Advertisements must reach this office not later than Friday morning in order to ensure their appearance on the day following. Brief communications on current topics are respectfully solicited from all parts of the county. HOUSEHOLD HINTS. Cucumbers, to be crisp, brittle and "nice," should be soaked in cold salt water half an hour before they are served. This process extracts the alleged poison in the vegetable and removes the elements of cramps. RICE AND CHICKEN CUTLETS.—Boil a teacupful of rice in some good stock, and pound it in a mortar with an onion that has been cooked in butter, with salt and pepper. Pound separately in equal portions cold ham and chicken; form this into cutlets; cover them with egg and bread crumbs, and fry. Serve with a sharp sauce. BAKED DUMPLINGS.—These differ milk, then dress it with butter, peper, salt and beaten egg, as baked egg-plant is dressed. Form the mixture into small cakes, then dip them into beaten egg, then in cracker or bread-crumbs, and fry them in boiling lard. The flavor of these fritters is somewhat like that of fried oysters. Amber Soup.—Fry a large chicken with a small piece of pork and a large onion. Put them into the soup pot with two or three pounds of veal or beef and a gallon of cold water. Let them simmer slowly for four hours, skimming very frequently. Add then a small carrot, a turnip, one stick of celery, two sprigs of parsley, four cloves, half a teaspoonful of small pepper-corns and a little salt. Let it simmer slowly for another hour, strain and return it to the pot. Season it to taste with cayenne pepper and salt. Add the slightly-beaten whites and shells of two eggs, stirring well to the bottom of the pot. Let it come to an active boil, then set it upon the back of the range. When boiling ceases and it becomes perfectly still, skin it well, add a tablespoonful or more of caramel and serve. To take out Milk and Coffee Stains These stains are very difficult to remove, especially from light colored and finely finished goods. From woolen and mixed fabrics they are taken out by moistening them with a mixture of one part glycerine, nine parts water, and one-half part aqua ammonia. The use of finely chopped suet is substituted for boiled apple, as well as plum dumplings, because they are lighter made in this way; but, if baked, butter or part butter or part lard would be needed for the crust; as the dry heat does not sufficiently blend the suet with the flour. COTTAGE PUDDING.—Beat to a cream one cup of sugar, two large tablespoonfuls of butter, add two well-beaten eggs, a large spoonful of orange flower water, one teacupful of flour, one teaspoon of baking powder, one teacup of sweet milk; stir all well together; butter a baking dish, pour in the pudding, bake in a quick oven twenty minutes; serve with a rich wine sauce. A DELICIOUS SOUP.—To a quart of any kind of stock add a pint of stewed tomatoes from which the seeds have been strained, thicken with a tablespoon of pea meal, boil fifteen minutes, stir in a half a pint of sweet cream or milk, season with salt and pepper and serve hot. Numerous other vegetable soups could be made in an almost similar manner, and are very savory and nutritious. BUROAN STEW.—Take the remains of a cold fowl, cut it in pieces and put it in a stew-pan. Add two ladlefuls of soup, one tablespoonful of anchovy sauce, one large glass of white wine, one tablespoonful of flour, and sufficient stock to cover the meat, one large onion (first fried in butter), cayenne pepper and pickled oysters. Stew it and stew gently for two hours. Cover it close, and when serving up squeeze a half lemon over the whole. A RICH TOMATO SOUP.—Take eight good-sized tomatoes, cut them in half, put them into a saucepan with a bunch of sweet herbs and an To take out Milk and Coffee Stains These stains are very difficult to remove, especially from light colored and finely finished goods. After this time, the stained pieces are pressed between cloth, and then rubbed with a clean rag. Drying, and if possible a little steaming, is generally sufficient to thoroughly remove the stains. Stains on silk garment which are dyed with delicate colors, or finely finished, are more difficult to remove. In this case five parts glycerine are mixed with five parts water, and one-quarter part of ammonia added. Before using this mixture it should be tried on some part of the garments where it cannot be noticed, in order to see if the mixture will change color. If such is the case no ammonia should be added. If, on the contrary, no change takes place, or if after drying, the original color is restored, the above mixture is applied with a soft brush, allowing it to remain on the stains for six or eight hours, and is then rubbed with a clean cloth. The remaining dry substance is then carefully taken off by means of a knife. The injured places are now brushed over with clean water, pressed between cloths and dried. If the stain is not then removed, a rubbing with dry bread will easily take it off. To restore the finish, a thin solution of gum arabiic, or in many cases beer is preferred, is brushed on, then dried and carefully ironed. By careful manipulation these stains will be successfully removed. Enterprising Druggists. If white wine, one tablespoonful of flour, and sufficient stock to cover the meat, one large onion (first fried in butter), cayenne pepper and pickled oysters. Stew it and stew gently for two hours. A RICH TOMATO SOUP. — Take eight good-sized tomatoes, cut them in half, put them into a saucepan with a bunch of sweet herbs and an onion stuck full of cloves, some all-spice, whole pepper and salt. Cook them slowly until quite soft, then strain through a strainer or hair sieve until the skins and onions and herbs only are left behind. Have a quart of plain stock boiling hot. Stir the tomatoes into it, add the volks of two eggs beaten up in a little cold water. Serve with sippets of toast or fried bread. SPICED BEEF. — A piece from the cross-rib, or a piece from the round, are the best for this purpose, five or six pounds in boiling water, simmer four hours, keep well covered with water, add one dozen mixed spices, whole peppercorns, cloves and all-spice, two or three bay leaves, two sliced onions, one carrot, two sliced tomatoes. Serve on a dish with some of the gravy poured around it. A pint of the liquor should be strained and thickened with flour, and some tomato and carrot added to it before serving. SALSIFY FRITTERS. — As you scrape and clean each root throw it into cold water, to which you have added a tablespoonful of vinegar. This will keep them from turning black, which will occur if they are exposed to the air. After they are all scraped boil them until tender, then, after draining well, mash them through a colander to a smooth paste, picking out all stringy parts.
