Southern California HOTELS, RESTAURANT SATURDAY, FEBRUARY 14, 1874. Keller’s Method. In response to our inquiries about the product of the grape crop of 1873, Mr. M. Keller, under date of January 19th, 1874, writes us that "the grape crop of the Los Angeles district was smaller than usual in consequence of a frost that occurred later in the spring than ever known before. My own vineyards suffered very little, on account of my peculiar manner of pruning and cultivation. It was quite remarkable that when the vines were trained high they escaped injury from the frost entirely; or where they were pruned long, the lower eyes sprouted buds and supplied fruit after the forward sprouted buds were injured, more especially when the pruning was not done too early. The French have introduced a pernicious practice of pruning too early, and leaving but two eyes on a fruit cane, the lower eye being a half dormant one, and the forward eye pruned so close to the end of the wood, which becomes impoverished, as the wood dries close up to it. It is a very desirable practice, where it can conveniently be done, to winter irrigate, besides fertilizing the soil and rendering further irrigation unnecessary through the whole season. The cold winter water sinking deep into the subsoil keeps back the early starting of the vines, thus to some extent protecting them against the chances of a late spring frost. I have been in the habit for years, immediately after the vintage, of lopping off the long branches of the vines, leaving the fruit canes long enough for future pruning, while the loppings are cut up in six inch pieces, and plowed under to fertilize..." The cost of labor is no greater than it would be according to the custom still in vogue of hauling out the cuttings after pruning and burning them, which deteriorates in time the fertility of the soil." Beet Sugar at Anaheim. A few weeks since we were in receipt of a communication from W. R. Olden, of Anaheim, in which he made the suggestion that probably lands in that vicinity would be found well adapted to the growth of sugar beets for sugar making. We have been carefully examining his reasons as set forth, and as we claim to be well posted in beet sugar making in California, having personally inaugurated the Sacramento Valley Beet Sugar Company, and now largely interested therein, we have arrived at these conclusions: That the quality of the soil is all that can be desired. It simply wants the artesian wells mentioned by our correspondent, to secure a certain amount of irrigation in unfavorable or very dry seasons. The advantage that would pertain to the undertaking, in being able to plant and gather beets every month of the year, can hardly be estimated. It would enable the company to keep a steady force of hands and the necessary teams in constant use, and therefore to much better advantage than is now done where the entire planting is done in only one or two months. The sugarie could also be run the year round, at an immense advantage over that of a four or five months' campaign, as at present at Alviso or Sacramento. We have our doubts whether beets ripening in December and January, even at Anaheim, would contain that high percentage of sugar which those would, ripening under a more vertical sun; but we could spare these two months and dry beets tage than is now done where the entire planting is done in only one or two months. There should be a beet sugarie at Anaheim.—Rural Press. Arbitration in the Granges. One of the best features of the organization of the Patrons of Husbandry is the settlement of differences, whether pecuniary or otherwise, between members, by arbitration. Instead of going to law, and feeing lawyers, officers and Courts, and spending time and money to secure some legal or technical advantage of a neighbor, by the plan introduced in the Granges all these little questions of dispute are now settled in an equitable and generally in amicable manner by reference to committees or arbitrators consisting of mutual friends. It is true that this plan deprives the lawyers, officers and Courts of a great deal of business, and consequently of a great deal of money; but, while they are the losers in a pecuniary way, the farmers are the gainers, not only in a pecuniary sense, but in many other ways. Friendship between individuals is thus promoted and maintained; neighborhood difficulties are avoided, and the whole community of farmers are greatly the gainers; while outsiders are none the wiser.
