in the pudding, strew another layer of bread crumbs over the top and bake.
BREAKFAST PUFFS.—May be made on baking day by taking up a little dough, pulling out to thickness of doughnuts; cut two and one-half inches in length, drop in boiling lard, and fry like doughnuts; to be eaten with butter, like biscuit. Some cooks work into the dough a little butter, and let it rise before frying in the lard. They are delicious with coffee for breakfast.
CELERY SOUP.—Boil a small cup of rice in three pints of milk until it will pass through a sieve. Grate the white part of three heads of celery on a bread-grater; add this to the milk after it has been strained; put to it a quart of strong veal stock; let it boil until the celery is perfectly tender; season with salt and cayenne pepper, and serve. If cream is obtainable, substitute one pint for the same quantity of milk.

POTTSVILLE (Pa.), Nov. 10.—The residence of John Hempter, at Grantville, Dauphin county, was destroyed by fire last night. Hepter is one of the wealthiest and most influential farmers in the Williamstown Valley. He was called from home yesterday, but the other members of the family, consisting of Mrs. Hepter and six children, the eldest not being over thirteen years, retired earlier last night than usual. Mrs. Hepter was awakened by loud crackling flames. Rushing from the bedroom she behold the entire lower portion of the house enveloped in flames. Returning to the room, she picked up two of the children and succeeded in getting them out. Two more were also saved, but badly burned from passing through the flames. The third trip was less successful as she was forced to leave the house with only one of the two remaining children, which she placed beyond danger. For the fourth time the brave mother entered the burning building, but before reaching the sixth child, a little girl, the youngest of the family, her escape was cut off. They perished. The charred remains were found locked in each other's arms.
Cooking Eggs by Music.
"Those who wish their eggs hard set will play the polka andante maestoso; the contrary effect will be produced by an allegro vivace rendering of the composition," all parts of the instructions accompanying a new piece of Prussian music, designated the "Egg Polka." The piece was not so named, it seems, from any
white part of three heads of celery on a bread-grater; add thus to the milk after it has been strained; put to it a quart of strong veal stock; let it boil until the celery is perfectly tender; season with salt and cayenne pepper, and serve. If cream is obtainable, substitute one pint for the same quantity of milk.
Quail on Toast.—Dry-pick them, singe them with paper, cut off heads and legs at first joint, draw, split down the back, soak in salt water for five or ten minutes, drain and dry with a cloth, lard them well with bacon or butter, and rub salt over them; place on broiler and turn after dipping two or three times into melted butter; broil about twenty minutes. Have ready as many slices of buttered toast as there are birds, and serve a bird, breast upward, on each slice.
Buckwheat Cakes.—Warm one pint of sweet milk and one pint of water (one may be cold and the other boiling); put half this mixture in a stone crock, add five teacups buckwheat flour, beat well until smooth, add the rest of the milk and water, and last, a teacup of yeast. Or the same ingredients and proportions may be used, except adding two table-spoons of molasses or sugar and using one quart of water instead of one pint each of milk and water.
Apple Croutes.—Pare, halve and core good, smooth apples; cut slices of bread without crust to fit the flat side of each apple; dust the apple all over with sugar, a little nutmeg or cinnamon. Arrange these in the slices of bread in a pie-plate; bake in a moderate oven. The apples will retain their shape, and if peeled with care or curved lightly in shells or other fanciful designs make a very presentable dish for Sunday tea or hasty lunch, besides being simple and healthy; if eaten with cream they are delicious.
Cooking Eggs by Music.

"Let the polka be placed, open at the first page, upon the pianoforte desk. Then drop the egg into a pipkin half full of boiling water. Set the pipkin on the fire. Then play the polka through in strict time, as per metronome indications. On completing its last bar the egg will be cooked to a turn—that is, its yolk will be fluent and its white about as yielding to the touch as the flesh of a ripe plum." It is a melancholy thing that the divine art of music should have been degraded to ordinary uses, but that a German, of all nationalities, should have been the first to so employ it is a still deeper humiliation.

NOTICE IS HEREBY GIVEN TO THE SHARE-holders of the Farmers' Ditch Company that at a meeting of the Board of Directors held on November 9th, 1852, an assessment [No.1] of one dollar and fifty cents ($1.50) per share was levied upon the capital stock of said company, payable immediately to the Secretary at his residence in Orangetherpe School District, Los Angeles county.
And it is further ordered that any stock upon which said assessment remains unpaid on the 12th day of December, 1852, shall be deemed delinquent, and will be duly advertised for sale at public auction, and unless payment shall have been made before will be sold on
