CALIFORNIA BREWERY,
Seventh North street, between Europe and the inauguration sugar beet culture, and the main facture of sugar in California was the originator of the suction at Sacramento, and after hail overcome all the difficulties errors incident to the inauguration of a new enterprise, has the success of having made that fact a splendid success. Last year crop of beets only sufficed to the mill in operation for months, and yet they realized per cent on their capital. He factory can do three times as I call the especial attention of readers to the circular, which spends for itself.
You will see from this although we did not succeed separating our Orange sugar from the "Dead Beats" of Los Angeles my visit was not fruitless, for very certain that a sugary will established in a very short time Mr. Wadsworth writes me that is certain of success, and backed the prestige of his Sacramento experience, failure is impossible.

Sugar from Beets.
It is not my purpose in following remarks and statement facts to dwell upon the early history progress, or present condition beet sugar manufacture, except say that it has now become one of the leading industries of Europe counties, year by year increase in importance, and being rapidly tended.
The following are a few of reasons why it has there proved eminent success. It has more than doubled the value of lands adapted to beet culture, and increased the value of adjoining lands. It enriched the soil, instead of poverishing it. It enables a culturists to raise more cattle given extent of country than they were able to do before, by furnishing an immense amount of excellent winter food for stock.
It gives employment to large numbers of persons, both in field and factory, in Summer and Winter. It has increased the capacity of all classes, by furnishing the luxury of sugar at a lower price than though cane sugar had their only source of supply. It has enriched those engaged in manufacture more rapidly than other legitimate agricultural manufacturing industry, showing that sugar from beets can be finished, to both rich and poor, much less cost even than now, still leave a wide margin for legal profits.

Winter. It has increased the cost of all classes, by furnishing them the luxury of sugar at a lower price than though cane sugar had been their only source of supply. Has enriched those engaged in manufacture more rapidly than other legitimate agricultural manufacturing industry, showing that sugar from beets can be finished, to both rich and poor, much less cost even than now, still leave a wide margin for legal mate profits.
All this has been accomplished beet sugar making, while bearing the burden of an oppressive duty—a duty of immense importance to the revenues of the countries in which beet sugar made. France, having derived during the last ten years, a land revenue from her tax on home-made sugars than from any other source in the Empire or Republic.
Now I would make the following comparisons between beet sugar making in Europe and in California: Here we have no excise duty on home-made sugars. In Europe planting season is from the 20th April to the 15 of May. Here we from January to May, and must irrigated lands can be extended through the whoa Summer.
Europe, sugar making commenced on the 15 of September. Here has commenced in early August, might begin in June. In Europe all beats not worked up by November 20th must be secured for frost in trenches, by a covering straw and earth; and though earth covering may be frozen six inches in depth from the surface yet from one hundred to three hundred tons of beets must be removed daily from the trenches to sugary to keep it in operation.
No care is required to keep from freezing in any of the lower valleys of the State; they can be taken from the grove at any time as wanted. In this
you for publication the circular, from the pen of Wadsworth, Esq., of the Pacific press relating to beet sugar previously some correspondence him relating to the maturing my recent visit to Cisco, I called upon and him to visit Anaheim and the capabilities of our firm the production of his with what result his testify. I will remark in connection that Mr. Wadsworth had the last six years to the invention of beet sugar in and the inauguration of its culture, and the manufacture of sugar in California. He originator of the sugaryimento, and after having all the difficulties and evident to the inauguration enterprise, has the satisfaction made that factory success. Last year their beets only sufficed to keep in operation for four and yet they realized 46 on their capital. Here a item is found a vast saving of expense. In Europe, costly brick or stone buildings are necessary, on account of the freezing winter weather of the countries where beet sugar is made; while here, the most that is required is the ordinary frame, covered with "rustic" sheathing, or with clapboards. In regard to the quality of California grown beets, under our almost tropical sun, as compared with those of Europe, repeated analyses has proven them to be from three to seven per cent, richer in sugar than the average of European grown beets. Indeed, there is nothing wanting to render the making of beet sugar a grand success in California, but the possession of two thousand acres of land of the right character, at a low price, as constituting a part of the stock of the company—or its use secured to the company on rent for a term of years—and so situated that it can be irrigated, if requiring it.
There is no use trying to pay a thirty or thirty-five per cent annual dividend on a beet sugar establishment, with the company's lands estimated at $200 per acre. It is too heavy a load to carry. But with lands at a reasonable cost can

In Europe the season is from the 20th of June to May, and upon lands can be extended the whoa Summer. In sugar making commencements of September. Here, it announced in early August, and then in June. In Europe, not worked up by November must be secured from patches, by a covering of earth; and though the spring may be frozen solid in depth from the surface, one hundred to three hundred beets must be removed the trenches to the keep it in operation. Here required to keep them going in any of the great keys of the State; but taken from the ground as wanted. In this one extreme dryness and summer heat of all the great interior valleys I have named, well adapted to the growth and perfection of the sugar beet.
As auxiliary to certain and eminent success, a light turbine wheel water power would be desirable, though not absolutely necessary. With these requisites—lands of the right character and water power—success, even beyond reasonably large anticipations, could assuredly be realized.
Having given the most careful attention to the subject of beet sugar making for the last five years, having made two trips to France and Germany in two successive years, in the interests of the Sacramento Beet Sugar Company, as the Company's Superintendent, and being a large stockholder, and our company having proven beet sugar making in California a success, I would like to engage at once in another enterprise of like character, and introducing such improvements as have been made since the inauguration of the Sacramento company as will lessen the cost of machinery very materially, and lessen the number of hands required for working the sugar at least one-third, and positively securing a certain and large dividend of profits on engaged capital.
I would like, therefore, to confer with associations of farmers, or parties having suitable lands, or lands prospectively suitable, on being provided with water for irrigation, communicating such facts as I am conversant with regarding cost of sugar and incidental, actual cost of making sugar, the time and best mode of commencing operations, and all other matters likely to interest the members of an association organized for the purpose of establishing this important industry on a sure and paying basis.
