Brief communications on current topics are respectfully solicited from all parts of the county. MARK TWAIN. His Description of Henry Ward Beecher's Farm. Mr. Beecher's farm consists of twenty-six acres, and is carried on strict scientific principles. He never puts in any plant of a crop without consulting his book. He ploughs and reaps and digs furrows according to the best authorities, and the authorities cost more than the other farming implements do. As soon as the library is complete, the farm will begin to be a profitable investment. But book farming has its drawbacks. Upon one occasion, when it seemed morally certain that the hay ought to be cut, the hay book could not be found, and before it was found it was too late, and the hay was all spoiled. Mr. Beecher raises some of the finest crops of manufacture of Milk Sugar. The enormous quantity of cheese manufactured in this country, for export as well as home consumption, leads us to ask why we should be under the necessity of importing milk sugar. Those who may be engaged in making the latter, or intending to embark therein, will be interested to learn of the latest improvements in that line. In the evaporation of whey, from which the cheese has been removed, a considerable portion of the sugar of milk is lost through conversion into uncrystallizable lactose by the action of the acid in the whey. Engling, therefore, recommends the neutralization of the acid with fine chalk, and then after evaporating it to one-half, he allows it to settle. The clear liquid is afterward decanted or drawn off from the precipitate, which consists of albumen and phosphate of lime, and evaporated still further. The sugar separates from the purified solution in adherent scales and crusts; upon a further evaporation of the mother liquor a second crop of crystals is obtained. The thick liquid that remains can be dialyzed, and more sugar obtained. From 100 quarts of summer whey eight lbs. of refined milk sugar can be obtained. If the whey is frozen first, and the crusts of ice that form are removed from time to time, a strong solution of milk sugar can be obtained in a comparatively short time, which is purer than that obtained by evaporation, because the fat, albumen, and salts are for the greater part intermixed with the ice, giving it the appearance of thin scales with dendritic markings. In an experiment in making milk the authorities cost more than the other farming implements do. As soon as the library is complete, the farm will begin to be a profitable investment. But book farming has its drawbacks. Mr. Beecher raises some of the finest crops of wheat in the country, but the unfavorable difference between the cost of producing it and its market value after it is produced, has interfered considerably with its success as a commercial enterprise. His special weakness is with hogs, however. He considered hogs the best game a farm produces. He buys the original pig for $1.50 and feeds him $40 worth of corn, and sells him for about $9. This is the only crop he ever makes any money on. He loses on the corn, but he makes $7.50 on the hog. He does not mind this, because he never expects to make anything on the corn. And, anyway it turns out, he has the excitement of raising the hogs, whether he gets the worth of them or not. His strawberries would be a comfortable success if the robins would eat turnips, but they won't, and hence the difficulty. One of Mr. Beecher's most harassing difficulties in his farming operations come of the close resemblance of different sorts of seeds and plants to each other. Two years ago his far sightedness warned him that there was going to be a great scarcity of watermelons, and therefore he put in a crop of 72 acres of that fruit. But when they came up they turned out to be pumpkins, and a dead loss was the consequence. Sometimes a portion of his crop goes into the ground the most promising sweet potatoes, and comes up the infernalist carrot—though I have never heard him express it in just that way. When he bought his farm he found one egg in every hen's nest on the place. He said that here was just the reason that so many farmers failed; they scattered their forces too much. Concentration was the idea. So he gathered those eggs together and put them all under one experienced old hen. That hen roosted over them In an experiment in making milk sugar in this way, 10 liters of whey, by careful handling, yielded 280 grammes of snow-white milk sugar, which is better than Schalzmann's results, which were 2½ kilos of sugar from 100 liters of whey, although it was the winter whey, which is poorer in sugar. The Cincinnati man who led his wife out of a theatrical matinee by the ear, in order to break her of the habit of going to theatre, has been made very conspicuous by the publication and discussion of his exploit. "But I don't mind it," he says, "for I feel that I have accomplished much good. My wife is not the only woman in Cincinnati who has neglected her children and her household affairs to visit matinees once or twice every week, but there are hundreds of them, and it is time that husbands and fathers entered their protest. She knew the characters and plot of at least a hundred plays, and was forever talking about them. She gave me no rest, and was worse than a stage-struck youth, who is eternally quoting from the drama. Nearly every move I made, or opinion I expressed, she likened me to some character she had seen at the theatre. One night I had the toothache like thunder, and was walking up and down the sitting-room floor with my hand up to my jaw, when she peeped in at me, and after looking a moment, said: 'Hello, Hamlet, to pull or not to pull!'" His chief grievance, however, was that she called him Toodles, and that seems to have been the inciting cause for his action at the theatre. PORTLAND (Or.), June 23.—In the Circuit Court yesterday Sidney Dell, the attorney for the plaintiff in the case of the St. Paul Harvester Company vs. Hawley, Dodd & Co., of this though I have never heard him express it in just that way. That hen roosted over them constantly night and day for 11 weeks, under the anxious personal supervision of Mr. Beecher himself, but she could not "phase" those eggs. Why? Because they were those infamous porcelain things which are used by ingenious and fraudulent farmers as "nest eggs." But perhaps Mr. Beecher's most disastrous experience was the time he tried to raise an immense crop of dried apples. He planted $1,500 worth, but none of them sprouted. He has never been able to understand to this day what was the matter with those apples. Mr. Beecher's farm is not a triumph. It would be easier on him if he worked it on shares with some one; but he cannot find anybody who is willing to stand half the expense, and not many that are able. Still, persistence in any cause is bound to succeed. He was a very inferior farmer when he first began, but a prolonged and unflinching assault upon his agricultural difficulties has had its effect at last, and he is now fast rising from affluence to poverty. Six cases of sunstroke occurred at New York last Saturday. PORTLAND (Or.), June 23.—In the Circuit Court yesterday Sidney Dell, the attorney for the plaintiff in the case of the St. Paul Harvester Company vs. Hawley, Dodd & Co., of this city, charged that the deposition taken in Minnesota had been tampered with. Hon. Richard Williams, ex-member of Congress, attorney for defendants, branded the insinuation as a lie, whereupon Dell pushed Williams. The latter ran around the table to Hawley and Dodd, who then grappled with Dell and a most unseemly fight took place. Though single handed, Dell was more than a match for his assailants. The high social position of all the belligerents makes the fracas the subject of much talk. Dell was fined $25. CINCINNATI, June 23.—A Frankfort (Ky.), special says: Among those whose professed conversion was announced at a meeting of the Mountain Evangelist, Rev. George O. Barnes, at the Opera-House last night, was Governor Luke Blackburn. It is understood Governor Blackburn will unite with the Protestant Episcopal Church of Louisville next Sunday. Mrs. Julia Smith, a widow residing alone at Petaluma, aged about 70, was found dead in her bed on the 29d inst. It is supposed she died of heart disease. Put it to Proof.
