HOUSEHOLD HINTS.
Onions and Tomatoes.—A side dish, which will be new to many cooks, is made by slicing very thin some onions and green tomatoes, in about equal proportions, and frying them together just as you fry onions alone. Salt them well, and if there is any danger of their being greasy, drain before serving.
Peach Cake.—Bake three sheets of sponge cake as for jelly cake; cut nice ripe peaches in thin slices; prepare cream by whipping, sweetening and adding flavor of vanilla, if desired; put layers of peaches between the sheets of cake; pour cream over each layer and then the cake.
Cigarette Smoking.
Scarcely less injurious, in a subtle and generally unrecognized way, than the habit of taking "nips" of alcohol between meals, is the growing practice of smoking cigarettes incessantly. We have not a word to say against smoking at suitable times and in moderation, nor do our remarks at this moment apply to the use of cigars or pipes. It is against the habit of smoking cigarettes in large quantities, with the belief that these miniature doses of nicotine are innocuous, we desire to enter a protest. The truth is that, perhaps, owing to the way the tobacco-leaf is shredded, coupled with the fact that it is brought into more direct relation with the mouth and air-passages than when it is smoked in a pipe or cigar, the effects produced on the nervous system by a free consumption of cigarettes are more marked and characteristic than those recognizable after recourse to other modes of smoking. A pulse-tracing made after the subject has smoked, say a dozen cigarettes, will, as a rule, be flatter and more indicative of depression than one taken after the smoking of cigars. It is no uncommon practice for young men who smoke cigarettes habitually to consume from eight to twelve in an hour, and to keep this up-for four or five hours daily. The total quantity of tobacco used may not seem large, but beyond question the volume of smoke to which the breath organs of the smoker are exposed, and the characteristics of that smoke as regards the Enterprising.

PEACH CAKE.—Bake three sheets of sponge cake as for jelly cake; cut nice ripe peaches in thin slices; prepare cream by whipping, sweetening and adding flavor of vanilla, if desired; put layers of peaches between the sheets of cake; pour cream over each layer and over the top. To be eaten soon after it is prepared.
HAMBURG CREAM.—Stir together the rind and juice of two large lemons and one cup of sugar; add the well-beaten yolks of eight eggs; put all in a thin pail and set in a pot of boiling water (if you have no double boiler); stir for three minutes, take from the fire, add the well-beaten whites of the eggs, and serve when cold in custard glasses.
VANILLA EXTRACT.—Vanilla extract can be made as easily as the lemon. To half a pint of alcohol allow two vanilla beans; cut them in very small bits, put them in a bottle, and pour the spirits over them. If possible have a bottle with a glass stopper. In two weeks the extract will be ready for use, and will be very satisfactory as well as inexpensive.
CANNED MUSHROOMS may be served with good effect with game, and even with beefsteak if prepared in this way: Open the can and pour off every drop of the liquid found there; let the mushrooms drain; then put them in a saucepan with a little cream and butter, pepper and salt; let them simmer gently for five to ten minutes, and when the meat is on the platter pour the mushrooms over it. If served with steak, that should be very tender, and be broiled, never in any caze fried.
CHOW-CHOW.—One quart of small cucumbers, one quart onions, one quart green tomatoes sliced, one cauliflower, three red peppers sliced; scald in salt and water. After draining pour over them hot vinegar and let stand two or three days. Drain off old vinegar. Take one package English mustard, one quart vinegar, one and one-half cups of brown sugar, one-half cup of flour. Boil some vinegar, mix up other ingredients in pressure than one taken after the smoking of cigars. It is no uncommon practice for young men who smoke cigarettes habitually to consume from eight to twelve in an hour, and to keep this up for four or five hours daily. The total quantity of tobacco used may not seem large, but beyond question the volume of smoke to which the breath organs of the smoker are exposed, and the characteristics of that smoke as regards the proportion of nicotine introduced into the system, combine to place the organism very fully under the influence of tobacco. A considerable number of cases have been brought under our notice during the last few months, in which youths and young men who have not yet completed the full term of physical development have had their health seriously impaired by the practice of almost incessantly smoking cigarettes.* It is well that the facts should be known, as the impression evidently prevails that any number of these little "whiffs" must needs be perfectly innocuous, whereas they often do infinite harm.—Lancet.
Hold-Over Senators.
There seems to be an idea floating around among the curbstone statesmen that all the Senators chosen at this time will vote for the next United States Senator to fill the seat now occupied by Mr. Farley. The constitutional provision bearing on the subject is very precise, and lends no sanction whatsoever to that notion. Article IV, Section 5, reads as follows:
The seats of the twenty Senators elected in the year 1882 from the odd numbered districts shall be vacated at the end of the second year, so that one-half of the Senators shall be elected every two years."
The term of office of the Senators from the odd numbered districts will expire on the 31st of December, 1884. But Senator Fagley's term will not expire till March 4, 1885. Under the law the vacancy is to be filled by the Legislature next preceding. That will be the Legislature partly elected in November, 1884. It will commence its sessions on the first Monday of January, 1885, and will be the Legislature next preceding the vacancy. In that Legislature the twenty Senators elected this time in the odd districts will not have seats. Twenty Senators from the even districts will, however, have a voice in

WHIPPED CREAM.—Place the cream over ice until thoroughly chilled, and whip with an egg beater or whip-churn until it froths. While whipping place froth on a sieve, and return to the bowl to be rewhipped all that passes through. When cream is difficult to whip, add to it, and beat with it the white of an egg. Sweetened and flavored, this is a choice dessert alone, but it may be served in various ways. Baked apples, peaches, fresh or preserved berries are delicious with it. Jelly glasses one-third full of jelly and filled up with cream make a wholesome and delicious dessert.
PUFFS.—Puffs, which are nice made fresh for tea, call for one pint of sweet milk, six ounces of sifted flour, four eggs, a good pinch of salt. The milk must be scalded and then be allowed to cool a little, then stir the flour in, not leaving a single lump. Beat the eggs till they are very light, then add them to the milk and flour. Fry these in hot lard, dropping a spoonful at a time, as you do fritters. By taking pains you can make these puffs as round as balls. Do not let them "string" from the spoon, but, holding it down close to the lard, cut the batter off with a knife. Sift powdered sugar over them just before sending them to the table.

In that Legislature the twenty Senators elected this time in the odd districts will not have seats. Twenty Senators from the even districts will, however, have a voice in what is going on, and to that extent the Senatorial succession is involved in the present contest. But twenty Senators are quite a large body, seeing that the whole Legislature, Senate and Assembly, consists only of 120 members. They may be said to be nearly equal to one-third of a Senator, for a majority, or sixty-one votes, elect. If they should be evenly divided among the two parties, each would have one-sixth of a Senator already materialized.—[Bulletin]
Immigration.
The Immigration Association of California reports the number of immigrants arriving overland during last week as 742, and for September 3,-156. The demand for information concerning California is continually increasing. The Association has just received 10,000 maps, pamphlets and circulars, a portion being in the German and a portion in the English language. The immigrants are mostly from the East, New York, Ohio, Kansas and Illinois being in the lead. A great many are also arriving from Canada, Switzerland, England and Germany. Settlements are being made in various parts of the State both north and south of San Francisco. The people emigrating from the Eastern States prefer to settle in the southern rather than in the northern part of California.
