Advertisements must reach the office not later than Friday morning in order to induce their appearance on the day following. Brief communications on current topics are respectfully solicited from all parts of the county. HOUSEHOLD HINTS. Potato Croquettes.—Pare, boil and mash six good-sized potatoes. Add one tablespoonful of butter, two-thirds of a cupful of hot cream or milk, the whites of two eggs well beaten, salt and pepper to taste. When cool enough to handle, work into shape, roll in egg and bread crumbs and fry in hot lard. Strawberries and Whipped Cream.—Place a layer of strawberries in a deep dish; cover the same thickly with pulverized sugar; then a layer of berries, and so on until all are used. Take one pint of cream, whites of three eggs and a teacup of powdered sugar, whipped together, flavored with strawberry juice, and pour over the top. War Handkerchiefs. The ancient custom of illustrating pocket handkerchiefs for the amusement and instruction of children has been seriously emulated by the French War Office for the benefit of the national army. The cotton handkerchiefs provided for the French soldiers are now decorated with special texts and cuts for the technical and sanitary instruction of the wearers. The center is occupied with the Cross of the Legion of Honor upon a red background, and the inscription underneath it, Honneur et Patrie. Around this central point are grouped a circle of medallions, containing representations of officers of all grades, from the modest sub-lieutenant to the proud commandant of a corps d'armée. The different uniforms are pictured so distinctly that the French private can tell at a glance to what grade any officer whom he sees may have attained. The special pocket handkerchief prepared for the infantry soldier has exact drawings of the arms used by him, with explanations of their mechanism. The borders of the handkerchiefs are hemmed in with a framework of the national colors, and within this framework are printed a number of sanitary precepts to be observed on march and during a campaign. Here are some of the marching advice: "Wear the cravat loose. A strip of flannel day and night around the body in order to keep off the diarrhoea. Quench thirst with very small doses of wine, coffee, vinegar-and-water, or brandy-and-water. Take a piece of bread and a little coffee before the march. Spirituous drinks do more harm than good. STRAWREEIES AND WHIPPED CREAM.—Place a layer of strawberries in a deep dish; cover the same thickly with pulverized sugar; then a layer of berries, and so on until all are used. Take one pint of cream, whites of three eggs and a teacup of powdered sugar, whipped together, flavored with strawberry juice, and pour over the top. CREAM FRIETERS.—If you have cold corn starch pudding stiff enough to cut in slices, dip them in cracker dust and egg and fry them light brown in sufficient smoking hot fat to float them; when they are fried take them out of the fat with a skimmer; lay them on brown paper for a moment to free them from fat, and serve them hot, dusted with powdered sugar. CAKE CUSTARDS.—Moisten two cupfuls of stale cake with a custard made of one pint of milk, four eggs, two tablespoonfuls of sugar; put it into buttered cups, set them in a pan with enough hot water to reach half way to the brim, and bake in a moderate oven until the custard is firm. They may be served in the cups, or may be turned out and flushed with powdered sugar; any kind of pudding sauce preferred may be served with them. -PERFECTION CAKE.—Three cups of sugar, one of butter, one of milk, three of flour, one of corn starch, whites of twelve eggs beaten to a stiff froth, two teaspoonfuls of cream tartar in the flour and one of soda in half the milk; dissolve the corn starch in the rest of the milk and add it to the sugar and butter well beaten together; then the milk, and soda and the flour and whites of eggs. This cake comes nearer perfection than any other yet discovered. FRENCH HASH.—Mince very fine a teaspoonful of onion, brown it in a tablespoonful of flour, and let that brown; then add a pint of gravy, broth or water, and cold beef cut in small thick slices; season with salt and pepper and heat it; draw the pan to the side of the fire, and stir in the yolks of two raw eggs and a glass of sherry or Maderia wine, and serve the hash at once; toast may be placed under the bush. ber of sanitary precepts to be observed on march and during a campaign. Next cook the soup, and do it at once, even though feeling quite tired out." Reclamation of the Zuyder Zee. The preliminary surveys of the proposed reclamation of the Zuyder Zee have been finished, and the work of building the walls will soon begin. A dike about 24 miles in length will be constructed of sand and faced with clay, reaching 16 feet above the level of the sea, which will make it about 64 feet above the highest tide. The thickness of the dike will be such as will enable it to resist the heaviest seas. Operations will begin at four different points, and the calculation is to have it completed in from seven to ten years, at a cost of $46,000,000. New Way to Make Barrels. A Washington Territory newspaper says: The logging camp of the Mattulath Manufacturing Company is located at Carson, half a mile from Payallup. They are getting out 20,000 feet of cottonwood logs per day, using the labor of seventeen men and four yoke of cattle. These logs are made into rafts and towed to the factory of the company at Seattle. The company think they have a great improvement in the sheet barrel, which is made by cutting a log into barrel lengths, softening them by a steam process and then shaving each piece into a long sheet, unrolled like a carpet. Each sheet is then crosscut into such a length that when the two ends are brought together it is given the size and form of a barrel without heads, the whole being done by machinery. This has proved a great improvement over the stave barrel in cost of manufacturing as well as in merits for use. The only drawback, if drawback it may be called, is that clear timber is required in this case, all the knotty timber being rejected, whereas for staves knotty timber may be used. Consequently the best of the cottonwood is now being culled out, and FRENCH HASH—Mince very fine a teaspoonful of onion, brown it in a tablespoonful of flour, and let that brown; then add a pint of gravy, broth or water, and cold beef cut in small thick slices; season with salt and pepper and heat it; draw the pan to the side of the fire, and stir in the yolks of two raw eggs and a glass of sherry or Maderia wine, and serve the hash at once; toast may be placed under the hash. CHILE SAUCE—Twelve large, ripe tomatoes, four ripe or three green peppers, two onions, two tablespoonfuls salt, two of sugar, one of cinnamon, three cups vinegar; peel tomatoes and onions, chop (separately) very fine, add the peppers (chopped) with the other ingredients, and boil one and a half hours. Bottle and it will keep a long time. Stone jugs are better than glass cans. One quart of canned tomatoes may be used instead of the ripe ones. This Chile sauce is excellent and much better and more healthful than cat-sup. BLANQUETTE OF COLD VEAL—Cut cold veal in pieces about an inch square; mix together in a saucepan over the fire one heaping tablespoonful each of butter and flour; when they are smoothly blended, gradually stir in a pint and a half of boiling water, taking care to stir the sauce until it is quite smooth; season it palatably with salt and pepper, put the cold veal into it, and let it stand where it will not burn while a tablespoonful of parsley is being chopped; then draw the saucepan containing the blanquette to the side of the stove where it cannot boil, stir in the parsley and the yolks of two raw eggs, and serve the blanquette at once. A dish of hot mealy boiled potatoes should be sent to the table with it. The Newer Arithmetic. A bank has $78,490 in its vaults. The cashier gets away with $60,383, and the bank settles with him for two thirds. How much is the bank ahead, and what will the poor cashier do if next winter happens to be a hard one? A house-painter consumes 48 minutes in lighting his pipe, 55 minutes in telling stories, 22 minutes in watching a kitchen girl, 36 minutes in binding up a sore finger, and quits work 9 minutes before 6. How much time did he beat his employer out of, and how long will it take him to work himself to death? A boy who is sent on an errand stops to watch three dogs, plays marbles with four boys, climbs two shade trees, takes a short ride on a velocipede, makes up faces at three girls, and sits on a lumber pile for fifteen minutes to help another boy learn to smoke. What did he get when he got home, and how long did it take him to make his mother believe that he had come in two minutes ahead of chain lightning? A certain grocer, whose scales only weigh fifteen ounces to the pound, sells 320 pounds of goods every twelve hours. Find what he gains weekly, and after you have figured it up do your trading with some other house. A lady desires to divide six sunflowers among five girls so that each girl can wear one to a party. How can she do it without cutting one of the girls in two? Free of Cost.
