Rice Forms Basis of Foreign Dishes L
Rice and potatoes are not exact equivalents in food value, although both contain a relatively large proportion of starch. Potatoes, unlike milled rice, contain minerals and vitamins B and C. If the diet, however, contains plenty of fruits and vegetables, the use of rice for potatoes makes little difference from the standpoint of nutrition, because these needed substances are abundantly supplied by the other foods, the United States department of agriculture believes.
In countries where rice is an important item of diet it is usually combined with some other local food of pronounced flavor. An American use for dry, flaky, cold boiled rice is as a salad basis. Left over peas, carrots, green beans, or fresh tomatoes may be combined with left over rice, or small amounts of fresh fruits. Grapefruit makes delicious salad when served with rice and French dressing. Plain cold boiled rice or cold pressed rice may be served with lettuce with a hot or cold cheese dressing, or with mayonnaise. Either adds greatly to the nutritive value of the dish and gives it an appetizing flavor.
Rice Combination Salad
1 1-4 cups cooked rice.
4 tablespoons chopped pimento.
3 tablespoons grated cheese.
4 tablespoons chopped celery.
4 tablespoons green peppers or olives.
Combine the ingredients and serve on lettuce with French dressing, or mayonnaise.
Most of the rice curries in the orient are made with a basis of plain or boiled rice, to which are added other dishes combining many foods and flavors, such as minced ham, salt fish, chopped boiled eggs, fruits, or vegetables. They are usually served in a curry dish with perhaps a portion of plain rice, each person chooses as few or as many of the other dishes as desired, spreads them over the rice, then covers the whole mass with curry sauce made as follows.
Curry Sauce
2 tablespoons fat.
2 tablespoons curry powder.
2 cups hot milk or water, tomato juice or coconut milk.
1-2 lemon.
3 cloves.
Melt the fat powder, add the juice or coconut oil to the juice or coconut oil in some rice forms the comma for 30 seconds. Growing Girls Should Home Rooms Of The Attractive Touches.
Every girl should have a room of her very own to arrange as she pleases, if the family can possibly spare the space. Girls instinctively love what is beautiful and try to express themselves in their surroundings. With a little thought and some real work the girl herself can transform an uninteresting, uninviting room into place of tranquility and charm—a sort of sanctuary to which she can escape when she wants to think things out alone, as girls often do.
The girls in the "Own Your Own Room" clubs, under the direction of the United States Department of Agriculture and various State agricultural colleges, have accomplished wonderful results in making over unattractive rooms according to the suggestions given them by club leaders and home economics specialists.
The Walls And Floor
The first step is naturally the improvement of the appearance of the empty shell of the room. A neutral shade for the walls, floor, and larger articles in the room is usually pleasing. Cushions, table covers, books, and other small, bright colored objects give the needed touch of color. Chintz or cretonne in curtains sometimes suggests the color to be emphasized. This is more informal and homelike than an attempt to have everything to match. No matter what color scheme is chosen, the darkest tones are best for the floor and its covering, lighter tones for the walls, and the lightest for the ceiling.

A plastered wall may be painted quite easily The girl herself should be able to paint both the plaster and woodwork of her room if the latter needs attention. Painted bedroom furniture is much prettier than cheap grades of oak or stained wood. Old bureaus, bedsteads, tables, and chairs, even though quite different in design, can be made to look as though they belonged together if carefully painted white, ivory or an attractive shade of gray or tan. The old finish should, however, be removed and the wood sandpapered smooth before any paint is applied.
Choosing A Good Bed
The bed is the most important piece of furniture in the room. About one-third of every 24 hours is spent on it For health and comfort a good bed is important, especially a good mattress and spring. A simple, painted-metal single bed is desirable for a young girl. A slip-on cover of unbleached muslin is excellent for keeping the mattress coan. Sleeping without a pillow is often recommended, but the bed needs at east one pillow to make it look complete, and this, like the mattress, should be protected by a thin, close-fitting, washable cover between the ticking and the pillow case. The sheets, blankets, and comfortables should be chosen with care.
An improvised dressing table can be made by hanging a mirror over a small table This is to be preferred to dressing tables with flounces of cretonne that collects dust. A bureau or chest of drawers is needed for storing clothes and personal belongings. Melt the fat and stir in the curry powder, add the milk or water, tomato juice or coconut milk, and cook until it is smooth and thick, then add the other ingredients and let the sauce simmer for 30 minutes.
The dish known as pilau—a combination of rice, meat broth, meat, and fat—in some rice producing countries forms the common staple food of the people. Pilau is also a popular dish in Turkey, where it is often colored with saffron and flavored with spices or mixed with currants in a way that does not find favor with western palates. Other forms and combinations are common in the Creole cookery of the southern states. Any kind of meat or fowl may be used.
Plain Pilau
1 1-2 pounds of meat.
3 cups water.
1 teaspoon salt.
1-4 teaspoon pepper.
1-2 cup rice.
4 tablespoons butter or other fat.
Place the meat in the cold water with the seasoning and bring it slowly to the boiling point, removing the scum that rises to the surface. Cook it just under the boiling point for 30 minutes, or until the meat is about half-cooked. Pour the broth into a double boiler, add the rice, which has been washed thoroughly, and cook it until tender. The rice will absorb the broth and the grains will be unbroken. Add the fat just before removing the rice to serve. While the rice is being cooked, finish cooking the meat by browning it in the oven or in an iron kettle on top of the stove. When both rice and meat are cooked, pile the rice on a platter and place the meat on the rice.
Spanish Rice
3 onions (medium size).
1-2 cup drippings.

3 cups fresh or canned tomatoes.
3 green peppers cut into strips.
2 teaspoons salt.
Slice the onions and cook until tender and slightly brown in the melted fat. Remove them from the fat, add the rice, which has been carefully washed and dried, and brown it. Then add the cooked onions, tomatoes, green peppers, and salt; turn the available a bracket lamp is fastened to the wall at one side of the bureau gives the best lighting. In only one city was it found that the car would not serve as transportation for the party for in Venice they went about in gondolas, having left the car some miles from that city and made the intervening distance by train.

FULLERTON MAN DROVE HIS CAR OVER ROAD NAPOLEON BUILT
When Sydmer Ross returned to his home, Dos Pinos Rancho at Fullerton a few days ago he had completed a long motoring trip that took himself, wife and daughter over most of Europe and into Africa.
The Ross family left California in May, 1920, and were gone nearly a year and a half and all of that time, except while crossing the Atlantic, they spent in touring by motor car. In all they drove more than 23,000 miles on the continent, nearly 2,000 miles in England, and then after reaching New York on the home bound trip motored across the continent to Fullerton. The fact that Ross is 72 years "young" did not prevent him from doing all of the driving in spite of the fact that he was warned time after time that it would require a professional chauffeur to get his car to the places they desired to visit.
He was warned about bandits in Sicily but went unarmed and unharmed. They were warned of the difficulties of the roads over the Alps but Ross drove his big six Studebaker over a road that Napoleon had built and climbed with it to an elevation of 9,954 feet just a little lower than the summit of the Tioga Cass over the Sierra Nevada mountains.
Mountainous country was preferred by the Ross party on account of finer framed, add to the room, but useless ornaments only increase the work of cleaning.

There is not the congestion of traffic in Europe that is found in Southern California, for there is a lack of cars. In the city of Paris the taxis are thick as flies, and travel at what seem to be most dangerous speeds but somehow avoid any accidents. Taxi fare is so cheap in Europe that the Ross party spent three hours in one Italian city, using three different cabs to do their errands and the entire sum spent for the three of them amounted to $1,12 in American gold.
Once before when Ross was in Europe he was motoring but as it was in 1914 and the war broke out then, his car was detained by the German authorities in a little town on the shores of Lake Constance. He was unable to get permission to ship it out of the country under any pretense and when he went to take a look at it on the recent trip he found that the tires and every other thing that could be used to advantage had been removed. Now that he can take it out it had so little value that it would not pay.
The scarcity of cars in the continent led to an offer for Ross to sell his Studebaker for $1,000 more than he had paid for it, but as that would have left the party stranded so far as...

"The cut in prices of the various makes of new automobiles," says Bob Vincent of the Anaheim Auto Company, "causes the most difficult problem in the automobile game, which is to place the correct value on the used cars which have been taken in trade."

After his arrival in New York he traded the big six for a later model of the same size and drove home finding the only really bad roads in eighteen months in Colorado and Arizona where there had been recent storms."
