SATURDAY, JANUARY 21, 1871.
The Political State.
A canvass of the State Democratic political field, indicates the following as being the present attitude of affairs, as put upon the state for consideration:
Hon Wm T. Wallace for United States Senator; Delos Lake to succeed Wallace on the supreme bench; Haight for Governor, and McCoppin for Lieut Governor.
This is only the present outlook. With the change in combinations as the elections approach, corresponding changes may occur in the Democratic State. Without doubt, General Wallace, now on the Supreme Bench, is the most popular, and, consequently, available Democratic candidate for United States Senator.
As to the approaching Congressional contest, it is not yet known what is to be. At Washington, there is a project on foot for increasing the number of Congressmen sixteen per cent. above the present number in the United States. Thus making the total number 270, instead of the present number, 241. This reform is partly owing to the decrease of population in some States having many congressmen, and the increase in others having but few. The British Parliament has 600 members, and it does appear that the United States might have one half that number, without serious detriment, if the demands of various bithertoy neglected localities.

Under the proposed arrangement, California would have four members. In case of the new idea taking effect, Southern California should steadily maintain her right to the additional California member.
For Congress.—We understand that Col. E. J. C. Kewen will be a candidate for Congress from this district before the next Democratic Congressional Convention. If this is the case, and Col. Kewen enters the field with a will, there is little doubt but that he will become the favorite and chosen candidate. His associations at San Francisco and the upper counties are such as to almost insure his nomination and election.
List of Passengers.—Among the passengers to arrive at San Pedro on the steamer from San Francisco this morning, are the following: Hon. D. Morrison and family; Hon. R. F. Morrison and wife (these are the two brothers of Hon. M. Morrison, of Los Angeles); Gov. J. G. Downey and wife; J. P Newmark; H. Kobler; Abel Stearns; T. E. Rowan.
War Risks at Lloyds.
Lately, there have been a good many transactions in war risks, on account of the possible danger of a Russian war in London, the premiums have been from 5 shillings upwards, 10 shillings being taken on sailing ships from the East, and Russian ships are hardly insurable against war contingencies at all, the contingency of a war is thus estimated very highly; but the estimated risk on English ships is not considered very great. As to any apprehension of Russo-American Alabama, the notion is that there will be no immediate danger of their appearance at the outbreak of war, they must take some time to see the sights at the Grand Hotel.

America would alive very much to gain by an English war in which she did not entangle herself; and by pursuing such a course, must, in time, owing to her vast internal resources, if properly concentrated and guided, become not only the most powerful but the most populous nation on the globe.

The Royal Wedding.
The following is the correct list of the bridesmaids chosen for the marriage of Princess Louise: Lady Constance Seymour, daughter of the Marquise of Hertford; Lady Elizabeth Campbell, daughter of the Duke of Argyll; Lady Florence Lennox, daughter of the Duke of Richmond; Lady Mary Butler, daughter of the Marchioness of Ormonde; Lady Alice Fitzgerald; daughter of the Marquis of Kildare; Lady Grace Gordon, daughter of the Dowager Marchioness of Huntly; Lady Florence Montague, daughter of the Earl of Sandwich; and Lady Agathy Russell, daughter of Earl Russell. The dresses chosen for these fair and somewhat noble maids consists of white maltese lace trimmed with pearls — emblematic of their virgin purity.
Distinguished Arrival. — Among the passengers from Japan by the steam ship America, which arrived at San Francisco yesterday, is his Excellency Ito Fu Gai Hintusmi, assistant Minister of Finance of the Japanese Empire, who comes as commissioner to the Government of the United States, with a suite of physicians, aids and servants, 22 in number, en route for Washington. They will remain at San Francisco two weeks, to see the sights. They are stopping at the Grand Hotel.
How to Stop the Progress of Acidity in Wine. — The following treatment which is proposed by an experienced French viniculturist should nevertheless be applied for the first time as an experiment with a limited quantity of wine, which is turning sour:
For thirty gallons of wine, dissolve (according to the degree of acidity) from fifteen to forty grammes of lime in a tumbler half full of water. Pour this
HOW TO STOP THE PROGRESS OF ACIDITY IN WINE.—The following treatment which is proposed by an experienced French viniculturist should nevertheless be applied for the first time as an experiment with a limited quantity of wine, which is turning sour:
For thirty gallons of wine, dissolve (according to the degree of acidity) from fifteen to forty grammes of lime in a tumbler half full of water. Pour this into the wine and observe the effect. With some wines it may agree well, with others not — W. & F. Rep.
TURNED RED WINES.—It often happens with red wines, that they are submitted to what is called turning. The coloring matter is decomposed, changes into violet, sometimes nearly into black. To restore the flavor and the aroma of the wine, it will be sufficient to add fifteen grammes of tartaric acid to every twenty-five gallons of wine contained in the cask. If the decomposition has already somewhat advanced, the quantity of tartaric acid may be proportionally increased.
We would, however, not recommend this recipe for the treatment of fine qualities of wine, as it undoubtedly will change to some degree the character of the wine and disturb its development, while common and naturally strong bodied wines, thus saved from entire deterioration, and blended with sound wine of the same quality, may become a marketable article — W. & F. DANCING. — Prof. Wilson has commenced a second term of his dancing school. This course is to embrace the finishing graces, and ball-room etiquette. We presume a few more pupils can obtain admission to his already large class.
NOT YET.—The Post Office has not yet been removed from Los Nietos to Gallatin. The new Postmaster at Gallatin has forwarded his bonds to the department at Washington, and the transfer will take place on receipt of his final commission.
