Brief communications on current topics are respectfully solicited from all parts of the county. LIMBURGER CHEESE. There is somewhat of this fragrant product made in California. A Sonoma county correspondent some months ago favored our readers with an account of a visit to the dairy establishment of Korbel Bros., where Limburger is manufactured; but he did not include the process of milk manipulation, which terminates in such wonderful results. In answer to some readers, who are ambitious of trying Limburger making, we may remark that in the New York factories, the milk is received and strained into the vats, as in ordinary cheese making; but afterwards the process excluding Canned Goods. Chicago, May 14.—A cable special to the "Times" from London of May 13th says: After August 1st no canned meats, canned fruits or canned goods, where the seams are soldered, will be permitted to enter France. The French officials will, on August 1st, condemn all which have any traces of bad soldering. It may be said, on this point, that within a short time there has been developed a most extraordinary activity among English capitalists for the purpose of bringing Australia to the front in the matter of competition in canned meat. No doubt the experiment is very promising, owing to the cheapness of breeding cattle in Australia, but at the same time there may be some doubt as to what may be the influence of the climate on the attempt. If there is no serious obstacle in this direction, there is reason to believe that the effort will succeed in establishing the most formidable competition against America. A large amount of capital is being expended in fitting up steamers with compressed air chambers for the purpose of bringing fresh beef from Australia to England. The fact is an effort is being made all along the line to kill the American meat industry in connection with imports into the country. A resolution, to be offered on Monday by Lord Stanley in the House of Lords, in reference to diseased American meat, will receive no general support, but is part of a scheme to discredit American products and pave the way for the Australian project. an account of a visit to the dairy establishment of Korbel Bros., where Limburger is manufactured; but he did not include the process of milk manipulation, which terminates in such wonderful results. In answer to some readers, who are ambitious of trying Limburger making, we may remark that in the New York factories, the milk is received and strained into the vats, as in ordinary cheese making; but afterwards the process is quite different. The milk is raised to a temperature of 96 deg. Fahr., when enough rennet is added to coagulate the mass in about 30 minutes. The curd is then cut crosswise and lengthwise of the vat with a gang of steel curd knives. Soon after it is turned with tin shovels frequently, for an hour, when it is left for the whey to settle; and if the curd is of proper consistency, about two-thirds of the whey is removed. The curd is now ready for the molds into which it is dipped, the whey remaining escaping through the perforated sides of the molds. After the curd has hardened to a proper degree it is placed upon a table slightly inclined and the whey drains off, care being taken that the cheese retains the form of the molds. Then they are turned several times and finally are ready to receive the salt, which is rubbed in by the hand, morning and evening for four days, thus gradually hardening, until they can be taken to the curing room where the bricks of cheese are set on edge close together. After being properly cured they are then packed for market. There is precaution necessary in curing lest the Limburger should become too much so—as it might be expressed. To retard the too rapid elaboration of perfume it is requisite that the degree of heat should be kept rather low. To secure this, quite expensive underground store-rooms are contrived. Mr. David Karlen, of Booneville, Oneida county, N. Y., has spacious cellars constructed, costing large sums of money, where he keeps and cures the article until its condition and the state of the market make it for his interest to sell. A. M. Baltz, of Pamelia, Jefferson county, has a vault excavated out of lime-rock and arched with stone, the top of the arch being 18 feet above the stone floor. WASHINGTON, May 12th.—Stanley Matthews was confirmed Supreme Court Justice by the Senate in Executive Session to-day, by a majority of one. The confirmation is the talk of the town to-night, and all sorts of rumors are afloat as to how individual Senators voted on the question; also, the possibility of to-day's action being reconsidered. It does not seem probable that any motion to reconsider will be entered, it being manifest that no one of twenty-two Senators who voted in the affirmative to-day would have so voted if he desired to defeat the nomination, which had finally only a bare majority of one, and therefore the entering of a motion to reconsider during one of the two Executive Sessions, the extreme parliamentary limit of time, cannot be made, except in the event that some member of the majority shall change his opinion and be prepared to give some reason for opposition which has not been advanced during the two days' debate. Princess Stephanie, the bride of Prince Rudolph of Austria, was the victim in a case of unintentional petty larceny, while crossing the Belgian border on her way to Austria. She wore a bonnet trimmed with artificial grasses, and being tired took off the bonnet and laid it aside. An officer, anxious for a souvenir of the day, surreptitiously picked off a grape. A comrade followed suit, the example spread, and soon all the trimming was ripped off. Next the strings disappeared, and lastly the straw itself, bit by bit. When the bride looked for her bonnet it had vanished, and she was obliged to wear another, going on her journey with a very dubious opinion of her new subjects' honesty. NEW ORLEANS, May 12.—Jefferson Mr. David Karlen, of Booneville, Oneida county, N. Its dimensions are 25x100 feet, and cost $6,000. There is a market for Limburger wherever there is a German population, hence that made in central New York goes to New York city, to St. Louis, Louisville and other cities of the south and west. It is made with less expense than American cheese, its price is less fluctuating, and hence the milk of our dairy-men is bought largely by dealers and made up by their employees.—[Rural Press. Chicago, May 12. — The Young Men's Catholic National Union to-day completed its labors. Its chief work was the consideration of the grievances of the Indians, colored people, army chaplaincies, intemperance and various social reforms. Resolutions offered by Judge E. T. Dunne of Chicago were unanimously adopted, condemning the public school system of the United States, and calling on Catholics to contend for the separate education of their children. Bishop Koane was selected for President,and Boston was selected as the next place of meeting. New York, May 13th. — The Women's Christian Union of Brooklyn have resolved in the fall to begin a vigorous anti-polygamy campaign, by exciting the sympathy of all Christians. They intend to start a movement in opposition to the admission of Utah as a State. They are assured of much sympathy. New Orleans, May 12. — Jefferson Davis, in his speech at the unveiling of the Jackson statue, said: "From the academic shades of the military institute, Jackson went forth to battle for the cause of State rights, self-government and constitutional liberty. He lived for his country, never doubting the justice of his cause. Believing it was righteous, and trusting in it, he died, but is alive to-day, feeling that the Confederacy ought to have succeeded, because it was founded on truth and justice. He gave his life for the whole country, and the country gave its heart to Jackson. You men upon whom he leaned in the hour of danger, in honoring him also honor yourselves." New York, May 12. —The "Tribune" says: The rate of emigration will increase at this point this year 33 per cent over last. It is estimated that 70,000 will arrive this month. The greater part of immigrants arriving consist of men under 40 years of age. Of the 100,923 immigrants who arrived in the first four months of this year, 72,773 were men, and 36,350 were women. The Italians who arrived have two destinations only. One is Baxter street, the other California. Those going to California engage in the manufacture of wine and grape-growing.
