September Is Month For Oyster to Appear The oyster is everybody's darlin' on September 1 — and from then on until April 30, when he is ostracized as suddenly as he came into favor eight months before. There is no real reason for this summer ban, of course; the idea that we can't eat oyster in the R-less months is myth. But maybe we appreciate this popular shellfish when he does come back from his vacation more than we would if he had never been away. Oysters have been favorites for so many centuries that there's no need to elaborate on their versatility — the fact that this seafood can be eaten raw or cooked and is equally welcome in first course and main dish. Most everyone has his favorite oyster dish. Our being Oysters Rockefeller, we asked the National Fisheries Institute for a recipe a housewife can make in her own kitchen. OYSTER ROCKEFELLER Ask your fish dealer for one dozen oysters on the half shell. Cream ¼ cup butter and mix in ¼ cup fine bread crumbs. Add ½ cup frozen chopped spinach, 2 tablespoons minced onion, 1 tablespoon finely chopped parsley. Mix together thoroughly. Season with salt and pepper to taste. Spread generously over the top of each oyster in the half shell. Place filled oyster shells in a bowl. Place in a hot oven, 400 degrees F., for 20 minutes. Serve immediately. Serves 4 as appetizer, 2 as main course. FISH-AND-RICE CASSEEROLE SERVES EIGHT TO TEN Most everyone has a favorite casseerole recipe to make when the gang is expected. No matter whether the casseerole is placed on the table to be served by the host, or on a buffet spread for everyone to help himself, everybody likes to gather round to see what's in the fragrant, steaming dish. Often, though, when feeding a large number of people, budget plans have to be considered; when a guest list numbers eight or ten, food costs do mount. One of the best-tasting combinations* is fish and rice. Rice has always been popular as an extender and is a nourishing food. Fish, especially rich in protein and minerals, comes in a range of prices depending on the species, of course. When we asked the National Fisheries Institute to recommend a fish for our budget company casseole, they suggested frozen ocean perch, cod or haddock fillets as being plentiful throughout the country and among the least expensive of protein foods. Here are the two foods combined with a creamed soup and grated cheese. SAVORY FISH AND RICE CASSEEROLE 2 1-pound packages frozen fish fillets (cod, haddock or ocean perch) 1 cup uncooked rice 1 10½-on can condensed cream of mushroom soup* 1 ½ cups grated American cheese 1 teaspoon salt 3 ½ cups water Let fillets thaw in refrigerator or at rooms temperature. Mix the rice, soup, ½ cup cheese, salt and waler. Poured in a buttered shallow baking dish which you can bring to the (Continued on Page 8).
